SCHOOL THANKSGIVING FEAST
We had a wonderful Thanksgiving feast at school. There was vegetable soup, corn chowder, and cornbread. Last year I ate too much corn chowder and got sick so this year I stuck to the vegetable soup and had small sample corn chowder.

PROBAR #2 Apple Cinnamon Crunch
Hubby left for Nashville today. I sent him off with some treats, including an Apple Cinnamon PROBAR. Here is hubbyâ€
s review all the way from Nashville:

“It didn’t taste like apple cinnamon, it tasted like cherry-something.Texture was good but still couldn’t get over the cherry-ish flavor bar was big,so that was nice. But with the grams of fat being so high, I would have rather had a good-ol’ Snicker bar which tastes exactly what a Snicker bar should tastelike.â€
That is one thing I need to research, because I feel like there is A LOT of fat in these bars?
CHRISTMAS PLAYLIST
After work I had a bunch of errands to run before I take off tomorrow. When I finally got home, I blasted my Hairy Conick Jr. Home for the Holidays CD, and got to work on my BSI recipe. Because I am a big lover of Christmas music, I thought I would give you some of my best Christmas CDâ€
s that I think everyone should own.

BSI SUBMISSION
Thanks Lindsay for selecting Pumpkin for this weekâ€
s BSI . Well I love pumpkin, but hate pumpkin pie, I know itâ€
s weird. I wanted to come up with something original and creative. It was hard because I felt like everyone else has already done everything I was trying to come up with. I like to use everything I already have on hand, so with out further ado here it is:
Chicken and Apple Pumpadillas ( yes a pumpkin quesadilla)
Ingredients:
1 chicken breast
Salt
Pepper
Dash of Chili powder
Dash of Cinnamon
¼ cup black beans
¼ cup sour cream
½ cup of pumpkin puree
¼ cup of shredded cheese
2 8inch whole wheat tortillas
1 sliced small apple
Preparation:
1,Preheat the oven to 400 degrees. Coat a baking sheet with cooking spray.
2. Coat a larger nonstick skillet with cooking spray and set it over medium heat. Sprinkle salt and pepper on chicken. Cook chicken breast on both sides for about 5 minute on each side.
3.In a small bowl mash the beans, sour cream, chili powder, and cinnamon. In another bowl stir together pumpkin and cheese.
4.Spread the bean mixture on one of the tortillas, and the pumpkin mixture on the other. Then arrange the chicken and sliced apple on top of the bean mixture and then put the other on top to form a sandwich. Place on the baking sheet and bake until the tortillas are crisp, 5-6 minutes. Cut in to wedges and enjoy!!!
I know it looks weird but the cinnamon and chili pepper were a perfect match and so was the pumpkin and cheese!

OOO this was by far the best BSI meal I have come up with!!! I thought I would need salsa but not need!
PILE ON THE MILES SNEAK PEEK AND UPDATE

t wait to giveaway.
LEAVING ON A JET PLANE
I love plane rides and road trips. For me itâ€
s a time to catch up on the things I NEVER have a lot of time to do. Read fiction novels, knit, sleep, and chill. Here are a few must haves in the bag:
I pod, New book Nicholas Sparks at First Site (have never read his stuff), scarf I am working on, and a few good magazines, Womenâ€
s Health and Running World.

What are some things you like to have with you on a road trip?
Alright itâ€
s 10pm and I still HAVENâ€
T packed, hubby tells me itâ€
s in the 30â€
s in TN, so I NEED to pack heavy. I donâ€
t know what I am going to bring as far as running clothing because I HAVE NO WARM running gear! I will have to just layer it up. Have to get to bed at a somewhat decent hour I have spinning and weights in the morning. Good night Yaâ€
ll, O’ no hear comes the South out in me…lol….
Today I got home, and immediately tackled the BSI recipe I have been working on. I absolutely adore sweet potatoes. Thanks Melissa for choosing them as the star of the show!
There are so many things I already love to make with sweet potatoes, but I chose to try something different, itâ€
s more fun to play in the kitchen! So I played with Rachel Rayâ€
s Pumpkin Potato Pie recipe.
MY Healthier VERSION
Pumpkin Sweet Potato Pie
1 sweet potato peeled, halved lengthwise and thinly sliced crosswise
One 9-inch frozen pie crust shell, thawed
1 tablespoon butter
One 8-ounce package sliced mushrooms
1 bunch scallions, thinly sliced
One organic 15-ounce can pure pumpkin puree3 large egg whites beaten
1/4 cup Greek yogurt
Salt and pepper
1/2 cup chopped walnuts
Directions:
1. Preheat the oven to 425°. Place the sweet potato in a large saucepan with enough salted water to cover by 1 inch. Bring to a boil, lower the heat and simmer until tender, about 8 minutes. Drain, then transfer to a bowl. Reserve the saucepan.
2. Using a fork, prick the bottom of the piecrust. Transfer to a baking sheet and bake for 10 minutes.
3. In the saucepan, melt the butter over medium heat. Add the mushrooms and scallions and cook until softened, about 7 minutes. Stir into the sweet potato, along with the pumpkin puree, eggs and yogurt cream; season with salt and pepper. Spoon into the piecrust, sprinkle with the nuts and bake until set, about 20 minutes.
mmmmm….enough said. I paired it tonight with some Whole Foods Stuffing, and I am stuffed, I ate too much…lol…

