It’s that time again 🙂 Time to “Pile on the Miles”. I have been doing this challenge since 2008 and this year Monica from Run Eat Repeat is organizing it. I am fully supporting it and hope you are all in for the challenge too!! The holidays get so busy and this is the perfect time of year to get out and run out stress and those extra little sweets we all enjoy.

The Goal of the “Pile on the Miles” Challenge is to encourage us to pile on miles instead of pounds in November. We’ll do this by having everyone keep track of the number of miles they walk OR run each week. If you do at least 5 miles each week you’ll be entered in a drawing every Friday of the challenge. I will announce the winners every Friday by 3pm PST.

Prizes include:

Nov. 4th – A week’s worth of Stoneyfield yogurt (3 winners)

vanilla oikos

Nov. 11th – $10.00 Subway Gift Card (3 winners)

subway sandwich

Nov. 18th – Peas and Thank You Recipe book

peas and thank you

Nov. 25th – Fila Toning Outfit

Fila Toning outfit

(There may be more prizes added as I’m still speaking with sponsors!)

To Enter: Send Monica an email with your first and last name AND email address to runeatrepeat @ gmail dot com. She will add you to the spreadsheet and you will be in charge of updating it each week with your mileage.

Official Rules:
1. Contest runs from November 1st to November 24th (Thanksgiving). You keep track of how many miles you run or walk.

2. Update the spreadsheet with your mileage by Friday 8am PST each of the following days: Nov. 4th, Nov. 11th, Nov. 18th and Nov. 25th. Be honest, karma’s a B.

3. To qualify for the weekly prize you must walk or run 5 miles for that week. If you do not do 5 miles a certain week you can try again the following week, you are not disqualified.

4. This is open to everyone – readers, bloggers, dogs, aliens. It doesn’t matter where you live, but the prizes are set so if you don’t have a Subway where you live you might want to donate it to another participant.

5. The miles are based on walking, running or wheel-chairing only.

**There is NO Grand Prize Winner for the most miles this year. I don’t want this to be about a competition with each other. Set your own mileage goal for the challenge, but you don’t have to worry about what others are doing. Do YOUR OWN BEST.

I am so excited for this challenge, who’s in????

I really started the challenge to get my butt back out there pounding the pavement, and it did! I would never have ran 11 miles on Thanksgiving without all of you hold me accountable and cheering each me on! This Thanksgiving I can say I honestly piled on the MILES and not the POUNDS. Curiosity got the best of me and I stepped on the scale to see if I gained a pound, and I weighed a pound less!! WOOT WOOT! I piled on 45.3 miles which is nothing compared to most of you! But I’am happy with that total because now I am going to kick it up a notch!

I love this comment by Caroline bee I couldn’t have said it better myself:

“Everyone ran an INSANE amount! Regardless of who won, every single person challenged themselves, broke personal records, and did what they probably thought they couldn’t do before.”

Well with out going on and on here are all the contestants and their total mileage:

Black Saturday and Sunday Breakfast! https://www.bobbimccormick.com/black-saturday-and-sunday-breakfast-2/ https://www.bobbimccormick.com/black-saturday-and-sunday-breakfast-2/#comments Sun, 30 Nov 2008 17:45:00 +0000 http://www.bobbimccormick.com/?p=989 BLACK SATURDAY SHOPPING RECAP

Went out shopping yesterday after my hour kickboxing class, I think I burned like a million calories after walking around for hours and hours. Good thing I had a McCormick McGriddle!

Kickboxing was intense I am going to post tonight about this GREAT workout!

I hit up the Mills out here, which has basically every store and if it’s not there the you can go right across the way to the Victoria Gardens. I think I must look like an easy catch because yesterday I kept getting SUCKED in to all the kiosk people. The first one literally grabbed me, sat me down and kept saying ” 10 minutes 10 dollars (in an Asian accent)”. He wanted me to get a massage, I was set in saying no but then he insisted and I needed one so I caved in! lol….

