I can’t believe that yesterday I finished my third round of the Crazy Sexy Vegan Diet along with so many of my awesome NY’s Shredders! It was a bit easier this time knowing what I was getting into, but by far the coffee was the HARDEST part for me now that I have 16 month year old to chase around. Â So of course I will be bringing back coffee ASAP, not as much as I was drinking but a cup in the morning for sure.
If you are unfamiliar with the Crazy Sexy Vegan Diet, you can read my post about it here.  For 21 days I said no to…. Coffee, Alcohol, Meat, Fish , Sugar, Gluten, and Dairy. I said yes to so many amazing vegetables, fruits, GF grains, legumes, and other yummy whole foods. Breakfast’s were usually green monsters or a green juice or gluten free oats with almond butter. Lunch was a combination of kale salads, lentils, soups, hummus, chipotle veggie bowls, budah bowls and smoothies. Snacks I enjoyed included: brown rice cakes with almond butter, hummus and veggies, apples and almonds, popcorn with nutritional yeast and Larabars. Dinners were more yummy sexy salads, roasted veggies with curry sauce, quinoa pasta, sweet potatoes and veggies chili and all kinds of fun Vegan and Gluten-Free recipes!
Weekly food prep is a must for success! I always made a few salads, sweet potatoes in the crock pot, almonds in snack bags and stocked the fridge with color.
I managed to get through my brothers wedding on CSD as well as a 4 day trip away in a hotel! I am telling you the food was not the hard part, the COFFEE was always!
My  favorite new recipes that I tried this go around were:

I didn’t eat out too many times, but when I did I asked for the gluten and dairy free options (because folks did you know sometimes restaurants put milk in their rice?) and went from there. I also always carried around an avocado in my purse in case I got in a pinch. I love that RJ loves smoothies and juices as much as I do, because they were her daily treat! I lost the pounds (6) from over the holidays (nothing major) but mostly I felt lighter from the inside out. My skin cleared up and I had a lot of fun doing it this round! I also lowered the acidity in my body and it’s more balanced out!
I think every three to four months this cleanse is a great jump start to your system. I don’t ever do it to lose weight, but to feel refreshed and renewed from maybe a couple months that got away from me. Could I eat like this all the time? Sure, but the foodie in me is to adventurous, I would rather stick to a balanced whole food diet 80% of the time and treats the other 20%. I will slowy bring back meat this week, just a few days and then maybe some eggs next week. I still want to stick to eating lots of fruits and veggies and even bring back MEATLESS MONDAY’S to our house! ]]>I started off Super Bowl Sunday with a little 10k with the running buddies.
When I got home I enjoyed my new favorite juice recipe:
POWER BEET JUICE:
1 cucumber
1 beet
handful of spinach
4 stalks of celery
2 carrots
1 green apple
1 lemon
1 inch of ginger
Throw it all into a juicer and enjoy. I love how the beet adds a bit of sweetness.
I had to work on Sunday for just a bit, so I got dressed and headed up the mountain.
Came back down the mountain and got ready for a casual and comfy McCormick VEGAN super bowl party!!
This festive table was waiting for friends to bring more goodies (ones that I probably would not enjoy), they all did great!
I did make some pretty amazing Vegan recipes that everyone loved! It honestly wasnâ€
t that difficult to make any of them. This SUPER BOWL I was determined to stick to CLEAN EATING!
I started with this awesome Vegan Party Chex Mix:
16 ounces Wheat Chex
12 ounces Rice Chex
10 ounces Cheerios
10 ounces pretzels (sticks are best or the small ones)
10 ounces (or a little more!) mixed nuts
10 ounces peanuts
12 ounces vegan butter (I like Earth Balance)
1/4 cup Amino Acids or vegan Worcestershire sauce
1 tablespoon garlic salt
1 tablespoon onion salt
1 tablespoon celery salt
Melt vegan butter in small sauce pan; stir in Amino Acids or vegan Worchestershire sauce and seasoning salts. Let stand. Meanwhile in two roasting pans, divide the nuts, cereals and pretzels. Divide vegan butter mixture between both pans, pouring over cereal and mixing lightly. Bake uncovered at 225 degrees for 2 hours stirring gently every 20 minutes. Spread out on brown paper or paper towel-lined baking sheets to cool. Store in air tight container. Will keep for a long time.

