Today I officially started my first ever 21 Day Fix! I am excited to coach a group of ladies over the next 21 days to a healthier  version of themselves! It’s going to be such a great journey. The biggest part of this challenge is the food portion. We all know that 80% of what you put into your bodies is what we look like and effects how we feel. I like this program because it’s all about balance and portion control. A lot like other programs I have done, but this one is great because it gives you the tools to truly be successful!
I went shopping yesterday for all our meals and even did a meal prep video on Periscope (are you following me? nhershoes). I will be snapchatting all my meals as well so you can follow me there too (nhershoes). I am excited to see how the program truly works and I know if people do the 30 minute workouts 5 days a week and stick to the program they will see great results.
Here are my before pictures and I can’t wait to take my after. I am happy with the way I look, but the vacations we took in September left me feeling a little yucky on the inside. So feeling great on the inside is my #1 goal!!!

Who else is excited about fall?! I know I sure am. Ok, the weather in Southern California is still in the 90’s, but I can pretend it’s cooling down right? Thought I would kick off this beautiful fall week with some super yummy Pumpkin muffins. Not just any pumpkin muffins, but healthier (but still taste amazing) muffins. I haven’t played enough around with coconut or gluten free flour, but I bet you could replace the all purpose flour with a GF flour. I am gonna give coconut flour a try next week! Did I mention they have NO OIL and no cane sugar?
Pumpkin Oatmeal Chocolate Chip Muffins
Serves:Â 12 or 16 in my caseÂINGREDIENTS
- 1 1/2 cups all-purpose flour
- 1 cup Love Grown Super oatmeal (or whatever oats you have on hand)
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 2 teaspoons pumpkin pie spice
- 1/4 teaspoon salt
- 1/3 cup honey or agave nectar
- 2 egg whites, slightly beaten
- 2/3 cup unsweetened almond milk
- 1 cup canned pumpkin (or throw in the whole can I did)
- 1/3 cup unsweetened all-natural applesauce (or oil)
- 1/2 ripe banana, mashed
- 1/2 cup chocolate chips, plus 2 tablespoons-I used non dairy, non soy chocolate chips
- Extra oatmeal, for sprinkling on muffins
INSTRUCTIONS
- Preheat the oven to 350 degrees and line 12 muffin cups with paper cups or spray with nonstick spray. If you use muffin cups, make sure to spray the inside of the cups.
- In a large bowl mix flour, oatmeal, pumpkin pie spice baking powder, baking soda, and salt together. In a separate bowl combine pumpkin, mashed banana, honey, almond milk, egg whites and applesauce. Add the flour mixture into the pumpkin mixture and stir to combine. Gently fold in chocolate chips.
- Fill each muffin cup 3/4 full so that each is even. Sprinkle a tiny bit of oatmeal over each top of the muffins. Place into the oven and bake for 23-28 minutes or until a toothpick inserted into center of muffins comes out clean. Muffins are best served warm. Reheat in the microwave for 20 seconds and spread with topping of your choice!
*These pair perfect with a big cup of pumpkin spice black coffee! These would also make a great gift for a friend in need

Then on to dinner: Baked Pasta with Sausage, Tomatoes, and Cheese, I used whole wheat pasta and gound Italian Turkey Meat instead of sausage. A little healthier. This was so yummy!

With Autumn Salad: Romaine And Radicchio, Tomato Wedges, Wheatberry Sprinkles (Wheatberries, Dried Cranberries, Sunflower Seeds, Golden Raisins, Chopped Carrots, Scallions, In Molasses And Balsamic Vinegar) And goat cheese.

On our one hour layover, we ate at this nice restaurant in the Phoenix airport can’t remember the name it’s famous for it’s whiskey ( something I DO NOT enjoy, a bad college experience). I had a Lobster Salad, loved it..and I snuck a few of hubby’s fries of course. There was a lot of egg on it, I only ate one half because the egg was also shopped up all over the salad.

THERE’S NO PLACE LIKE HOME
My wonderful mother picked us up from the airport, and I was hoping we could just hang out at her place and have leftovers, sadly they had NONE!!! Four boys and a father will do that to you.
I snacked on a 1/4 of a Cherry Pretzel PROBAR ( it was dinner time for us even though it was onnly 3pm), this one was good but a little too salty for me. When we got home, Bosco was so thrilled to see us, or should I say we were so THRILLED to see him! The minuet we opend the front door I was suprised with several boxes on the porch, goodies for the POTM challenge!
IT’S BEGINNING TO LOOK A LOT LIKE CHRISTMAS
We settled in and hubby already got to the laundry, that’s right he’s a little OCD like that, but that’s why I love him;) Like hubby like wifey the minuet we walked in, I started cleaning out the fridge and the pantry to make a grocery list for the week. There is something about a clean fridge that is invigorating. Call me crazy but I love to clean out my fridge, what makes you feel invigorated? After the fridge and pantry were done, I started putting away all the fall decorations and hubby brought out the SIX boxes of Christmas decorations, what can I say I LOVE CHRISTMAS! When I was a kid we would all get to decorate the tree while drinking hot coco and watching White Christmas. Did you, or do you have decorating family traditions? I got everything up, and when we get our tree tomorrow I will take pics so you can see how festive it all looks!
ACCOMPLISHED
Not only did I clean, and decorate, I also made our first home made meal in a WEEK ( Thanksgiving was homemade just not our home). I didn’t have a lot to work with so I just kept it simple, I am going shopping in the morning. For hubby it was turkey sloppy joes and mac and cheese, and for me a sweet potato sloppy joe. After dinner I sipped on a hot cup of cider and started major planning the MONTH of December. With all the wonderful Holiday traditions it’s hard to keep track sometimes of what all is happening. There are no women’s studies this month which leaves Wednesday nights FREE, which means more time to bake and to write my Christmas cards. I think I got everything on the calender from, work parties, to work outs, to cookie exchanges! This year my bff is having a cookie exchange at her house, I have always wanted to go to one of these and now I get to!!! Any cookies suggestions?