I got some great deals and Old Navy, Gap, Bath and Body Works, and Marshall’s. I started getting dizzy at around one O’ Clock so I hit up the food court. I hit up the healthiest choice I could find and got a turkey apple salad minus the bacon. Instead of chips on the side I had a bowl of tomato soup. As I looked around the GINORMOUS food court I think I was the ONLY one eating a salad, a year ago I would have been eating Chinese food for sure.

It’s so much fun shopping for other people, there is a joy that I find in finding that perfect gift. So what is the perfect gift? Well I think homemade things are wonderful, but I know my little bro’s aren’t down with me making them a scarf, so the perfect gift for them is something that they like that I took the time to pick out (like cloths and video games). There are a lot of perfect gifts out there, but is there a perfect gift for everyone?

The tree at the outdoor mall!!! LOVE IT!
Shopping was done around 5:30 and I still needed to hit up the grocery store, so I rushed off so I could make it home on time to make dinner. Before I rushed off I grabbed a small Strawberry Nirvana smoothie from Jamba Juice, because I didn’t want to go shopping on an empty stomach. I am glad I had a shopping list because my grocery shopping was painless. I finished around 7 and finally headed home!!!!

I wish I could have worn a pedometer, I think I must have walked like 30 miles! When I got home I showed hubby all my fun finds, and he was thrilled. He was also in the middle of a MAJOR organization project in the garage, Mr. OCD! lol…. Here is a picture of the things that I got for FREE! I didn’t purchase anything for myself, just took advantage of some freebies.

From the left 4 place mats out of the 8 I purchased at Pottery Barn (only 1.50 a piece), by 4 get 4 FREE and I had a 20% off coupon that I printed online! Ok the little Sbux cup wasn’t free but it was only a dollar at the Sbux overstocked store. The Apple Blossom lotion was one out of the two I got for free by 3 get two free at Bath and Body Works. I also had a coupon for a free gift with purchase so I picked out the Spiced Cider plug in fragrance ( it’s plugged in and making the entire living room smell delicious!). Lastly the Holiday Treat Kits( BORDERS), buy one get one free! These are perfect for the Homemade treats I am making for friends and family! I feel like I ripped off the MALL!!! lol
DINNERNothing too exciting for dinner just some leftovers, but I messed around with them a little. I took some Turkey Chili mixed in green beans, butternut quash puree and a dabble of sour cream! MMMM..sorry no pic:(

SUNDAY TREE DAY & LAST DAY OF POTM

This morning I made the most amazing french toast casserole. I had been planning on making this next weekend and then I saw Megs post and had to make it today!!! I saw a recipe in Cooking Light Magazine and played around with it a little.

Cran-Apple French Toast Casserole (my new name for it)

Ingredients:

3 eggs + 2 egg whites
1 tbs butter
1 cup diced apple
cinnamon
1/4 c brown sugar
4 slices of whole wheat bread cut into small squares
1/4 cup dried cranberry’s
1/2 cup apple cider
1/2 cup non fat milk
1/4 cup fresh cranberry sauce
a little nutmeg
sliced almonds for topping

1. Preheat oven to 400 degrees
2. Melt butter in pot and apples and stir for ten minutes. Then add 2 tablespoons of brown sugar, cinnamon, and nutmeg.
3.Spray pie pan with non-stick Pam and lay down bread squares to cover the bottom.
4. Sprinkle dried cranberries on bread along with apple mixture. Combine apple cider with the next 4 ingredients plus all of the eggs whisk together, and pour on top of bread mixture sprinkle with remaining brown sugar.
5. Sprinkle with almonds and bake for 30-35 minutes until golden.

This was super yummy and I will be making it for Christmas breakfast with the family!!!!

