Pumpkin Smoothie

H-A-P-P-Y FRIDAY!!!!!

This week truly flew right by. I am so glad to be done with the reunion+marathon my stress level has been way lower.

This morning I woke up to a 4:30am wake up call for our Friday Fun Run and decided to rest instead. My body was still pretty sore from last nights interval class with Tom and Ian and I didn’t have the best sleep, sleep trumps run! I go in at noon on Friday’s so I slept in until 7am and then rolled out of bed with a SMILE on my face 🙂 Sad I miss the apple fritters though 🙁 I will have to get the recipe from Shari!

Since I didn’t go for a run I decided to make a GIANT cup of coffee and take Bosco for a LONG walk. It was such a beautiful morning. While strolling along I listened to some Michael Buble Christmas Music and it got me in the Holiday Spirit! I can’t wait to bust out the Christmas music this season!

BREAKFAST

I have been dying to make a Pumpkin Banana Smoothie since I had one from Jamba Juice in Chicago. So I created a Pumpkin Pie SIAB (smoothie in a bowl). It came out perfect!

Into the Blender:
  • 1/2 cup pumpkin puree
  • 1 medium-sized banana
  • 3/4 cup fat-free vanilla yogurt (I used Greek vanilla bean yogurt)
  • 1 tbsp agave nectar (or honey)
  • 1/2 tsp pumpkin pie spice +  1/2 tsp cinnamon
  • 1/4 tsp vanilla extract
  • 1 cup crushed ice
  • 1/4 cup vanilla almond milk

Topped with Nature’s Path granola and sliced almonds. I also drizzled a little AB on top.

Check out this video Kelly made of us running the Chicago Marathon!! Makes me tear up a bit. Every time I hear the song played in the background I get the goose bumps!!!
