My Spring Into Summer Throw Down is going oh so well!!
It’s been a wonderful two days off. There has been a lot of walking, running, yoga, KB, and kettle bells going on. As well as some much needed girl chat sessions The best part about these past two days is that the weather has been perfect! High 70′s and going up!
Last night I made one of the best Beef meals I have ever created.
I was inspired by my "The Best of Clean Eating" cookbook.
Beef &Veggie Orange Stir Fry
- 12 of whole wheat noodles (I went with the egg noodles)
- olive oil cooking spray
- 1 lb lean flap steak, sliced into strips
- 1/2 cup diced white onion
- 2-3 cups frozen veggie mix (mine contained carrots, peas,broccoli)
- 1 red bell pepper julienne cut
- 3 tbsp low sodium tamari soy sauce
- juice of one orange
- 1 tbsp of orange zest
- 2 garlic cloves minced
- 2 tsp raw organic honey
- 2 tsp whole-wheat flour
One: Cook noodles according to package directions. Drain and set aside.
Two: Heat skillet over high heat for one minute and then spray with EVOO. Reduce to medium heat, throw in sliced meat and cook for about 5 minutes until cooked through.
Three: Remove steak from pan and spray again with EVOO. Add onion, veggies, and red pepper and sauté for about 5 minutes.
Four: In a medium bowl whisk together soy sauce, orange zest, honey, and garlic.
Five: Add steak to veggies and pour sauce into the mixture. Sautee steak and veggies over medium heat for about 2 minutes and then add in flour. Mix together for about 2-3 minutes to let sauce thicken.
Six: Put noodles in a bowl and then top with veggie and meat mixture, garnish with a little orange zest.
