Summer Fajita Salad and a Makeover

I got a little inspired today while I was at Target, don’t we all?

I think we have come up with the perfect set up for Hubby’s “man cave”. (for the moment)

I picked up two butterfly suede chairs that are comfortable and only $29.99. Along with the two striped rugs for only $14! Thank goodness for back to school sales

A body pillow because Hubby loves to lay on the ground and work

I really like that I can sit in the chairs and chill with Hub’s while he works

A little ottoman that also serves as a storage unit.

Hubby’s desk. I got Hubby this desk for his birthday two years ago and it matches perfectly.

Excited that Hubs can work in his own space, now all he needs is a flat screen

I was supposed to go to a pool party today, but it was canceled So I went grocery shopping instead

I picked out some delicious ingredients for meals to make this week! I pledge to eat in all week! I am sick of dining out soooooo much. I miss cooking.

Feels great to have a FULL fridge again!

Dinner

Summer Fajita Salad

Tonight’s dinner was easy and a lot of fun to make.

I cut up some chicken, peppers, and onions and sautéed them in a frying pan for about 10-15 minutes.

While the chicken was cooking I baked up a whole wheat tortilla for 5 minutes at 375 degrees, to make home made tortilla chips. These always come out perfect.

Time to build..

First layer: Mixed Greens

Second: Tomatoes and Avocado 

Third: Chopped Cilantro

Fourth: Fajita Mix

Fifth: Black Beans

Last Layer:  MANGO SALSA!!!

All together now

This was soooooo GOOD and FILLING! 

I also made a mocktail on the side.  OJ+Lime+Sparkling Water

Perfect Summer Dinner

And for dessert I enjoyed a little Pomegranate Sorbet with blueberries and dark mini chocolate chips. Another great summer choice

Time to get ready for my 13 mile run in the morning. Going to map out a course and then crawl into bed. Nice to have a day at home, see I am not always GO GO GO
