A Little Lime Goes a Long Way!

I felt like I got my life back in order today.

After work I FINALLY did a full grocery shopping trip, it’s been way too long. I am not sure if it’s the heat or what, but we have been eating OUT way too much! This week is going to be a lot different. We have a full fridge and pantry, so no excuses not to enjoy our meals at home!! Except Taco Tuesday ๐Ÿ˜‰

As soon as I got back from the market, I started on dinner.  I picked up a grill pack from Fresh and Easy on sale for only $4.75!

I also finally dug into the Peter Pan squash we have been picking from the garden, it’s rowing like crazy!

I chopped it up in tow quarter size pieces…

then added a little EVOO, salt and pepper. I wrapped it up in foil to throw on the grill.

Can we say A LOT of chicken! I figured we would grill it all up that way we can enjoy it all week.

While cooking I enjoyed a very delicious mocktail ๐Ÿ™‚ I think the Tangerine Lime Hansen’s is my favorite! I was just glad to see it on sale today, because I normally don’t buy it.

The squash came out beautifully. It tasted a lot lot like butternut squash, but not as sweet.

The chicken was pretty good too.I love the taste of the lime and cilantro I added in. We are not huge fans of chicken with skin (we took it off no fatty skin for us) and chicken on the bone, but for less then $5 we enjoyed every bite!

I also grilled up some fresh zucchini from the garden and also made some quinoa and brown rice from a super easy package from Fresh and Easy (no worries it was all real food).

Working all weekend always throws me off a bit, but all I can say is Monday and Tuesday will be well enjoyed off ๐Ÿ™‚

And guess what? HIM training starts tomorrow!!!

First thing on the agenda an early swim.