Well I am off for the day, I was going to run but I am going to rest after my hard workout yesterday. Remember for those of you in the POTM Challenge send me your total miles by 12am tonight, to marie.bobbi@gmail.com. I am excited to see who is crowned winner, so far the totals that I have gotten HAVE KILLED MY TOTAL!!!!! lol….We are getting our Christmas Tree today, and doing more decorating tonight:) I am lovin’ the season!!! Have a restful SUNDAY!!! See you back tonight with some great gift ideas for the loved ones:)

Home Sweet Home https://www.bobbimccormick.com/home-sweet-home/ https://www.bobbimccormick.com/home-sweet-home/#comments Sat, 29 Nov 2008 06:17:00 +0000 http://www.bobbimccormick.com/?p=159 Wow I can’t believe it’s 10pm and I am wide awake!!! I should be dead tired sense my body is still on TN time. O well I am glad that I have all this energy because I got so much accomplished. Here is a little recap of how half of the day went:

WE TRAVELED BACK IN TIME
We left TN this morning at 7 am, those Early flights always kill me. By the time we got through the security line, and were about to board my tummy starting growling. We were about to get on a 4 hour flight and I had an EMPTY stomach, tragic! So hubby was kind of enough to help me find the nearest Sbux( this week I learned that I am kinda of a Sbux addict on vacations, better then an alcoholic lol). I ordered a Perfect Bowl of Oatmeal, and a tall coffee with two pumps of peppermint my favorite holiday beverage of choice. We had a very pleasant flight, I got my scarf done, read almost my entire book (which Nichols Sparks might be one of my favorite authors now) and I was able to organize my pictures on my laptop, something I have been meaning to do the whole trip. I forgot that I had a protein bar that the SIL gave me to try so I had that about half way into our flight, it wasn’t too bad and kept me full until we landed.

aww he looks so peaceful:)

On our one hour layover, we ate at this nice restaurant in the Phoenix airport can’t remember the name it’s famous for it’s whiskey ( something I DO NOT enjoy, a bad college experience). I had a Lobster Salad, loved it..and I snuck a few of hubby’s fries of course. There was a lot of egg on it, I only ate one half because the egg was also shopped up all over the salad.

THERE’S NO PLACE LIKE HOME

My wonderful mother picked us up from the airport, and I was hoping we could just hang out at her place and have leftovers, sadly they had NONE!!! Four boys and a father will do that to you.

I snacked on a 1/4 of a Cherry Pretzel PROBAR ( it was dinner time for us even though it was onnly 3pm), this one was good but a little too salty for me. When we got home, Bosco was so thrilled to see us, or should I say we were so THRILLED to see him! The minuet we opend the front door I was suprised with several boxes on the porch, goodies for the POTM challenge!

IT’S BEGINNING TO LOOK A LOT LIKE CHRISTMAS

We settled in and hubby already got to the laundry, that’s right he’s a little OCD like that, but that’s why I love him;) Like hubby like wifey the minuet we walked in, I started cleaning out the fridge and the pantry to make a grocery list for the week. There is something about a clean fridge that is invigorating. Call me crazy but I love to clean out my fridge, what makes you feel invigorated? After the fridge and pantry were done, I started putting away all the fall decorations and hubby brought out the SIX boxes of Christmas decorations, what can I say I LOVE CHRISTMAS! When I was a kid we would all get to decorate the tree while drinking hot coco and watching White Christmas. Did you, or do you have decorating family traditions? I got everything up, and when we get our tree tomorrow I will take pics so you can see how festive it all looks!

ACCOMPLISHED

Not only did I clean, and decorate, I also made our first home made meal in a WEEK ( Thanksgiving was homemade just not our home). I didn’t have a lot to work with so I just kept it simple, I am going shopping in the morning. For hubby it was turkey sloppy joes and mac and cheese, and for me a sweet potato sloppy joe. After dinner I sipped on a hot cup of cider and started major planning the MONTH of December. With all the wonderful Holiday traditions it’s hard to keep track sometimes of what all is happening. There are no women’s studies this month which leaves Wednesday nights FREE, which means more time to bake and to write my Christmas cards. I think I got everything on the calender from, work parties, to work outs, to cookie exchanges! This year my bff is having a cookie exchange at her house, I have always wanted to go to one of these and now I get to!!! Any cookies suggestions?

