Apple Chicken Curry
1 medium yellow onion
curry powder
4 boneless, skinless chicken breast halves
small red potatoes
1 large tart cooking apple
golden raisins
sour cream or Greek yogurt
fresh cilantro

Rotini and Cheese
2 bacon slices
1 tablespoon butter
1 tablespoon olive oil
1 cup finely chopped onion
2 garlic cloves, minced
1 1/2 teaspoons all-purpose flour
2 teaspoons Dijon mustard
1 cup 1% low-fat milk
3/4 cup (3 ounces) shredded sharp cheddar cheese
Package of rotini
3/4 cup frozen green peas

Crock Pot Beef Bourguignon
(3 lb) boneless beef top sirloin steaks, 1/2 inch thick, trimmed, cut into 1/2 inch pieces
4 slices bacon, diced
2 medium carrots, diced
8 small red potatoes, cut into quarters
8 -10 mushrooms, sliced
20 -24 white pearl onions
3 garlic cloves, minced
1 bay leaf
1 teaspoon dried marjoram, crushed
1/2 teaspoon dried thyme leaves, crushed
2 1/2 cups Burgundy wine or 2 1/2 cups beef broth

Chicken Fingers with Spicy Dipping Sauce
1/4 cup canola mayonnaise
2 teaspoons Sriracha (hot chile sauce, such as Huy Fong)

Last night Hubby and I worked on getting up my new banner for the blog. It’s been a long time coming 🙂 I loved my old one, but needed  a change!

The new one is so beautiful, I love the colors, the pictures and the layout.  The picture on the banner makes me smile every time I see it! It was about time Hubby and Mr.Bosco get on there!! The new one also has some fun new tabs that I am still working on, home & garden, favorites, fitness, and my services. There a couple more fun things to come this week as well 🙂 If you read in Google Reader click over to www.bobbimccormick to see the change!

Wish I could take credit for the design, but I have to give it up to my sweet Hubby Matt for doing such a great job! He is so talented!!  The wonderful Matt McCormick spent countless hours perfecting the above banner until it was a perfect representation of my blog. I owe a huge debt of gratitude towards him for working so hard. I think I should make him cookies 🙂

THE GREAT THANKSGIVING CHALLENGE UPDATE: So far we have spent $40.45! It helped that I was away this weekend and all food was payed for. I am printing out this list and heading to the store tomorrow (after my fast). How are you all doing with the challenge???

Can you believe it’s the last day of October! I am excited about November because we have the POTM Challenge, the Great Thanksgiving Challenge and the Holiday Bootie Buster Challenge!!! Loving it 🙂
I hope you all had a fantastic weekend and are getting pumped to start a new one! I am going to start posting a meal plan everyMonday! I have a lot of emails and comments about how to save money and eat healthy, so I thought a meal plan/grocery list for the week would be helpful. I don’t post what I eat for dinner every night so I thought this would be a fun alternative.
Every Sunday we sit down to plan out the weeks meals based on what our week looks like, what’s on sale, and what’s in season. This way hopefully we only have to shop once a week and we can eat more meals at home instead of out. We do have one night a week to go out for date night and that’s been wonderful!!!
Now that we are going to be doing the Great Thanksgiving Challenge we will be challenged with making our food stretch and will be taking way fewer trips to the grocery store.(well that’s the hope). I hope these meal plans help your family stay within a budget and give you some new ideas for dinners!
MONDAY:
sweet potato and black bean enchiladas {recipe} I use Greek yogurt instead of sour cream and whole wheat tortillas instead of flour.
cilantro-lime rice {recipe}

TUESDAY:
whole wheat spaghetti
marina sauce (I love Newman’s Own)
salad
salad recipe:
mixed green salad mix
2 tbs olive oil
2 tbs salad vinegar
green olives
garlic
salt, to taste
fresh ground pepper, to taste
mix it all up.
WEDNESDAY:
Greek turkey
meatballs {recipe}
whole wheat tortillas
veggies/hummus
THURSDAY:

autumn chopped salad with grilled chicken {recipe}

3 can diced green chilies
1 medium red onion
Bunch of cilantro
long grain white rice
1 lime
8 oz. Colby jack cheese, shredded
10 whole wheat tortillas
1 small tub Greek yogurt
1 package whole wheat spaghetti
marina sauce
( I love Newman’s Own)
mixed green salad mix
2 Garlic Cloves
Green Olives
Hummus
Veggies (for Greek night)
1 pound ground all white meat turkey
1 box frozen, chopped spinach
4 ounces feta cheese, crumbled
eggs
romaine lettuce
2 medium pears
1 cup dried cranberries
1 cup chopped pecans
8 slices thick-cut bacon
4 to 6 oz. feta cheese, crumbled
Poppy seed Salad Dressing (I like T. Marzetti)
Balsamic Vinaigrette (I like Newman’s Own Light Balsamic Vinaigrette)
1-2 lbs of chicken
1 (15oz) can diced tomatoes
1 medium onion
2 (10oz) can enchilada sauce
1 (4oz) can chopped green chili peppers
2 garlic cloves (minced)
1 cup of chopped celery (optional)
1 (14 1/2 oz) can chicken broth
