Crock Pot Healthy Italian

Happy November Everyone!!!

Time to get in the Holiday Spirit :) I know not everyone is as big of a fan as I am when it comes to Thanksgiving, Christmas, and New Year’s, but for me it’s the best time of the YEAR. (cliché I know).

WORKOUT

I was thrilled when Allie said she wanted to run this morning, because my legs were CRAVING some pavement time. After all the crap yummy treats I had last night I needed it! We did a speedy 5 mile run in less then 45 minutes and we walked each mile. We were just two chatty patty’s!

BREAKFAST

When I got back I knew I wanted to prep dinner, which meant I needed to make a QUICK breakfast. So I busted out my Vita-Mix and made another Pumpkin Spice Smoothie. Not only are these good, they are so EASY!

Then it was dinner prep time! I have been craving spaghetti and meatballs for some time now and what better way to make them then in my crock pot!

I adapted my recipe from this website.

Healthy Turkey Meatballs In the CP
Serves 8

1 can of marinara sauce
1 medium onion, finely chopped
2 garlic cloves, minced
1/2 teaspoon italian seasoning
1 teaspoon dried basil
salt to taste
1 pound ground turkey
1/4 teaspoon garlic powder
1/8 teaspoon black pepper
1/3 cup dried parsley
2 egg whites
1 slice grainy whole wheat bread (crumble, place in a food processor, and pulse until you have 1/2 cup bread crumbs)
1/3 cup Ramona cheese
2 tablespoons canola oil
1/4 cup whole wheat flour

Combine tomatoes, vinegar, onions, garlic, Italian seasoning, basil, and salt in slow cooker. Turn on Low.

Combine remaining ingredients, except flour and oil.

Form into 1-inch balls. Dredge each ball in flour. Heat oil to medium in a large frying pan. Cook the meatballs in the pan until browned on all sides. Drain.

Transfer meatballs to slow cooker and mix into the sauce. Cover and cook on low 6-8 hours.
