It’s the day I wash all the floors, laundry, bedding and dishes (well dishes I feel like we do everyday). It’s been a great day to do it, cause we kind of have a low key day on Wednesdays and just stick around the house and since everything is clean for the rest of the week we don’t have to do a ton of chores on the weekend!! I also make large pots of soup on Wednesday or some kind of casserole dish, so we can enjoy for lunches on the weekends. I feel like the weekend comes and we are out of food and too tired to make food, so this has worked well for our family. We are on a strict budget this year, because we have big projects we want to get done around the house and some fun vacations planned.

Today I have one of our new favorite crock pot recipes to share with you all today, that I kind of just made up with the help of Pinterest. It may now be on our rotating monthly meal plan (that’s a whole blog post in itself).

CROCKPOT QUINOA ENCHILADA BAKE 

Yield: About 7 – 8 servings

Ingredients

    • 1 Tbsp olive oil
    • 1 bag of frozen mixed bell peppers
    • 1 pound ground turkey meat
    • 3 cloves garlic, minced
    • 1 1/2 cups dry quinoa
    • 2 1/4 cups vegetable broth
    • 1 (14.5 oz) can tomatoes with green chilies, undrained
    • 1 (8 oz) can green enchilada sauce
    • 2 Tbsp chili powder
    • 1 1/2 tsp ground cumin
    • Salt and freshly ground black pepper, to taste
    • 1 (14.5 oz) can black beans, drained and rinsed
    • 1 (14.5 oz) can pinto beans, drained and rinsed
    • 1 1/2 cups frozen corn
    • 1 1/2 cups cheddar or monterey jack, or Mexican blend cheese
For serving
Diced avocados, diced Roma tomatoes, chopped cilantro, lime wedges, chopped green onions (optional)

Directions

1. Heat oil in a skillet over medium-high heat. Add in ground turkey or beef and cook. Add onion and bell pepper and saute 3 minutes. Add garlic and saute 30 seconds longer. Pour mixture into a slow cooker.

2. Stir in quinoa, vegetable broth, canned tomatoes, enchilada sauce, corn, black beans and pinto beans and toss mixture.chili powder and cumin and season with salt and pepper to taste. Cover and cook on HIGH heat about 4-5 hours.

3. Even top then sprinkle with cheese. Cover and cook until heated through and cheese has melted about 10 – 15 minutes longer. Serve warm with desired toppings.

I have had a ton of people ask me for healthy crockpot meal recipes, but another awesome way to try new crockpot recipes without making them all yourself is to do a Meal Exchange!

What is a Meal Exchange?

It is where you get 8-12 ladies together and swap meals! So fun and so wonderful especially through the HOLIDAY SEASON!

First thing to do is send an email out to 12 of your friends that looks a bit like this:

Hi everyone!

I’m so excited for our next meal exchange at my house on (DATE and TIME). Please don’t be late in case anyone needs to grab their meals and go.

A few important details:
1. If you are not going to do the exchange please let all of us know by this (DATE) so it gives everyone time to prepare the meals and buy the appropriate amount of groceries.
2. Be sure to bring an ice chest to take your meals home in and a large laundry basket to place in your number spot with all of us to grab a meal from. Think of it sort of like a “trunk or treat”… you bring your meals in the basket and drag your ice chest along with you to each of our baskets, picking up a meal along the way until you have all your meals.
3. Below is the list of those who are joining. Be sure to label all your meals with your number listed next to your name. For example I’m #1 so “#1” will be written on all my meals.
4. Include a 3×5 card in a zip lock bag in every meal with cooking directions on one side and the recipe on the back. Put it in the zip lock bag so it can go in the freezer with the meal.
5. All meals need to be freezable.
6. The meals need to be crockpot ready or oven ready. (It can also be something super fast to cook on the stove top – 10 minutes or less)
7. When you know what you are going to make, please reply to all so we can all see what meals are being prepared. We don’t want to end up with 10 chicken soups :/
8. All dinners need to serve AT LEAST 6 people.

We are limiting this Meal Exchange to no more than 12 people so if you know of someone who wants to do it, have them email me soon.

EASY RIGHT?! Then you will have 8-12 meals in your freezer to pull out and enjoy in a flash! Yes, the one day of prep to make 12 meals for everyone else takes some time, but you are making the same thing so just make an assembly line and it will go by fast!

This time around I made Pumpkin Coconut Curry! The best thing to do is to go Pinterest and find some really yummy crockpot meals.

I don’t eat it all in one sitting (it’s all about moderation), but I enjoy it while it lasts!

