Weight Watchers Scale Giveaway & Weekend Wrap-Up

This weekend was so much fun, celebrating birthdays, salsa dancing,ร‚ย engagements, hanging out with friends and getting my workouts on!

Friday night we started off the night with a little vino at a local winery, the State Street Winery. I bought a glass of my favorite red for the birthday girl Jackie!

We were classy and brought in Chipotleร‚ย for dinner ๐Ÿ˜‰ Love me a Chipotle veggie bowl!

Then it was time to get our groove on! My friend had a bunch of couples head over to the Coco Palmร‚ย  in Pomona for a salsa lesson and dancing!!

It was so fun, the HUBBY has some moves!!! I also loved that we got to get all dressed up (let me note that I went to yoga right before and got ready in 15 minutes!!!).

We were out pretty late dancing the night away!!! But my internal clock went off and I hit up the gym at 7am with my gym buddy Amy!!! We are on week 2 of NROL and boy it’s getting tougher!!! Like my new shirt?? You can buy yours here

Saturday night we got to watch two of our dear friend get ENGAGED!!!! They are perfect for each other, It was so sweet I cried!!!

Lately after Church we have been trying out a newร‚ย placeร‚ย for lunch every week and it has been a lot of fun! This week we tried out a local Indianร‚ย cafe called Delhi Cuisine and of course it was AMAZING!!! I LOVE Indian food and it’s so vegan friendly!

Sunday night I made a huge batch of Cooking Light’s, Black Bean, Hominy and Kale Soup! I will be enjoying this all week-long!!

Black Bean, Hominy, and Kale Stew

Roasting the poblano chiles offers a fast route to deep flavor in this hearty bowl.

Cooking Lightร‚ย ร‚ย ร‚ย  MARCH 2013

  • Yield: Serves 6 (serving size: 1 1/4 cups)
  • Hands-on:25 Minutes
  • Total:32 Minutes

Ingredients

  • 2ร‚ย  poblano chiles
  • 8 ounces tomatillos, husks removed and halved (about 4)
  • 2 teaspoons olive oil
  • 1 1/2 cups chopped onion
  • 1ร‚ย  jalapeรƒยฑo, seeded and minced
  • 2ร‚ย  garlic cloves, minced
  • 2 teaspoons ground cumin
  • 3 cups organic vegetable broth
  • 1/4 teaspoon salt
  • 1/8 teaspoon ground red pepper
  • 2ร‚ย  (15.5-ounce) cans unsalted black beans, rinsed and drained
  • 1ร‚ย  (8-ounce) bunch kale, tough stems removed, leaves chopped (about 4 packed cups)
  • 1ร‚ย  (15-ounce) can hominy, rinsed and drained
  • 6 tablespoons reduced-fat sour cream
  • 2 ounces shredded sharp white cheddar cheese (about 1/2 cup)
  • 1/4 cup chopped fresh cilantro

Preparation

1. Preheat broiler to high.

2. Place poblano chiles on a foil-lined baking sheet. Broil 7 minutes on each side or until blackened and charred. Place in a paper bag; fold to close tightly. Let stand 15 minutes. Peel chiles; cut in half lengthwise. Discard seeds and membranes; coarsely chop. Set aside.

3. While poblanoร‚ย chiles roast, place the tomatillos in a food processor, and process until smooth. Set aside.

4. Heat a Dutch oven over medium heat. Add oil to pan; swirl to coat. Add onion and jalapeรƒยฑo; sautรƒยฉ 5 minutes or until tender, stirring occasionally. Add garlic and cumin; sautรƒยฉ 1 minute, stirring constantly. Add tomatillos, broth, and next 4 ingredients (through kale); bring to a boil. Cover, reduce heat, and simmer for 10 minutes or until vegetables are tender. Add roasted poblanos and hominy; cook for 2 minutes or until heated through. Ladle into each of 4 shallow bowls; top evenly with sour cream and cheese. Sprinkle with cilantro.

    I’ve been reading since our lovely time of dinner and wine at your place with Megan, Ronni, and Jenelle for that Fresh and Easy thing. ๐Ÿ™‚

    I think the scale can be super helpful in giving an overall picture of where you are at, but it can quickly devolve into something obsessive and controlling over your emotions for the day. I think keeping in mind that the scale is just a tool, not determining of one’s worth or well-being, helps in not devolving into something unhealthy.

    Give Mr. Bosco a big hug for me. ๐Ÿ™‚

  6. I do think stepping on a scale is helpful. I think in conjunction with gauging how your clothes fit. You know if you gain weight but have gone down sizes, that’s okay. But I can tell you from a lifetime of fighting my weight that the scale is a great barometer.