Thanksgiving X 2 https://www.bobbimccormick.com/thanksgiving-x-2/ https://www.bobbimccormick.com/thanksgiving-x-2/#comments Thu, 27 Nov 2008 23:37:00 +0000 http://www.bobbimccormick.com/?p=158 There is so much to say about this Thanksgiving Day, so instead I will just let these pictures capture the highlights of our beautiful Holiday celebration!

Thanksgiving dinner #1 at the FIL
Hanging around waiting for Thanksgiving dinner #1
I would love to have a porch swing at our house..one day…one day!

Being silly as always with the Hubby on the farm.

All of the wonderful food, couldn’t fit it all in.

This blackberry cobbler was Divine!
FIL AKA Benton, uses a true “southern” band aid

Here is a picture of the feast, I had two plates. The first one had a little stuffin (or dressing as they call it in the south), cranberry’s, purple hole peas, mashed taters, olives, celery, and come sweet pickles. All veggies were grown in FIL’s garden. I skipped the rolls I knew I already had enough starch on my plate! I missed some good Ole yams! As you can see for dessert, I had some cobbler with a little light cool whip, and a bite of this cherry pie! Hubby has a very small family, at this feast it was his dad, his dad’s girl friend Sam, her daughter Dana, hubby and I. I am not used to this at all the TRUJIILLO-CLASBY clan, is huge!!! I hope to have lot’s of little one’s to add to this clan, one day not any day soon:)

After dinner, we went out to the farm to feed the goats, birds, and many dogs! I love visiting the farm, that’s right just visiting!!! I am a city girl kinda.

Hubby our entertainer for the night!

We left at 5pm and had to drive 5 hours back to Nashville to the SIL’s, here is a what hubby and I did to entertain ourselves!!!! This video is a PG-13 there are some others out there that were questionable.

Thanksgiving dinner #2

Before we hit the kitchen this morning, I ran a 11 mile run, on Stones River Battle field, SIL was so sweet to find it for me!!! How cool is that! The park was lined with REAL HISTORY, I could not have been more happy anywhere else. It was such a great run, I had two pieces of toast with PB before I left, and stopped by Sbux for a dopio espresso for a good kick. I brought my Hammer gel, and a bottle water ( did not want a Tuesday repeat). I also had a recovery drink from Camelback for after the run. The park was lovely, lots of trails, and lots of people. Which was nice because I didn’t know the area very well and didn’t want to be stranded. The whole run I was encouraged knowing that all you lovely ladies were out there POTM with me! YOU ROCK!

Thanksgiving run stats:

Time: 1:29:13
Distance: 11 miles
Avg Pace: 8:07
Max Pace: 5:51
Total Calories Burned: 1323

TOTAL POTM: 45.3

Got back to the house and SIL had already had the ham cooked and was working away in the kitchen! I love the way the house smells on T-Day! I snacked on some Stony Mills Vanilla Yogurt with peaches and Kashi. I also had two of these amazing sausage cheese balls!!!

Here is all of the yummy food! I made a sweet potato souffle with a mirange topping! I will post the recipe later because it will now be a staple in our house!

My plate

Turkey, sweet potatoes, a little dressing, cream cheese corn, purple hole peas, mac and cheese, one deviled egg (that’s a first for me), green bean casserole and some mashed taters. As you can see southerners aren’t into SALAD!!! We had dinner at 12:30pm so we had seconds for dinner forgot to take pics, was a much smaller plate.

Also I had a small piece of a NO PUDGE brownie, and pecan pie.
Didn’t finish the pie but ate the whole brownie!!! I had a small cup of black coffee too, which was perfect to balance out the sweetness.

Here is my Sweet Potato Souffle

My three Nephews wrestling with the hubby!