I have pinned several pumpkin recipes and one of my favorites has been Crockpot Pumpkin Pie and Apple Oats!

Pumpkin Pie Steel Cut Oats in the Crockpot Serves 6-8

  • 2 c. steel cut oats
  • 1 15oz can of pumpkin (or about 1 3/4 c.)
  • 1 cup almond milk
  • 1 apple chopped up
  • 1 tbsp vanilla
  • 1 tbsp + 1 tsp pumpkin pie spice
  • 1/2 c. honey or maple syrup (or leave unsweetened and add after it’s been cooked)

Put all ingredients in a oven safe bowl.  Place bowl in slow cooker and add water up to half the bowl.  Set to cook for 5-6 hours on low.  Serve hot with milk or a dollop of Greek yogurt, extra honey or maple syrup and a sprinkle of cinnamon. My favorite is with a scoop of Trader Joe’s pumpkin butter! If you have leftovers, they keep well in the fridge but can also be frozen in small portions to take out when needed for a quick breakfast.

It’s been a super fun week of celebrating, getting the house back in order after RJ’s first birthday party (post coming soon), a five day camping trip and family in town. Loved celebrating, but feels good to be back to routine (a little).

1. The Blog, what’s next?

As you can see there has been some fun new changes to the blog, new header, background, but this is only the beginning. It’s time to mix things up a bit, so you will be seeing a LOT more changes in the future.

2. WHOLE 30 Update:

I am still doing it, but I had a little break on Monday! I had a Mai Tai and some treats at Disneyland. The Whole 30 says if you get off then you have to start all over again, well I am not following that. Hey I did do the ‘Whole 15,’ that should count for something right?

Gonna stay strong until the 26th. I can not wait to share my full review of the entire plan.

3 At-Home Workout!

I miss sharing workouts with you all. Don’t worry they are coming back and I am getting super excited about the NHS Holiday Shred 2014 coming up.

Propel’s challenge for me this month was to share an at-home workout with all of you. I know we all get super busy and sometimes can’t make it to the gym, but that’s when we use our bodies as workout equipment and get in 30 minutes of pure sweat.

Here is a workout I have created for you all to get your heart rate up and one heck of a good burn!

#4. Crock Pot Meal Exchange:

We had another round of crock pot meal exchanges! This time there was a total 11 of us.

A lot of you have asked how this works and it’s super simple. Each person makes 11 (or however many people you have) of the same meal and puts it in a freezer bag. This can be anything from a soup, chicken tacos, meatballs and spaghetti (include the spaghetti separate). You just want to make it super simple for everyone to take out of the freezer stick in the crock pot.

I made cilantro lime chicken for everyone and then when we all got to my friends house, we walked around and grabbed one of each meal. So now we had 11 different meals to try out and have on hand to make dinner EASY! We do healthier crock pot meals and it works out perfect! Make sure to include the recipeIMG_9470

#5. 3D Mascara:

I finally gave it a try! An instagram follower (AmyClink) sent me some Amy Clinkenbeard’s Younique Virtual Party (Mascara) to try out and now my mind is BLOWN away! 

It’s an incredible mascara that is all natural, made from green tea leaves with tons of beneficial ingredients in it!

It contains a gel that applies like mascara. You apply the green tea fibers to extend you lashes then the gel again to seal in the fibers. It lasts all day and washes off with your regular face soap! I am hooked!!!

Only appropriate after a 14 mile run, right? Winking smile

I have been back to running this week and training for the Boston Marathon. Can you believe that it is less than two months away?!!!! I have my first 16 mile run this weekend. Smile

Ok, I owe you all some really yummy recipes….

While visiting my friend Ronni in WA, she made me her Crock Pot Beer Chicken and it was one of the juiciest chicken crock pot recipes I have ever had. The best part is that I already had everything on hand. She also made mashed potatoes. Of course, when I made it at home, I made healthy version by using cauliflower instead of potatoes.

CROCK POT BEER CHICKEN

Ingredients

2lbs skinless, boneless chicken breasts
1 bottle of can of your favorite beer (I used Fat Tire)
1 tsp salt
1 tsp garlic powder
1 tbsp dried oregano
1/2 tsp black pepper

Directions

Place all ingredients in the crock pot and cook on high for 4-5 hrs (or low for 6-8 hrs).
Feel free to change out the spices and herbs to be able to use your favorites.

Cauliflower Mash

Ingredients
1 large head cauliflower steam bag
1 tbsp minced garlic
olive oil
1 tbsp greek yogurt or cream cheese
3/4 teaspoon salt
1/8 teaspoon pepper

Directions

Blend all ingredients in a food processor and pulse to your desired consistency.

