Friday Fun: No Bake Protein Energy Bites

So last night my friend Amy and I had a little fun in the kitchen. Amy had me over to teach me crochet (again) and while I was there we also made some yummy healthy snacks. She found this recipe via Pinterest from the blog Smashed Peas and Carrots. It has simple ingredients and takes only minutes to make. We played with the recipe a bit and it still came out amazing.

No Bake Protein Energy Bites– Adapted from Peas and Carrots

(makes 18-20 bites)

1 cup oatmeal
1/2 cup diced almonds
1/2 cup natural peanut butter (or other nut butter)
1/3 cup honey
1 cup unsweetened coconut flakes
1/2 cup chocolate protein powder
1/2 cup carob or chocolate mini chips
1 tsp vanilla
Mix everything above in a medium bowl until thoroughly incorporated.  Let chill in the refrigerator for half an hour.  Once chilled, roll into balls and enjoy!  Store in an airtight container and keep refrigerated for up to 1 week.

The only hard thing about this recipe is stirring the natural PB 😉

These babies are so tasty. They would be perfect to eat two right before a run or a gym workout. They are probably a little over  100 calories each depending how big you make them. I let Hubby try one and he even loved them. Amy’s kids couldn’t get enough!