Me and the SIL ( Michelle)

Hubby and I, she already has her Christmas tree up!

FLYING HOME
Well this concludes our Thanksgiving Holiday, we fly out early in the morning. I felt good for the most part about my food choices, except my appetite has shrunk so I couldn’t eat as much as I used to! Which is good but bad because I got full way to FAST!!! I am glad I ran so much this week because of all the yummy food we have eaten I got to really enjoy, I hope I had those flexible pounds!
I had a wonderful time here in the south, hanging with old friends and family was such an adventure over this beautiful Holiday! When I get home I already have a huge list of things to do, so tonight I will sip my tea and kick up my feet to enjoy this fabulous ending. Hope you all had fun with friends and family on this HOLIDAY!!!!

P.S.

3 more days
to POTM, just to let you know you can count November 30th as a run day as long as you finish and send me your total miles to marie.bobbi@gmail.com by 12am pacific time.

Thanksgiving

Cranberries dripping down my chin

Have stained my pilgrim suit.

I ate too much Thanksgiving day

But I don’t give a hoot.

I slurped a pile of dressing,

Gobbled down a turkey thigh,

Dribbled messy cranberries

Devoured some pumpkin pie.

Within me on this special day

It’s a thankful heart that beats.

For all the things that I enjoy

But mainly for the eats.

Alright folk we had a very fun filled Tuesday that I know y’all have all been dying to hear about it…lol

SOUTHERN EATING #5

Hubby and I went to Huey’s this afternoon to meet up with some old college friends. I thought we were going to DIE on the way there because Memphis drivers are crazy, and I thought California drivers were bad. I love Huey’s, it’ such a fun and relaxing atmosphere and I hear they have great burgers. I am not a big hamburger eater, and because we have eaten out a lot already I wanted to be a little good. I ordered a side salad and a West Coast burger, go figure. It had a wheat bun, onion and guacamole. I asked for bbq on the side because they have some of the best bbq sauce around! The turkey burger was HUGE, probably had just as much FAT as a regular burger none the less it was yummy!

I miss Big B and Jenny. Big B was my best guy friend in college and because he is 6’11 he protected me like a big brother! Jenny and I trained for my first marathon together but because of conflicting schedule she wasn’t able to finish, but she was the only one at the finish line that came to support ME!!! THANKS JENNY!

CASHING IN OUR WINNINGS

A couple of week ago I received 5 free smoothies, from SMOOTHIE KING, thanks KERF for doing the contest! Hubby and I made a smoothie trip and I got a small mocha smoothie and hubby got a kiwi and strawberry smoothie! We saved them for our dinner dessert.

SOUTHERN EATING #6

Sadly it was our last night in Memphis, before we head out to Mississippi to the FIL’s farm. That’s right my FIL lives on a freaking huge FARM! He has a huge garden with corn, purple hole peas, squash, cabbage, and so so much more! He also has goats, and 2 huge dogs! I remember the first time I visited we drove around his farm and he had all these beautiful fields of grass and he told me how the dear came and ate at it, I thought that was cute until he told me that in exchange he got to have dear for DINNER!!! Lol…I was so naive.

Anyways back to eating, we had dinner with my college roomy Jess and her fiancé Josiah. It was so nice to catch up and hear about all their fun wedding plans. I am so happy for her and I can’t wait to come back in March for their big day!!! We ate at one of my very favorite restaurants, The American Café. I was tempted to try something different but I went with my usual, the Hawaiian Chicken Salad! It has lots of yummy grilled chicken, walnuts, pineapple, an orange right in the middle, coconut, and a skewer of shrimp on top. Not just good but pretty also! I love the presentation of food too, do any of you appreciate that too? I also had two glassed of Pinot Noir, hey I am on vacation and I had a SALAD for dinner!!!

FREAKY FRIDGE

Ok let me just start with this, I love my MIL (mother in law) she is great! Hubby and I were blessed to stay at her house in Memphis this week, thank you Mary. Well I needed something from the freezer and when I went to open it (this is the extra freezer in the garage) we found this.

