A Little Goes a Long Way

This morning I am getting ready for my first Saturday of work. Can you believe I haven’t worked on a Saturday since college? Once I graduated I started teaching and had always worked Monday through Friday. We shall see how it goes, but I am sure I won’t mind it because I love my new job!

Breakfast

One of my favorite things to have on a Saturday is French toast. This morning I made no exception. A lot of people think French toast is a unhealthy choice, but this is so untrue!

“Heatlhified” Cream Cheese and Peanut Butter French Toast

It’s all about making all the ingredients go a long way!

Ingredients:

  • 1 Egg + 1 Egg White
  • 2 tbs of Vanilla Almond Milk
  • Cinnamon + Nutmeg
  • 1 tbsp Low Fat Cream Cheese
  • 1 tbsp Natural PB
  • Drizzle of Pure Maple Syrup
  • Cooking Spray
  • 2 pieces of whole bread (under 100 calories per slice)

What to do?

Mix one egg plus one egg white in a shallow dish. Add in Almond milk and cinnamon and nutmeg (just a shake of each). Dip in two pieces of whole wheat bread and then add to a pre-sprayed skillet on the stove. Turn each after about 2 minutes (depending on how hot your stove gets). 

After your toast is cooked top all pieces with 1 tbsp PB, 1 tbsp Cream Cheese, and a drizzle of Maple Syrup. The key is to top it as soon as it comes off the oven so that it spreads further and will cover each piece evenly.