I loved this comment from Lacy today, “I was totally inspired this morning by the Pile on the Miles challenge. I went a little further than I usually go and kept thinking “Pile on the Miles” to myself to keep on truckin. new mantra! hahaha. it really worked…†What an inspiration for me to run hard tomorrow morning, thanks Lacy!
Well I need to clean up the mess in the kitchen, and catch up on my blog reading. Have a great night everyone!
Oh and donâ€
t forget to get in the ZAP PB giveaway! Ends Friday.
Last night was a blast! I am not a huge fan of college football, partly because I went to a small private school that only had a baseball and basketball teams, but I loved all of the school spirit UCLA fans had the tail gators, and parties looked like a fun times( I feel a little jiped on my college experience). We watched most of the game, but of course us girls started chatting and the next thing you know the game was over. UCLA was murdered, good thing I didn’t really care who won.
The boys looking O’ so serious

If you have ever been to any sporting event the healthy options are so limited. Between the bacon wrapped hot dogs, and the bbq cheese nachos it’s slim pickings! I think that I need to come up with a small chain of places called Bobbi’s Better CHOICES, that serves healthier food at all sporting events!!!! I stuck with these yummy, sugar coated almonds. The ingredients were simple, water, almonds, and sugar. The lady assured me that their was not butter or oil.
The ginormous DIET COKE!!!!! I had to pee every five seconds!

We headed out the door at 7:30 am which is so late for me, I haven’t run a race this late in a long time. As we drove to downtown Riverside, thoughts about last years race started running through my head. I ran well, I just remember wanting to throw up at the end because I think I had pushed myself to hard. I wanted to think positively, so I thought about my Marathon, that always works! I can do this, I ran 26.2 miles in the RAIN!!! Ok I took a few deep breaths, checked my time from last year and it was a 47:26, which means I ran a 7:45 pace, not bad. I know I was just nervous because I haven’t been running a lot lately. As we approached downtown the rain cleared up and the sun shined down, I was smiling and ready.
Hubby dropped me off to pick up my bib number, and run and stretch before the race started. It was a good 30 minutes before the race started after I got all my registration taken care of, so I jogged for about ten minutes and did some deep stretching. I also went to the bathroom TWICE my tummy just can’t hold it before a race, it’s part of the experience. Of course there was no TP, another thing I need to add to my list of things to bring to a race. Waiting at the starting line I thought to myself, I need a small laminated check list for race days (this is the OCD coming out in me). So what would be on that check list? What’s on your check list?
Race day Must haves
What did I forget?
Race Recap:
Mile 1: Obviously I was pretty chipper…lol…I clock in at
5:1o too fast I slowed down.
Mile: 2
12:15
Was a nice flat street around the pond, I was feeling great. No pain in my legs jut a little side ache here and there. I took lots of deep breaths trying to ignore the cramps. There was a small hill, but once again the key to pushing over it, is mentally telling myself YOU CAN DO THIS. I also always look down at the ground a couple steps ahead of me and pump my arms low. That way I don’t see it as a hill but just the road in front of me, try it it works!
Mile 3:
Hubby caught me adjusting the Ipod, I need new headphones mine keep slipping out of my ears!