She lives alone, why does she need this much food? I think it is because she is storing up in case of emergency. Otherwise why in the world would she have this MUCH food! Hubby says that she says “they were on sale and just in case she might need them”. WOW that’s all I have to say, WOW.

Is there a freaky fridge that you have seen in your lifetime? Would you be willing to share?

SOUTHERN EATING #3
Bowl of Pasta

Last night I was in the mood for wine and Italian so we hit up a place I have never been too, and hubby said he liked. It was delicious and I had a rather healthy meal. Whole wheat penne with lots of veggies in EVOO. With a glass of red of course:) After we went to your favorite souther dessert place TCBY! I had a pumpkin yogurt of course with some resses pieces on top, mmmm…

Just a little update on the POTM challenge. Just in case you missed it I will have a 1st, 2nd and 3rd place!!! I am so stoked that all of your are kicking up the miles out there. On November 30th please email me at marie.bobbi@gmail.com your total miles. If you want send me your miles you plan on running on Turkey Day too!!! I know a lot of you have been leaving comments, thanks! I am going to post all the miles that people plan on running in my Wednesday night post, to encourage everyone to get out there despite the rain, cold, or just lazyness!
FREE COOKBOOK
Ok I was going to post a very wonderful post about a giveaway but it looks like I will be post poning that until I get back to California this weekend so stay tuned….
FIRST COLD AND RAINY MORNING
This morning I woke up so LATE 8:3o! That’s over 10 hours of sleep, haven’t done that in forever. I think the rain makes me sleep in late, do you feel that way too? When I finally got out of bed I was  awake and ready to take on the day, but then I saw how much it was raining and was pissed! I wanted to RUN! So hubby ran and got me Sbux (I LOVE THIS MAN) and then I got all bundled up, two long sleeve shirts, cotton and coolmax, some thick socks, hat, and running gloves! I stepped out and started out slow, it was only sprinkling and really wasn’t that cold, because I only had 30 minutes max to run because I had to be somewhere at 10am, I ran hard after the first five minutes. The rain felt kinda nice, the puddles sucked though! I don’t like my feet being cold and wet during a run, not fun! I think the rain actually got me to run harder because I wanted to get out of it…lol…I ended up running 18 minutes, 2.8 miles, and burned a measly 300 calories.  Here’s where it really stinks. I was trying to get to my old gym at 10am to get a free 7 day pass, and take the yoga class at 10:15am, well that didn’t happen. After my quick bowl of pumpkin oats( no pic sorry but I plan on eating these all weeks I brought the staple ingredients, pumpkin, oats, flax granola, and soymilk).
THE CRAZY GYM RULES
I got to the gym all ready for yoga and the desk lady said I could use all the equipment but NO CLASSS, WTF! That’s ridiculous she said it was some liability issue, but I could pay 20 dollars for a ONE day pass, heck no, that’s dumb. As you can see I was not a happy camper. So as I stepped out to tell hubby never-mind, the SUN was out, what no rain! Ok I was happy but at the same time I could have run longer with no rain, if I wouldn’t have tried to make it to the gym!!!O well no use crying over spilled milk. I just hope the rain holds up for my 5 miles tomorrow.
TRUE THANKFULNESS
Alright I am wrapping up this post with words of Thankfulness!
I have decided this week I will post 5 things every day that I am thankful for, you should do this too, it will help us all to really remember what this Thanksgiving is all about. Not just about FOOD and STRESS! So here they are:
#1. I am thankful for my wonderful hubby Matthew, for his kindness and selfishness. For his true love for God, me, and others. I know I am partial because he is my hubby, but serouiusly he is the funniest, smartest, generouse man I have ever met! I am thankful that he chose me.
#2. I am thankful for my  dog bosco, who gives me the best companionship when hubby is away and is the best listner;)
#3. I am thankful for this blog world. I have been so blessed with all the love and encouragement that everyone has given me. It has been so fun learning and laughing with others. What passionate and inspiring friendships I have made.
#4. I am thankful for my brothers. Having four brothers is so wonderful, when I was a kid I hated it but now joking and playing together is so fun. Each of my brothers gives me something I can take and cherish forever!
#5. I am thankful for my JOB, I know at a time like this it isn’t easy for everyone to find or keep one. I love what I do, and I thank God everyday for the privilege I have of being there.
Alright your turn!