I just love me some Cooking Light recipes!!!! I always have great luck with the dish actually tasting super flavorful and looking like what I was going for. These Salmon Fillets were just cooked in some EVOO with a sprinkle of salt and pepper and flipped over after 3 minutes. I couldn’t stop raving about the orzo. There was so much flavor packed in and it was so simple to make.

Orzo Pilaf

Ingredients

5 teaspoons olive oil, divided
3/4 cup uncooked orzo
1 1/2 cups unsalted chicken stock
1/2 teaspoon salt, divided
1/4 cup bottled roasted red bell peppers, thinly sliced
2 tablespoons chopped fresh dill
2 tablespoons fresh lemon juice
1 ounce chopped pitted kalamata olives( I didn’t have any)

Directions
Heat a medium saucepan over medium-high heat. Add 2 teaspoons oil, then swirl. Add orzo. Sauté the orzo in the oil for 2 minutes or until toasted. Add stock and 1/4 teaspoon salt. Bring to a boil. Cover, reduce heat, and simmer 15 minutes. Stir in bell peppers, dill, juice, and olives. Keep warm until serving.

Lastly, I have been enjoying Green Monsters once again and I think RJ is ready for her own. (I’ll have a full post on making RJ’s food coming soon.) This combination may be the best I have ever made by far! I love the addition of mango. It really made the smoothie PERFECT!

Green Monster Super Food Smoothie

Ingredients

1 cup coconut water
1 banana
1/2 cup frozen mango
2 tbsp Hemp Protein
1 tbsp flax seed

Directions

Put all ingredients in the blender and enjoy!

This year I stepped up the theme a bit and had a Chili Bar and Kids Corner inspired by Pinterest. Every year I make the main dish and everyone else brings yummy appetizers and desserts.

Is it really Thursday? Lately the weekends keep sneaking up on me and before I know it, I haven’t blogged all week! If you follow me on my IG account (aka my live blog) then you know I am keeping busy with Miss. RJ, personal training, being a SAHM, running a clothing shop, making some yummy dinners and taking in deep breaths when needed!

I always knew that I would love being a Stay At Home Mom, but in reality, I am still working. So what does a day in the life of nHerShoes look like these days….

3am: Wake up call to feed baby girl. She’s back down at 3:30, I crawl back into bed until my alarm goes off at 5:15am.

5:15am: WAKE UP! Enjoy first sips of coffee, read Bible (this dosen’t always happen), wash dishes and get ready for kickboxing at 6am. Hubby is on baby duty until 8am.

On mornings I can’t go back to bed, I some how find the energy to make pumpkin muffins for Hubby’s co-workers and me!

10:30am: On days where we run errands, we invite Uncle Jerry, who is a huge help! I love getting out of the house with RJ because she is a good baby and when we are at home, I tend to get caught up in wanting to clean or get things done instead of being with her… so for us, getting out is always good!

12:00pm: Once a week I try and get in a power Yoga session! My sweet friend Susie will watch RJ on her lunch break because her office is just around the corner from the studio I go to.

1:00pm: I have been enjoying yummy veggie, kale and tomato soups at home. On days that were out, I will grab a Panera Salad, Smoothie or Chipotle (trying to get better at not eating out for lunch so much).

1:30pm: MAIL comes and it’s always a good mail day when you get ice cream delivered to your door! I have always wanted to give Arctic Zero a try… I will let you know how it is soon!

1:30-4:30pm: The rest of the day is spent, playing, feeding, changing, cleaning and soaking sweet baby girl up. I don’t plan anything from after lunch until my first afternoon client.

4:30pm: RJ assists me with my evening PT clients. Love that she can come with me to work!

5:00pm: Daddy is home and takes RJ for a 2 mile run while I finish my 5:00pm and 5:30pm clients.

5:00pm: I pull dinner from the crockpot or whip something easy up for us to enjoy. Lately, the crockpot has been such a blessing on busy days! I made this super easy pulled BBQ chicken; 1 cup BBQ sauce, 1 cup Pale Ale, 1 chopped onion, 1 pound boneless skinless chicken breasts all in the crock pot at 4 hours on high.

7:00pm – 9:00pm: At least one night a week I like to go to a local coffee shop and work a bit undistracted while Hubby and RJ have Daddy/Daughter time. It’s amazing what you can get done in two hours when all of a sudden that is all you have! When I am home, we give RJ her bath and read her a story.

9:00pm: We feed RJ her last bottle and she goes right down! I know this is a huge blessing and this might not last, but I am soaking it allllllllll up!

