Thursday Time in The Kitchen: The Egg Puff

I am pretending it’s Friday today, just for kicks 😉 I am just so excited to go out for my Birthday dinner with my parents! I feel like I haven’t seen them in forever!

This morning I decided to give this Egg Puff a try. I have been seeing it on Gina’s blog a lot and it looked easy enough. I like simple 🙂 I think mine turned out pretty good.

Ok so it’s super easy to make.

Directions: Take a microwave safe bowl and spray it with EVOO. Then either crack a whole egg in or just egg whites and whisk. Pop it in the microwave for about 1 minute and 15 seconds, if it still has liquid keep cooking. You will here the egg pop and then you know it is done.

My Egg Puff went perfect with my WW Blueberry and Banana Waffles.

I always feel like I need a little protein when I eat waffles, the Egg Puff was a great addition! Let’s see if it holds me over.
