Happy Wednesday darlings!
I can’t believe that I am on day 18 of the Crazy SEXY Challenge! I only have 3 more days to go. I have been staying so strong. I haven’t had as many green juices in the afternoon as I would have liked, but other then that things are going so well. I am not gonna lie, I am ready for that small glass of wine as well as some fish! I am not sure what I am going to do on Sunday, but I know that I need to ease in to getting back to my normal diet.
Here are just a of my CRAZY SEXY EATS from the past couple days.
1. Some pretty incredible Salads!
- lots of mixed greens
- chopped cucumber
- 1/2 an avocado
- pine nuts
- hemp seeds
- snap peas
- 1 juicy peach
- drizzle of goddess dressing from Trader Joe’s
2. Vegan Pizza and Nori Rolls for dinner.
Pizza is from a local favorite pizza joint. Gluten Free + Vegan!
I adapted this recipe a little bit from the one I found in Kris Carr’s Crazy Sexy Diet. They are so easy, totally vegan, and make the perfect meal!!
Ingredients (serves 3-4)
- 4 nori seaweed sheets*
- 2 cups short grain brown rice
- 1/2 cucumber, thinly sliced
- 1 carrot, thinly sliced
- 1 avocado, sliced
- 2 scallions, thinly sliced
- 1/2 cup sprouts
- 1/4 cup grated ginger
- 1/2 cup tamari
- 2 tbsp tahini
- 1 lemon
Place your nori sheet shiny side down. Spread a thin layer of rice evenly over the nori. Mix the juice from 1/2 the lemon into the tahini to make a thin sauce. Spread a very thin layer of the tahini sauce on the rice. Cut the other 1/2 of the lemon into a few slices.
I order the Green and Apple Smoothie with a shot of Wheat GRASS! Love the energy I get from this smoothie.
I am feeling really good. Full of energy for my Making the Cut workouts and runs! I am actually kind of surprised that I haven’t felt HUNGRY or sleepy! I may not be a sexy Vegan forever, but I am sure learning a lot.
RANDOM SIDE NOTE—–> In some other fun news, my nieces are up at my work for a week. They are having such a blast at camp, love being an aunt!
