100 Calorie Margarita + Salsa Chicken

We will get to the margaritas in just a minute, but first let me show you a project I worked on this afternoon. I just hate throwing away Christmas cards, because I love all the fun pictures on them! So this year I decided to cut out the pictures and build a collage on our fridge of all of our friends and family 🙂

Ok on to dinner. After KB and Yoga I was starved!! Good thing we had dinner waiting for us in the CP. This is the easiest thing you will EVER make in your crock-pot, promise!

Salsa Shredded Chicken

Ingredients:

  • 2 boneless skinless chicken breast
  • 1/2 can or jar of salsa

How to prepare:

Put chicken and salsa in CP and let it cook for 7-8 hours on low. DONE! See told you easy!

At KB today my friend Pam gave me these LARGE avocados. They went perfect with dinner.

I made an open faced burrito.

One WW tortilla layered with shredded chicken, sliced peppers, black beans, corn, light cheese, 1/4 avocado and a dollop of Fage.

First time Hubby and I have sat to dinner at our table in almost a month! How did we get so busy?!  It feels good to be back 🙂

Dinner was served with a Skinny Girl Margarita! I got this while I was in Memphis and I couldn’t wait to try it out. With only 100 calories for a full 4oz, I was kind of skeptical.

We don’t really drink a whole lot of Margaritas around here, because they are so high in sugar and calories, but now Taco Tuesdays will never be the same 🙂

We only had 4 oz, between the both of us. Into the Vita-Mix I added in 4 oz of margarita mix, a cup of ice, 1/2 cup of orange sherbet, and a couple slices of pineapple. Hubby loved it and he doesn’t even like margaritas 😉

Now I am off to enjoy a good book or some more Friends Season 5!!!

  1. Quicky, easy and calorie light margarita (the only way I will drink them). Blanco tequilla, cointreau, fresh squeezed lime juice! You can add a little agave nectar if you’d like. You control how sweet it is and what goes into it! 🙂
