I have pinned several pumpkin recipes and one of my favorites has been Crockpot Pumpkin Pie and Apple Oats!
Pumpkin Pie Steel Cut Oats in the Crockpot Serves 6-8
s been cooked)Put all ingredients in a oven safe bowl. Place bowl in slow cooker and add water up to half the bowl. Set to cook for 5-6 hours on low. Serve hot with milk or a dollop of Greek yogurt, extra honey or maple syrup and a sprinkle of cinnamon. My favorite is with a scoop of Trader Joeâ€
s pumpkin butter! If you have leftovers, they keep well in the fridge but can also be frozen in small portions to take out when needed for a quick breakfast.

With the weather getting a bit cooler all my workouts have been wonderfully outside this week.
Tuesday I got in an awesome 5 mile run with my running buddy Val!
I also am getting serious about prepping foods and eating as clean as possible! My new favorite snack right now is mango + melon and one hard boiled egg!

On Wednesday I couldn’t teach kickboxing so I headed out on bike ride with Amy and after we did Peanutbutter Fingers Wedding Arm Workout! I also sported my new Living Proof Fit Gear and it was so comfy and I love the saying 

I am also really falling in love with polka dots and pearls for some reason. I think being a girl is just too much fun!
I can hardly believe it myself, but I got up at 4:30am on Thursday for a 5 mile run wit SUSIE!!!! Making my weekly running total at 25 miles this week
I am going to try and shoot to do this every Thursday morning, it felt great and I was done before the sun even came up!
Best part of fall HOT OATS with LoveGrown Granola!!!! Oh and be on the look at they have a new product coming out and I will be dropping HINTS like crazy!!!
Although it may only be in the 80’s right now, I am busting out my scarves and boots! I always feel like I have so many more outfit options in the Fall and Winter!
To keep me fueled and lean I have become obsessed with giant sexy grilled chicken salads and sweet potatoes!! I think I had this for lunch everyday this week 
To finish off my adventurous week I crushed 25 miles on my bike Friday morning and enjoyed EVERY MINUTE of it!
Because I am such a party animal I stayed up with Amy last night past midnight working on a present for a friends wedding this weekend. I may or may not go into business with these wreaths

After a full week I decided to take day off from workouts, listening to my body is the best workout ever! I slept in this morning and woke up to a french press full of pumpkin spice goodness!!

]]>Have I told you all how happy I am to be back to my normal self? I take my health for granted way too much. It feels good to be back to not blowing my nose every 5 seconds or having to cough every time I open my mouth to speak!
This week I have been doing great at my Back-to-Clean Eating Challenge. I have been sticking to 5-6 meals a day, eating lots of veggies, protein, and complex carbs. I have felt so DE-BLOATED from the holidays and have had so much more energy!! I am kind of excited about date night on Saturday though, I am craving some fro-yo!!
Here is a look at some of my favorite meals.
BREAKFAST
Kashi Go Lean with almond milk and an egg white puff. Just put 4 egg whites in a microwave safe bowl and microwave for 2 minutes, yum!
Peanut Butter Banana Protein Oats: 1/2 cup oats, 1/2 cup water, 1 tbsp PB, 1 scoop of protein powder, and 1/2 banana.
LUNCH
Brussels sprouts, carrots, trout and a small avocado.
Leftovers!!! Salmon, brown rice, veggies and a 1/2 an avocado.
SNACKS
I have been enjoying some pure protein bars, Greek yogurt, almonds and I really like these protein shakes in case you forget something.
DINNER
Hubby’s famous vinegar chicken with brown rice and Brussels sprouts.
Cajun Tofu. I just seasoned with a little paprika and chili powder and backed for 30 minutes at 350 degrees. Along with steamed spinach and brown rice.
Late Night snacks have included protein shakes, cottage cheese and cinnamon, celery, almond butter and Greek yogurt and berries.
I have done 3 workouts from my 12 week challenge and just one day of Kickboxing. I am really sticking to the new cardio for 30 days, because like I said I really want to see results. So far each day at the gym has been pretty short about 30-40 minutes and the workouts have been doable. I think I need to up the weight a little. For the first time ever I actually did the bar squat!! I never thought I would use this machine, I was pretty darn proud of myself.
Tomorrow, I am going to go for a light run with my friend Val and do Day 4. Time to cook dinner and then relax for the evening!!

You are all so sweet. I have had some tummy issues for years and I am finally figuring out if I am allergic to something or if I have something worse. The results came back 100% healthy tummy and other side
So that’s good but now we have to figure out what else it could be.
After fasting for 40 hours, I couldn’t wait to eat this lovely bowl of pumpkin oats!!
As well as drink some pumpkin spice coffee! I can’t believe I survived 2 days with zero caffeine! It’s a Christmas miracle!

I had a blast at Foodbuzz Festival, but I was happy to come back to work and play with all of these crazies!
After all the fun at work Susie and I hit a BEAUTIFUL 5 mile run! Were running a half marathon on Sunday so thought we should Pile On the Miles 
It was such a great run. After resting for three days it was exactly what my body needed!!