Other nights at 7:00pm – 9:00pm: On nights I don’t work, the three of us and Mr.B snuggle together on the couch and just relax with a hot drink, holiday movie and comfies! I absolutely love this time of year. HOT DRINK TIME IS BACK!  Now all our evenings don’t always pan out like this. Some nights I am taking RJ her bath at 7pm, barely have time to eat myself and after I put her down, we pass out!!

9:15pm: BED TIME! No doubt about it! I have to climb into bed by 9:15pm if I want to have any insanity the next day. Thankfully this schedule has worked for us so far. It isn’t always an easy day, but I have no complaints.

So far so good… but I know when this sweet girl starts being mobile allllllll will change!

I also enjoyed my new favorite egg white sandwich from Subway!!! Friends if you haven’t tried Subway’s breakfast sandwiches you must give them a try (my own opinion not paid to say this). I love love the egg white with avocado and lots of veggies! OK, I’ll stop rambling about the sandwich now.

Sunday is now our new long run day and we crushed 9 miles! When I got home Hubby was already making me breakfast! Eggs, Pj’s and Tamales for the win!!!

This year I got a little crafty with presents and made my own chalk board tags. You can buy chalkboard paper and the tags at your local craft store! I also wrapped up all our jars from the McCormick Garden! Of course I had to use burlap (my addiction).

The Hubby and I shot another photo session for my cousin who is due on Christmas Day! Yep, I still use my Canon, but more for portraits. Hubby and I have become a great team!

OK this post is all over the place, but I am have missed you all and I had to get out a fun holiday post!!!! I am currently on our way to LAX to get on a plane to leave for Tennessee!! We haven’t seen Hubby’s family in 2 years! It will be so great to spend the holiday with them and see some of my old college friends 🙂

This week I have been getting back to clean eats and sweating it out like crazy! I have 6 days till we leave to Maui and I want to feel good while lying on the beach Winking smile My back is ALL BETTER, so glad I took a week of to recover and I am actually more motivated then ever!

I am TRYING to get back to my early morning routines (5am runs) and with the time change, I think that might be possible!!!

Ok Ok…time for an amazing recipe! When I spotted this African Bean & Sweet Potato Soup Recipe on Pinterest, I just knew I had to recreate it and make it my own! I have a ton of produce in my fridge from a local CSA that I had to use up before it all went bad.

This is probably the best crock pot soup I have ever made, hands down!

African Bean and Sweet Potato Soup

Ingredients:

2 teaspoons olive oil
1 1/2 cups chopped onion
1 garlic clove, minced
4 cups (1/2-inch) cubed peeled sweet potato (about 1 1/2 pounds)
1 1/2 cups can small red beans (I just used a can of mixed beans I had on hand)
1 1/2 cups vegetable broth
1 cup chopped red bell pepper
2 cups of fresh broccoli
1/2 cup water
1/2 teaspoon salt
1/2 teaspoon ground cumin
1/4 teaspoon black pepper
1 (14.5-ounce) can diced tomatoes, drained (or 3 fresh diced tomatoes)
1 (4.5-ounce) can chopped green chiles, drained

Directions:

Heat oil in a nonstick skillet over medium heat.
Add onion and garlic; cover and cook 5 minutes or until tender.
Place onion mixture in a 5-quart electric slow cooker. Add sweet potato and next 10 ingredients (through chiles). Cover and cook on low 8 hours or until vegetables are tender.

I added a dollop of plain Chobani Yogurt and avocado and it was perfect!

I have pinned several pumpkin recipes and one of my favorites has been Crockpot Pumpkin Pie and Apple Oats!

Pumpkin Pie Steel Cut Oats in the Crockpot

Serves 6-8

  • 2 c. steel cut oats
  • 1 15oz can of pumpkin (or about 1 3/4 c.)
  • 1 cup almond milk
  • 1 apple chopped up
  • 1 tbsp vanilla
  • 1 tbsp + 1 tsp pumpkin pie spice
  • 1/2 c. honey or maple syrup (or leave unsweetened and add after it’s been cooked)

Put all ingredients in a oven safe bowl.  Place bowl in slow cooker and add water up to half the bowl.  Set to cook for 5-6 hours on low.  Serve hot with milk or a dollop of Greek yogurt, extra honey or maple syrup and a sprinkle of cinnamon. My favorite is with a scoop of Trader Joe’s pumpkin butter!

If you have leftovers, they keep well in the fridge but can also be frozen in small portions to take out when needed for a quick breakfast.

P.S. I made another wreath for a good friends wedding gift! I think this will be my new “thing”!
