HI FRIENDS! Oh how I have missed you. I had a bit of insomnia last week and needed a little rest. I have lots to share with you; from delicious recipes, Pinterest hair tips, workouts, and fun! I thought it would be fun to list my top 10 things from the past couple of days, otherwise this post could go on and on and on…..

#1. WORKOUTS

I can’t believe I have been doing the NROL for Women for 3 weeks already. I am noticing a huge difference in my WHOLE BODY! My arms are feeling stronger, my legs are toning up and HELLO tight abs!

#2. YOGA

I have made a new commitment to practice YOGA again! I have been making too many excuses for not going to my favorite YOGA studio (Inner Evolution Yoga). Yoga helps, my mind, body and SOUL!

#3. FRIENDS & FAMILY

I am still running twice a week with the running buddies, so thankful for these girls.

This weekend Hubby and I went out with some of our favorite couples to a JUMPING gym!

and went to our favorite Mexican restaurant in Palm Springs, Las Casulas!

I also go to meet my new baby cousin Jaxon, he was born on Christmas day! Such a cutie.

#4. FOOD

After the Crazy Sexy Challenge, my eating hasn’t changed. I am sticking to 90% vegan diet and enjoying a glass of wine once and a while as well as fish. Sticking to a plant protein and clean eats as much as possible. I FEEL AMAZING!

Had my first glass of wine yesterday, and it was delish!

Even though we have been out a lot this weekend, I have stuck to fresh chopped salad with lots of avocado and fruit.

Found these awesome Quest Bars at a local health food store, 20grams of protein and all natural!

Had my first taste of meat last week too in 24 days. The Salmon was great and didn’t bother my stomach at all. Gotta love the healthy choices at Waba Grill.

Sticking to JUICING every morning! My green juice of choice is, 1 cucumber, fistful of kale, 1 inch of ginger, 2 green apples, parsley and a lemon. After watching Fat Sick and Nearly Dead I am pretty sure I will juice for the rest of  my life!

#5. RECIPES!!!

I have been a cooking machine lately. Loving my dutch oven, I am not sure how I ever lived without it. I have been cooking out of the Crazy Sexy Kitchen Cookbook and every recipe is amazing!

I made these roasted Portobello mushrooms and kale  from the Whole Living Magazine and now I am hooked!

…and you MUST make this recipe from Cooking Light Magazine, Chickpea Curry ! It’s seriously the easiest and quickest meal I have ever made! The recipe calls for Greek Yogurt, but you could use a non-dairy sour cream as well.

CHICKPEA CURRY

Modified From Cooking Light Magazine

Ingredients:
  • 2 teaspoons peanut oil
  • 2 teaspoons cumin seeds
  • 1 teaspoon coriander seeds
  • 1 1/2 cups chopped onion
  • 6 cups baby spinach
  • 2 tablespoons minced peeled fresh ginger
  • 4 garlic cloves, minced
  • 2 teaspoons Garam Masala (in the Indian food section at your local market)
  • 1 cup water
  • 1/2 cup chopped plum tomato (about 1 large) $
  • 1/2 teaspoon salt
  • 2 (15 1/2-ounce) cans chickpeas (garbanzo beans), rinsed and drained
  • 1 cup Greek yogurt or non-dairy sour cream
  • 1/2 cup chopped fresh cilantro
  • 1 cup brown rice

Preparation:
  1. Heat oil in a large nonstick skillet over medium heat. Add cumin, coriander; cook 30 seconds or until fragrant, stirring constantly. Add onion, and cook for 2 minutes, stirring frequently. Add ginger and garlic; cook 30 seconds, stirring constantly. Stir in garam masala, and cook 10 seconds, stirring constantly. Stir in 1 cup water, tomato, salt, spinach and chickpeas; bring to a simmer. Cook 5 minutes, stirring occasionally. Remove from heat; . Stir in yogurt and cilantro. Enjoy on top of a bed of brown rice.

YOU WILL LOVE IT!

#6. PINTEREST HAIR

I had some free time this weekend and decided to play with some Pinterest ideas that I have been dying to try on my hair! I have been trying to only wash my hair twice a week and have been using Suave’s Dry Shampoo! I LOVE IT! I love the great texture it adds to my hair and makes my hair have a whole lot more volume. I finally learned how to make a bump ponytail without using a bump-it! I also followed this video and CUT MY OWN bangs!

#7. SIMPLIFY

We are also doing some major SIMPLIFYING around the house. Getting rid of extra clothes, workout clothes, dishes, and all sorts of things that our house over the past 5 years has added.

#8. NEW TASK APP

I love task apps on my iPhone and recently I have been using the ANY.DO app and I LOVE IT! It creates folders for you to keep lists in. Because I am a list maker this is perfect. You can create a task in the folder with a date and time reminder or just make it without the date and time. I also love the clean font as well, and it’s FREE! It was a little tricky to use at first, but now I am addicted.

#9. WUNDER UNDERS

I am also LOVING my new WUNDER UNDERS from Lululemon. I got money from my mother in law for Christmas and I have been eying them forever! I love that I can wear them as leggings, then to yoga, and even to run in!  I got the CROPS and I do think they are worth every penny!

#10. BEST DARK CHOCOLATE EVER

I have brought DARK chocolate back in my life. I am not a huge sweets person, so when I say this is the best dark chocolate I have ever tasted, I MEAN IT! How can you go wrong when my favorite type of wine (Cabernet) is added to my favorite chocolate! I got this in a swag bag a while ago and I kinda forgot about it in the freezer. Let’s just say I am rushing out to find it in stores today!!!

  2. I loved Fat, Sick & Nearly Dead. I got a juicer for Christmas and have been having a green juice every morning. I will say my Vitamix is a bit jealous.

  7. Good to hear the weekend went superbly for you. I had a fabulous time too – ran the inaugural Yangon Marathon and the crowd support (all the town people and villagers came out!) was top notch. The atmosphere at the race was electrifying!

  11. I am really excited to check out the Any.Do app because I’m an obsessive list maker too! I think I would love that chocolate, cause Cabarnet is my favorite wine as well! These recipes look fantastic! I love curry anything!

  12. I’m going to have to try your chickpea curry recipe! I have been mostly vegetarian as well and love any vegetarian friendly recipes. I actually just watched “Fat, Sick and Nearly Dead”, I agree it made me want to do more juicing in my life, but I’m not sure if that is particularly healthy to JUST drink juice for as long as he did. I think for maybe a couple days or a week, but it can’t be healthy for that long! I know he seemed healthy at the end, but I really wonder how these doctors let him do it for such a long period of time. I do like the message it promotes.

  13. Loved Fat Sick, and nearly Dead. Definitely wanting to add juicing more often into our family life. My husband has been buying those Evolution juices at Starbucks and has become obsessed. It will be far more economical to just juice our own! And that Chickpea Curry is a must make for me next week. Thank you!

  14. Love Quest bars–they are so tasty and filling. Great source of protein, too! I have seen “Fat, Sick and Nearly Dead”. It’s an interesting film. I’m not really one to advocate for juicing ALL THE TIME, but the premise of the film is aligned with what I believe: eat whole, clean foods. It’s worth at least seeing it.
