So excited that so many of you are joining me in the 21 day CSD! Also I am thrilled at all the positive affirmation I am getting from everyone. I am not gonna lie, I was a little nervous about putting this challenge on the blog as I know that some people might not agree with the Vegan and or Vegetarian lifestyle. Like always you guys ROCK and have made this challenge already a lot easier.
Yesterday I went to way too many groceries stores, because the Farmers Market was closed by the time I got done with my bike ride. I got most of my produce from Costco (mostly all organic) and Clark’s a local health market.

So how did the first day go? SO GOOD!! Let’s take a look.
7am: Awake and enjoyed a large glass of lemon infused water with a dash of cayenne pepper to get my circulation going.
7:30am: Sipped on some Green Tea, while I dug into God’s word and did some praying.
8:00am: Made my first “Green” Juice.
Recipe: 2 large cucumbers, 4 stalks of celery, 4 stalks of kale, 4 romain leaves, 1 cup of broccoli, 1 pear, 1 inch piece of ginger root. Put all ingredients in your juicer and enjoy!
9am: Took and hour kickboxing class.
10:30am: Planned out my week in the park and stayed in town cause I had a hair appointment. I grabbed a carrot, orange, and banana fresh juice from Jamba Juice.
12:30pm Got my hair did. Was pretty hungry and couldn’t wait to get home for a late lunch.
1:30: LUNCH!!! Love making huge sexy salads and this one was amazing!
Recipe: Mixed greens, cherry tomatoes, bell peppers, carrots, hemp seeds, Love Grown granola, avocado, balsamic vinegar and EVOO for dressing, and pine nuts.
2:30-6:00pm: Prepped like MAD! I made Larabars, Glow Bowls, Buddah Bowls, Tahini dressing, and a Mexican Pilaf. (I’ll share the recipes when I show them on the blog). I checked out one of my favorite Vegan blogs, Oh She Glow’s for some awesome snack ideas!
7:00pm I enjoyed dinner. This is a recipe from www.rawchef.com called Thai “Peanut” Sauce Vegetables.
Recipe:
1/2 cup almond butter
1 tbsp fresh ginger
1 teaspoon lemon
2 prunes
2 garlic cloves
1 tsp sea salt
1/3 cup water, plus more to thin
2 zucchinis half mooned
2 carrots jullianed
1 cup broccoli
1/2 cup of cilantro chopped
In the food processor or blender, blend the almond butter, ginger, lemon juice, prunes, garlic, salt , and water until smooth. Add water as needed to achieve the proper thickness. Mix together veggies with sauce and cilantro. When everything is tossed well, dehydrate on teflex sheet (or foil) at 105 degrees fro 2-3 hours.
I put the veggies with a cup of brown Jasmin rice and a grilled piece of temph.
Oh and the supplements I am taking are below: Fish Oil, Plant Enzymes from Now, and the probiotic PB8.
Overall it was a great day and I didn’t even miss my COFFEE!!! I am still a bit hungry and may need a little snack, before bed. I love that I am intuitively eating and not thinking about calories!