This year was pretty chill with just a few friends from work and some family. I honestly love having parties at our house and I wish I could invite you all! I really just love the Super Bowl so I get to hang out with friends. My goal of sticking to clean eats this Super Bowl Party was a success!!!!!!
This weekend also concluded week 4 of NROL! I will be doing a full review of PHASE 1 in just two short weeks. I canâ€

Breakfast:
This is not much different than normal. Vegan Shakeology with 1 cup of water, 1/2 cup hemp milk, 1 tbsp almond butter, and a frozen banana.
Weekends I enjoyed things like…Vegan Gluten Free Pancakes!
Big bowls of oats and fruit when I would go out with GREEN TEA!

I am actually reading a lot about the eating plan in the New Rules of lifting for Women book and I am going to try some of her recipes soon! I am really liking the weight plan so far. I am not missing the hardcore cardio, but I do miss a good sweat! I do sweat doing weights, itâ€
s just a lot different.
The cleanse was a lot of fun, because I did it with 6 other ladies and I loved the accountability and motivation! I also loved getting back in the kitchen. My body feels so good and I am ready for another (God willing) happy, healthy 2013!!!

s been an interesting and pretty exhausting week. From my boss leaving at work, started training 4 new clients, first week of the NROL, started the New Years Shred (which everyone is rocking) and fighting a cold (I won thank goodness)! But I have had so much energy and I am ready for the WEEKEND!!!!!!

Made it through 5 days of the Crazy Sexy Vegan Challenge! The detox from coffee was rough, but I am pretty sure I am through the worst of it. Not gonna lie, it was harder this time to quit coffee because I was drinking it about 3 times a day! When I get off the challenge I will stick to once or twice a week!
This week my highlighted recipe was super simple and I had everything in my pantry! I was so excited to use my new Dutch Oven!
Kale, Sweet Potato, and Bean Soup

Ingredients:
Directions:
Add 2 tbsp olive oil to skillet along with diced potatoes and cook for about 7-8 minutes until tender. Add in frozen or fresh peas and let cook for about 2 minutes. Then add cooked black eye peas (fresh or canned), cooked quinoa, handful of kale and let simmer for about 2-3 minutes until kale has wilted a little. Remove from heat and top with fresh salsa for a bit of a kick

This made about 3-4 servings and would be great as a side or a main dish!

t believe that I am on day 18 of the Crazy SEXY Challenge! I only have 3 more days to go. I have been staying so strong. I havenâ€
t had as many green juices in the afternoon as I would have liked, but other then that things are going so well. I am not gonna lie, I am ready for that small glass of wine as well as some fish! I am not sure what I am going to do on Sunday, but I know that I need to ease in to getting back to my normal diet.
Here are just a of my CRAZY SEXY EATS from the past couple days.
1. Some pretty incredible Salads!

Pizza is from a local favorite pizza joint. Gluten Free + Vegan!
I adapted this recipe a little bit from the one I found in Kris Carrâ€
s Crazy Sexy Diet. They are so easy, totally vegan, and make the perfect meal!!
Ingredients (serves 3-4)
Place your nori sheet shiny side down. Spread a thin layer of rice evenly over the nori. Mix the juice from 1/2 the lemon into the tahini to make a thin sauce. Spread a very thin layer of the tahini sauce on the rice. Cut the other 1/2 of the lemon into a few slices.
DELISH!!!
3. Green Smoothies from Jamba Juice and Home-made Green Smoothies.
I order the Green and Apple Smoothie with a shot of Wheat GRASS! Love the energy I get from this smoothie.
4. Lots of Lara Bars and Raw Snacks!
I am feeling really good. Full of energy for my Making the Cut workouts and runs! I am actually kind of surprised that I havenâ€
t felt HUNGRY or sleepy! I may not be a sexy Vegan forever, but I am sure learning a lot.

]]>Recap: Made it through week 2 with only have one OOPS! Ate gluten, felt bad. Went to a Subway event and avoided wheat and meat. Went out with the Hub’s for the first time on the challenge and stayed strong. Chose brown rice, tofu, and steamed veggies. Went to best friends 30th birthday and brought my own veggie burger and enjoyed lots of salad and salsa I made. Enjoying my new love for digestive enzymes and drinking aloe! Can’t wait to eat a burger, end of story

Recap:Â Feeling great! Felt bloated for a couple of days, but the supplements helped! Have stuck to the diet 100%. Love veggies. Eating lots of healthy fats and proteins. Made it through the 4th. No lack of energy. Only really hungry after dinner. NO COFFEE or BOOZE for 7 Days. No STOMACH ACHES!!!