PARTY PARTY
This week I already have two Christmas parties and a couples study at my house !!! MAN I am already pooped thinking about it, but once again I WILL not BE stressed! I WILL NOT! I plan on having a lot of quite time this week to be ready to take on whatever the day has layed out for me:) God is good!
Sweet Potato Soufflé
As promised here is the recipe for the wonderful healthy Sweet Potato Soufflé I made for Thanksgiving.

Sweet Potato Soufflé
This recipe serves: 10
4 large sweet potatoes
2 tablespoons olive oil
1/2 cup skim milk
1/2 cup dry sherry
1/2 cup brown sugar
1/2 cup frozen orange juice from concentrate
1 teaspoon nutmeg
1 teaspoon cloves
1 teaspoon cinnamon
1 pinch salt
4 large egg whites
2 tablespoons sugar
2 oranges cut in thin slices
1. Preheat oven to 350°F.
2. In a large pot, cover the sweet potatoes with water and bring to a boil. Boil until tender.
3. Drain and peel the potatoes and place in a large mixing bowl. Mash well.
4. Add the olive oil, milk, sherry, brown sugar, orange juice, nutmeg, cloves, cinnamon and salt. Beat well with a mixer.
5. Spoon mixture into an oiled ,ovenproof gratin dish.
6. Bake until the potatoes are hot, about 25 minutes.
7. While the soufflé is cooking, make the meringue. In a clean bowl, whip egg whites until almost stiff. Gradually add the sugar and continue to beat until soft peaks form.
8. During the last five minutes of cooking the soufflé, top with the meringue mixture.
9. Return to oven and remove when the meringue is lightly browned. Garnish with the sliced oranges.

S FROZEN!!!
SOUTHERN EATING #1
When I landed hubby asked if I wanted to eat at O’ Charley’s, I soon responded with ” DO YOU EVEN HAVE TO ASK!”. O’Charleys was one our favorite spots to grab grub when we dated in Memphis. I was so excited to get the sweet rolls. Well now that I am a lot healthier about what I eat, it wasn’t as fun of experience as I remember. I used to get a Long Island Ice Tea, chicken pecan salad (which had like 1,500 calories, salads are not always the healthiest choice). Well we looked over the menu we tried to find the healthiest things on the menu. It basically came down to grilled chicken, boring! So I thought I would try a key lime and mango salsa chicken platter, and a small side salad. Of course I had one sweet roll as well, before I ate real healthy I would have 3 (these little puppies have 165 calories and 2 grams of fat a piece). The chicken was ok, but too hot for me…I think I could stop eating chicken all together if fish wasn’t so expensive. My tummy was mad at me so I only ate half. I wish sometimes that I could just eat whatever I wanted, and my stomach would just act appropriately.


THE IN LAWS
We got to spend a couple hours with the SIL (sister in law), BIL, and 3 nephews before we hit the hay. It was fun, I love them and SIL already has her house looking like a Martha Stewart Christmas. I love her house, it’s so nice and a dream home for me. I love all the brick homes in the South; we can’t have those in California too many earthquakes. My SIL is so sweet, I wish we lived closer so I could have a big sister to go shopping, chat over coffee, and get pedicures with. These are things that we have done but only for a short while since were always on small vacations when we see each other. I just learned that they might be moving to Florida in two years which means they will be on the other side of the country!
EARLY RISERS
Hubby and I rose early this morning to go to our home church in Memphis, Fellowship. It’s a three hour drive from Nashville so we had to leave at 7am. That means we went to bed at 12pm (10pm my time) and woke up at 6:30am (4:30am) my time. It’s so worth it, we miss our old pastor and can’t wait to sit in service and enjoy his message. I figure I will just get a Sunday nap in! SIL had GoLean Kashi cereal, so I had a bowl of that and on our way out to Memphis we swung by Sbux and I got a tall skinny 2 pump, pumpkin spice latte. They put whip cream on it, WTF, if you ask for non-fat milk that means NO whip cream, I worked there I know these things. O well Iâ€
ll suffer…lol
The plan for today is to get settled in MIL (mother in laws) house, nap, and plan out the week. I already have two coffee dates with old friends! I am not exercising today, unless I get bored…HAVE A RESTFUL AND BLISSFUL SUNDAY!
I AM BACK
Ok so I never had a chance to post the previous post so I am going to just continue and give you a small recap of our day so far. Church was wonderful, so nice to see our pastor again. Our old church is held at my Alma mater Crichton College.

SOUTHERN EATING #2
McCalister’s, another fave! It is a bit on the expensive side so I only used to go there on pay days. I got my favorite sandwich, chicken berry with a cup of chicken tortilla soup which was a lot thicker then I remember. It was all very wonderful!

TRIP TO WF

t have one when I lived here) he was a little disappointed though as was I. This WF was A LOT smaller then the one in LA. Go figure, southern folk are not as health conscious as us west coasters. But we did score some samples and I got some breakfast fixins( o no some more southern lingo coming out). Josh is also going to sample one of my PROBARS and sending me a review, THANKS JOSH!