Layovers & a Flirt! https://www.bobbimccormick.com/layovers-a-flirt/ https://www.bobbimccormick.com/layovers-a-flirt/#comments Sat, 22 Nov 2008 22:12:00 +0000 http://www.bobbimccormick.com/?p=151 This morning went so fast! I decided on an hour kickboxing class instead of cycling, I am going to be sitting on a plane all day and I didn’t want to risk my bum being sore! When I got home I made my last bowl of cranberry oats for a while, sad day.

Breakfast Combo:

½ c oats
1 c of unsweetened almond milk
Dash of cinnamon
Dash of nutmeg
2 tablespoons of Hemp Seed
¼ c homemade cranberry sauce
Spoonful of apple butter
Drizzle of agave nectar
A little bit of blueberry granola plank

Before I headed to the gym I had a slice of whole wheat toast with Barneys butter and honey, it gave me the energy I needed to get through my class.

BOSCO SAYS GOODBYE FOR A WEEK

This was hard and even Bosco shed a tear.

It’s ok Bosco Grandma and Grandpa will take good care of you!

CAMELBACK WATER BOTTLE

I have already put my new Camelback water bottle to the test, it works great! I love that it has a straw so clumsy me doesn’t spill all over misled. Look it fits perfect in my bag too!

POTM WINNERS you are going to love this!

HOME ALONE LIKE

When I got done with breakfast I was running around frantically trying to get everything together for my trip. I Miss my hubby, he so good at getting everything taken care for the house before we leave on trips. Don’t get me wrong I am fully capable of taking care of things; it’s just nice to have his support! After loading all the bags in the car, and getting Bosco stuff together to head to his grandparents house it was 11:40 and my plane was leaving at 12:55…needless to say I was stressing. I made it to the airport fine, thanks to my Step Dad Richard, thanks RICH! I thought I was going to have to chase after the plane like the movie HOME ALONE! Got on the plane, and even had a few minutes to spare, and this is where a funny little story comes in.

I GOT HIT ON

As I was going through the security gate this nice gentleman (so I thought at the time) decided to HIT on me. He first gave the line “I think I know you from somewhere” and as SWEET as I am I said “really where are you from” he said, “around”. Ok now I was catching on. He then proceeded to speak and said, “You’re a teacher aren’t you” WHAT man how did he know is he a profiler! Lol…being the nice person that I am I said yes and then hoped he would just go away oooo but no he continued to flirt with me. “ If you’re a teacher maybe you can teach me a thing or tow” DUDE do you not see the giant ROCK on my left finger…I laughed and quietly got the heck out of DODGE.

LAYOVER IN VEGAS

Now I am sitting in Las Vegas waiting to board my plane to Nashville and thought I would give you all my plan for working out this week(this is more for me because I need the accountability).

SCHOOL THANKSGIVING FEAST

We had a wonderful Thanksgiving feast at school. There was vegetable soup, corn chowder, and cornbread. Last year I ate too much corn chowder and got sick so this year I stuck to the vegetable soup and had small sample corn chowder.

PROBAR #2 Apple Cinnamon Crunch

Hubby left for Nashville today. I sent him off with some treats, including an Apple Cinnamon PROBAR. Here is hubby’s review all the way from Nashville:

“It didn’t taste like apple cinnamon, it tasted like cherry-something.Texture was good but still couldn’t get over the cherry-ish flavor bar was big,so that was nice. But with the grams of fat being so high, I would have rather had a good-ol’ Snicker bar which tastes exactly what a Snicker bar should tastelike.”