Mile 4:
The race did a loop, which means we did the same 3 miles twice, booooo!!! lol…It actually wasn’t that bad I knew the course now and could anticipate the hill.
The last three miles were a killer I knew I was going to beat my time as long as I just kept telling myself this is MY RACE, I am running MY BEST. It’s hard sometimes running with others because I tend to get caught up in their stride and I will be going either too fast, or too slow. I tried not to look at my Garmin to much and focus on my body, on the way it was feeling. I was all warmed up, but starting to slow down a little. Then all of a sudden this older gentlemen started running next to me and helped me pick it right back up. We didn’t speak but we knew we were helping each other. He stuck with me the last 2 and 1/2 miles and then at mile 6 he passed me up a little, and I got competitive, and sprinted IN! I know it’s a fun run, but hey every second counts in my book!
Final Stats:
10k time:41:48 (no chip could be faster)
Avg pace: 6:44
Max pace: 4:09
Calories Burned: 709
8th girl, 69th overall, 4th in my division
WOW I PRd by 6 minutes from last year!!! WOOT WOOT! I received a metal for being in the top 100, I did that last year too. Last year I also got second in my division, this year I got fourth. O well I ran so much faster, I was pleased. Hubby was there at the finish line to take care of me, which he does so well. I was good and had my Hammer Recoverite right away. I also went for a little jog and stretched, I never do this and I know I need to. It was the perfect weather, for a perfect race! People ask me why do you pay money to run, and I tell them this, because running a race is not just running it’s an experience!!!!
“Everyone in life is looking for a certain rush. Racing is where I get mine.”- John Trautmann

On the way home we stopped by Starbucks, it was getting a little chilly and I was craving some hot apple cider. It was so yummers:) Then when I got home I took an hour nap and woke up and made lunch. It’s cold outside now and nothing sounded better then Chile. I made a protein packed sweet potato! The best thing to have after a race

I also worked on my BSI recipe, I know I am cutting it close, but I never seem to have a free moment. I mean even tonight after all that has happened today we have a softball game!
I was little nervous about cooking eggplant, but once I did a little research I quickly found out it’s not all that hard. I love all types of grilled food, so why not eggplant right? Well here it is:
EGGPLANT,TOFU, AND PEPPER SKEWERS WITH BUTTERNUT SQUASH RISSOTO
1/2 block of extra firm tofu, cubed
1 small eggplant, cubed
3 tbs of olive oil
1 red bell pepper chopped
1 yellow bell pepper chopped
2tbs of balsamic vinegar
2 garlic cloves, crushed
1 teaspoon of sugar
2 wooden skewers
Served on Top of Lundberg Butternut Squash Risotto!
Preparation:
1. Put the eggplant, bell peppers, and tofu in a large plastic bowl. Pour on the combined oil, vinegar, garlic, and sugar and toss. Marinate for 10-15 minutes.
2. Make the Lundberg Butternut Squash Risotto while marinating.
3. Thread alternating eggplant, peppers, and tofu onto the skewers. Cook on hot, lightly oiled bbq grill or flat plate for 7-8 minutes, or until eggplant is tender, turning occasionally. Serve on top of Risotto.
WONDERFUL!

Well I know this post has been long if your still reading, I have changed one thing on PILE ON THE MILES CHALLENGE instead of posting me a comment with your miles on November 28th you can send me an email at marie.bobbi@ gmail .com . So after the carnival we had to decide where to eat out. These days I am super picky where we eat out for two reasons, on being that we try and only go out once a week so I want to make it special, and secondly I want to eat something that is not only deleciouse but somewhat healthful. Hubby wanted Chinease, and I used to love Chinease but a few too many food hangovers and I might have to say goodbye forever, unless I make it at home. Because there is a Chinease take out place right next to Tj’s, I decided to grab dinner there and that way we could both have what we wanted. As I browsed the isles in my cheer outfit, I had so many people come up to me and ask if I had a game tonight. Too FUNNY! I was still so indecisive on what to eat, I was thinking salad but that was boring so I got a cheesless veggie pizza and a bottle of wine (and since I was there I picked up a few things of course). I got some pumpkin butter which I loved from last year and some sweet potato french fries.

My run rocked this morning! I ran for 42 minutes, total of 5 miles, 8:15pace, and burned 600 calories. It felt so good to be out there running, I have missed it. My body felt great, hammys a little sore but not too bad. I had a great stretch after and did 30 Push up and some plank moves. Needed a LARABAR for a quick snack.

]]>LOVE THIS QUOTE!
Happy FRIDAY!
Woke up again this morning at 5am, not on my own barely heard the alarm go off! Whent to an hour spin class, and I actually loved the hour. My legs felt like jello when I got off, that means I worked hard. I need to wear my heart monitor so I can make sure that I am pushing it!
I decided to make cranberry sauce for the BSI ingredient for Fitnessista. It was real simple now I just need to come up with a recipe.

Made some Banana Oats this morning packed with lots of protein after my ride. I have also been a little too hungry an hour later after bfast so I had a slice of Oroweat Bread cut in two four bite size squares with honey, so much more fun to eat it this way.

Banana Oats
1/2 c oats
1/2 c water
1/2 c vanilla hempmilk
dash of cinnamon
1/4 c Kashi Flax and Almonds
1 scoop banana protein
2 chopped dates
1/2 banana
1 spoonful of Pb melted
Now off to enjoy the last day of the week, and the first day of the weekend!
