Clean Eating for Life: 30 Day Challenge

Happy Monday friends!

Hope you all had a wonderful weekend and I am sure a lot of you like me are still enjoying one more day of relaxation!

Yesterday, I finally went to the Doctor. I feel OK, but I can’t kick the cough and sinus cold. Well looks like I have a sinus infection so the doc hooked me up with a Z Pack and some Codine!! Already I am feeling almost back to my normal self.

I was actually really productive yesterday (for the first time in a week).

  • I took down the Christmas decorations, sad to see them go but happy to have more space!
  • I got January organized, meals, workouts, social plans, etc…
  • I played on Pinterest for a good while and organized my boards. (not sure if this counts)

…and I finally enjoyed my Christmas presents! Matt got me this wonderful new photography tool, I was so surprised! It’s a light box. I have been wanting to build one of these for so long now, but just never got around to it. This one is way better than anything I could have made. It is super easy to set up comes with 4 different color backgrounds, lights and folds up really nice for easy storage. It also comes with a little camera stand that would be great for a powershot camera.

I can’t believe how clear and bright these came out and I didn’t even edit them! I can’t wait to play with these photos in Photoshop and better yet you guys are going to see a lot more beautiful photos of food!

Last night’s dinner was a simple salmon I broiled and just added pepper, garlic powder, sea salt and a little lemon juice. On top of a bed of steamed veggies and brown rice. This meal was so wonderful, I miss eating so CLEAN!

I know I eat really clean almost 80% of the time, but with the holidays I need a little boost to kick off the year!! Anyone else need a kick? So I have created a little 30 Day Challenge for myself. The challenge is simple….MORE: FRESH VEGGIES + MORE PROTEIN + WHOLE GRAINS!

OK so what does that mean?

Getting back to how I NORMALLY EAT!!

  • 6 small meals a day filled
  • eat at least 3 cups of veggies a day
  • stick to one treat or alcohol beverage a week
  • at least 20 grams of protein per meal (trying to build lean muscle)
  • no calorie counting!!!

I am starting Jamie Eason’s 12 week challenge today! I am excited about this plan, because it gets me back to lifting weights, which my body needs! I have less then 5 weeks till we set sail to the Bahamas and I want to feel amazing in my new swim suits.

Her plan is written out so specific and I can look up all the workouts on my phone while I am at the gym. They take about an hour and the first Phase is 4 days a week. The hardest thing about the first Phase for me is the no cardio. I wish I could stick to it to the tee, but I have to teach Kickboxing once a week and run at least one day. So other then that I will try and follow it as closely as I can. My biggest challenge will be adding in more protein, I so need to purchase Jamie’s combo stack, that includes a good protein powder, multivitamin, essential amino acids and more, just not 100% sure yet… I this will be awesome! I can’t weight to get back to the gym, today starts DAY 1 of Phase one, I will be keeping you all updated weekly.

I am already excited about getting back on track with eating clean. This morning I had an egg white scramble with spinach, tomatoes and zucchini. With a piece of Ezekiel bread.
