Cauliflower “Rice”

Evening friends! Got to make this post short and sweet. I am up up way passed my bed time, but needed to share with you all a new love of mine and a winner for my Shabby Apple giveaway!!!!!

This week I made Cauliflower rice for the first time. Hello heaven!!

Friends it’s so easy!! Just take 2 cups cauliflower throw it in the food processor and pulse until rice like size. Meanwhile in a frying pan heat 1 tbsp of EVOO and 1/2 a yellow chopped onion about 5 minutes. Then add in the cauliflower and about 1/4 cup vegetable broth, cover and let steam for about 6 minutes. Enjoy!!!

I also made Fit and Forty something’s awesome Vegan banana bread, another hit in this household!!

I keep seeing that cauliflower rice and have been skeptical…nothing beats real rice to me!

I think I would love this! Mashed cauliflower is one of my favorite things, I just hate the prep work it involves.

I love making cauliflower rice! I made cheezy cauliflower mash almost the same way the other day and ate it for like 3 days straight!