That is one thing I need to research, because I feel like there is A LOT of fat in these bars?

CHRISTMAS PLAYLIST

After work I had a bunch of errands to run before I take off tomorrow. When I finally got home, I blasted my Hairy Conick Jr. Home for the Holidays CD, and got to work on my BSI recipe. Because I am a big lover of Christmas music, I thought I would give you some of my best Christmas CD’s that I think everyone should own.

Amy Grant Home for Christmas
Unexpected Gifts 12 New Sounds of Christmas
Celine Dion These are the Special Times
Chris Rice The Living Room Sessions
Clay Aiken Christmas Album
Christmas with the Rat Pack (my all time fave)
Kenny G Miracles
LeeAnn Womack Season of Romance
Mariah Carey Merry Christmas
Tran-Siberian Orchestra
Chicago Christmas Album
Michel Buble Let it Snow

What are your favorite Christmas CD’s?

BSI SUBMISSION

Thanks Lindsay for selecting Pumpkin for this week’s BSI . Well I love pumpkin, but hate pumpkin pie, I know it’s weird. I wanted to come up with something original and creative. It was hard because I felt like everyone else has already done everything I was trying to come up with. I like to use everything I already have on hand, so with out further ado here it is:

Chicken and Apple Pumpadillas ( yes a pumpkin quesadilla)

Ingredients:

1 chicken breast
Salt
Pepper
Dash of Chili powder
Dash of Cinnamon
¼ cup black beans
¼ cup sour cream
½ cup of pumpkin puree
¼ cup of shredded cheese
2 8inch whole wheat tortillas
1 sliced small apple

Preparation:

1,Preheat the oven to 400 degrees. Coat a baking sheet with cooking spray.

2. Coat a larger nonstick skillet with cooking spray and set it over medium heat. Sprinkle salt and pepper on chicken. Cook chicken breast on both sides for about 5 minute on each side.

3.In a small bowl mash the beans, sour cream, chili powder, and cinnamon. In another bowl stir together pumpkin and cheese.

4.Spread the bean mixture on one of the tortillas, and the pumpkin mixture on the other. Then arrange the chicken and sliced apple on top of the bean mixture and then put the other on top to form a sandwich. Place on the baking sheet and bake until the tortillas are crisp, 5-6 minutes. Cut in to wedges and enjoy!!!

I know it looks weird but the cinnamon and chili pepper were a perfect match and so was the pumpkin and cheese!

OOO this was by far the best BSI meal I have come up with!!! I thought I would need salsa but not need!

PILE ON THE MILES SNEAK PEEK AND UPDATE

Ok so today after I finished my BSI recipe I stepped outside and found a very nice SURPRISE!!!! Thank you CAMELBACK!!!! I am so excited about all that they sent me, in support of the POTM. I will be doing a review on these bottles soon, and hosting a giveaway so keep your eyes peeled.

I have decided to offer a second and third place to the challenge as well. I think that this will give you all more of a push to run hard this last week!!!!! SO keep POTM! There are so many other great things I can’t wait to giveaway.

LEAVING ON A JET PLANE

I love plane rides and road trips. For me it’s a time to catch up on the things I NEVER have a lot of time to do. Read fiction novels, knit, sleep, and chill. Here are a few must haves in the bag:

I pod, New book Nicholas Sparks at First Site (have never read his stuff), scarf I am working on, and a few good magazines, Women’s Health and Running World.

What are some things you like to have with you on a road trip?

Alright it’s 10pm and I still HAVEN’T packed, hubby tells me it’s in the 30’s in TN, so I NEED to pack heavy. I don’t know what I am going to bring as far as running clothing because I HAVE NO WARM running gear! I will have to just layer it up. Have to get to bed at a somewhat decent hour I have spinning and weights in the morning. Good night Ya’ll, O’ no hear comes the South out in me…lol….