    I have a love hate relationship with the scale (depending on the number lol) !! I have been trying to be more mindful of how my clothes fit instead of fully relying on the scale number!

    I used to weigh myself all the time and would get discouraged if the “weight” didn’t go down thanks for the giveaay

  10. I’d love to win this as I think my scale has started to bite the dust! It’s acting wonky and I’m not sure if its being accurate. Salsa dancing looks like fun! I might have to try to convince my hubby to try that with me ๐Ÿ™‚

  12. I’m not a huge scale fan, but maybe because mine is always wrong! I thought I had lost some weight last year, but the dr’s scale was 10 lbs more than mine!

  14. I only use it occasionally as it can effect my mood. I try to base my weight gain or loss by the way my pants fit. Now I’m pregnant so it would be helpful when I’m losing the baby weight.

    The scale isn’t the only weight loss tool to use…and it’s not everything! But it is a very helpful tool to help me keep on track. I usually weigh myself once a week to see my progress, or to show myself that one or two splurge meals a week won’t bust the scale or get me off track toward my goals ๐Ÿ™‚

    I step on the scale once a week at the same time to monitor my progress. I’m not always happy with what it says, but it keeps me in check.

  19. I used to hate the scale, no that’s not right, I was AFRAID of the scale. I knew that just by stepping on, the number that appeared would set the tone for my day. If the number was good? I was happy, relieved, and confident. If the number was “bad”? Day ruined. Unhappy, stressed, self-esteem shot. But then I realized that if I used the numbers as a guide and as a metric, instead of the last word on the state of my fitness, it all changed. I saw the scale as a loose tool to help keep me accountable. Since I learned that, I actually look forward to stepping on the scale.

  20. The scale holds me accountable, I don’t know what I would do without it! But, I have gone through times in my life where I step on multiple times a day. I’ve learned that’s NOT helpful. Now I just check-in once a week.

  21. While I hate stepping on the scale (cue scary music)…..it is a great way to be accountable. I would love to have the option of a WW scale that provided more than just pounds for info.

  22. I find the scale helpful and motivating! Except mine–it’s not very accurate. I step on and off 4 times then average whatever the readings were…time for a new one!!

    hiii! i love and hate the scale. when the numbers go down, it makes me feel good. when it doesn’t, it makes me mad. but i know those numbers don’t mean anything bc i crossfit, yoga and run. and i know i’m a pretty fit person. bahh.

    I used to be very dependent upon it and it would even affect my mood that day. Bad, bad, bad! But now that I have a healthier relationship with it, I do find it does help keep me accountable and I know to do something about it right away if it starts to creep up instead of waiting until my pants are too tight.

  27. I don’t own a scale because I’m kind of embarassed to buy one. I rarely weigh myself because i’m also embarassed to get on it at the gym. I sometimes weigh myself when I visit my mom but I think it would be good to have my own for some extra accountability. Also, I would like to know what my weiight is more often I just dont have easy access to a scale.

  28. Definitely a plus for me as I’m trying to focus more on body fat than weight – and body fat isn’t measured on your typical bathroom scale!

  29. As much as I hate to admit it, I step on it every day! But even the slight gains or losses help to motivate me and help me plan how my day is going to go food and excercise wise.

    It’s not because of the number that the display shows, I dislike the scale as I think to many women think the number determines who they are and I don’t believe that to be true!
    I am confident with who I am no matter what the # says…but it would be nice to see that % of body fat go down, I am sure I have some great results from the shred =)

    Right now I am trying to lose my baby weight so I do use the scale as a measuring tool for where I am at with things. I do have a love-hate relationship with it but it does help hold me accountable!!

  42. The scale terrifies me, especially when i know that i am not in my best shape, I tend to avoid it.

    My only scale is in my parents bathroom, and i can never actually weigh myself in the morning without waking them up. I have been saying i need to get my own for awhile now but I am too cheap to buy one.

    I guarentee if i weighed myself more regularly, i would be more motivated to lose some weight!

  43. I am currently on the WW at work program so a scale would be so helpful to keep me accountable during the week. I used to weigh myself every morning and write down my weight on a chart on the back of my bathroom cabinet (so no one could see) it definitely helped me rather than avoiding it and then find out I gained 6lbs in 3 weeks.

  44. I hate the scale… but it keeps me in check! My current scale isn’t even digital and not very helpful.

  47. I tend to have a love-hate relationship with the scale. It can be very helpful for me, but only if I’m in a good place interiorly! That being said, I think the scales that give you a bigger picture are much more helpful than just plain, old-fashioned scales!