MORNING EATS
I have today off, so I slept in till 8am and decided to start the week off with a wonderful bowl of oats. Hubby went off to his first day on the new job, I made him a lunch and sent him on his way. THE WHOLE HOUSE TO MYSELF!!!
I wanted to make something a little more fun but Oats sounded so good.
I made them over the stove KERF style. Threw in half banana while cooking, some pumpkin spice, a little brown sugar, and some flax seed. Then topped with 1/4 of an Honest Foodâ€
s Chocolate Peanut Butter Squares, my favorite( I smashed up in a zip lock bag), check out OhSheGlows to win some for yourself!!! I also threw in some chopped pecans and sprinkled with coconut in honor of the cloudy day were having.
Of course I had a spoonful of AB:)
I sliced up a fresh orange, for some reason these oranges are so messy to peel. Anyone else ever have that problem?

t believe the inauguration is right around the corner!!! Yesterday I did my first 30 day Shred Workout with Jillian on level one, and it was great!!! SEXY SIX PACK here I come:) I need to use more weights so I am glad she incorporates them. I am a huge believer in mixing weights with cardio, I love getting my heart rate up and down, thatâ€
s why I love kickboxing!!! Too bad my Garmin couldn’t tell me what my HR was, itâ€
s officially broken. I am on the hunt to get a new one( which means I have to pull from my bike fund) !!!! I am not going to get the new one, I like my Garmin 305.
MAKE A DIFFERENCE MONDAY: MLK DAY
I thought it would be appropriate to share a little bit about Martin Luther King, Jr. (January 15, 1929 – April 4, 1968), someone who has made a difference for our world today. Who was this man and why do we have a day an honor of him? When I lived in the south this Holiday felt more celebrated more real, then it does here in the west. King was assassinated on April 4, 1968, in Memphis, Tennessee for his beliefs. He was a preacher and an advocate for truth and justice.
King was a peace maker, a man who saw no color, but only wanting people living together in harmony. He spoke volumes about change and unity. He wanted people to truly give up all their hate for one another because of race and differences. Segregation is still so prevalent all over the world, we need to remember Kingâ€
s passion and do our part in being reformers. They are many peace makers in our history, but I believe that we can all be peacemakers in our world today. What is your dream?

s Friday, the day we have waited for all week! Is it just me or did this week seem like it when on forever and ever?
RECAP OF LAST NIGHT
We met up with our Thursday night group and went to the Farmers Market here in town, itâ€
s at night which I know is unique to our little town. We had so much fun, watched the carolers, shopped for breads, shopped for produce, and had some hot chocolate afterward. I didnâ€
t get too much there, just some carrots (for the pot roast I am making today), a mini butternut squash and some sourdough bread (for the hubby of course).

t know how I got up to EARLY, but I did! I thought I would try an old highschool cross country route this morning, itâ€
s funny too me that this 8 mile course was our LONG run. I was at the top of the hill so I did the course backward, BIG MISTAKE! Thank GOD I had my heed and gels, otherwise I would have died out there! The first 4 miles were all DOWN hill, and you know what that means that on the way back I had to run up hill. I thought it was just a GRADUALE down hill but I was wrong, it was STEEP. Man I stopped looking at my pace, not to get discouraged and trudged up those hills. The last half mile was down hill so I sprinted in and finished hard. I donâ€
t think I have breathed that hard on a run in a LONG time.
BEST BOWL OF OATS
After that killer run, I made the best bowl of pumpkin oats!!!
The combo:
½ c of oats
½ c soy milk
½ c H2O
¼ c of pumpkin
½ banana
Pinch of pumpkin spice
1/8 banana PROBAR
Handful of flax seed
Handful of Almonds
2 tablespoons mini chocolate chips
Sprinkle of brown sugar

STARTING SCHOOL- THE JOURNEY TO BECOMING AN RD
Well I did it I registered for my first college class since 2006! I am on a journey to become a Registered Dietician ( and RD). I am so excited about starting in January!!! I will be taking 3 prerequisites in the next 6 months, before I start my Masters in Dietics. So these next months are going to be a true test to see if I am ready to be back at school. I am taking one class at a time, which I NEVER did in college, I always had 20 units and worked 2 jobs! I know that Anatomy and Physiology will be tough, but itâ€
s only 2 days a week, so I think and hope I can handle it. The class is Friday morning 8am-11am and Saturday mornings 8am-11am (no more sleeping in on weekends). I canâ€
t wait to start; I know this is what I need to be doing to get to where I want to be!

CHRISTMAS CARDS
Well hubby did a great job of designing Christmas Cards! I am so glad we went with Bosco on them, it is so cute. I am going to finish stuffing them and putting them in the mail tomorrow (only 3 days later then I wanted to get them out).

DINNER AND A SURPRISE!
When I got home tonight I made a yummy whole wheat butternut squash qusedilla. I mixed butternut squash puree with s little Colby cheese, black beans, and spread on top of a quesadilla with a little sour cream of course. Then on the side I had a cranberry feta salad. It was the perfect amount of carbs, protein and fats!!!


Then I saw that I got a package from the lovely folks at LARABAR (thankyou!), it included a ton of LARABARS of course and a cute T-shirt ( I be wearing this to work tomorrow!). Along with my new Runners World Magazine I canâ€
t wait to read!


WRAP UP
Well I did my AKB tonight and I was pretty exhausted, I am taking tomorrow off and doing some yoga in the AM. I KNOW my body needs it! I am teaching AKB in the evening so I need to be refreshed. RANDOM THOUGHT: I want to do a half marathon in January I have decided, I think it will be a great way to start the NEW YEAR, and kick off my Boston training, anyone know of any good ones close to SO CAL?
