Crockpot Sweet Potato Dump Chili

Yesterday was the first day of the Great Thanksgiving Challenge

So far we have spent a woppin $10.45. I created a spreadsheet to keep track of all of our groceries, you can check it out here: THE GREAT THANKSGIVING CHALLENGE

Yesterday I made the best Crockpot Chili to date!! I was determined to use some key pantry staples and not buy anything from the store. I basically brought out all the beans and veggies I had on hand and made a wonderful dinner.

Crockpot Sweet Potato Dump Chili

  • 1 zucchini chopped
  • 1 large sweet potato peeled and chopped
  • 1 1/2 lbs of ground turkey browned a little
  • 1 can of kidney beans drained
  • 1 can of garbanzo beans drained
  • 1 can of white beans drained
  • 1 can of chopped tomatoes not drained
  • 1 can of tomato paste
  • 8-10 oz of vegetable broth
  • 1/4 can of jalapeño chilies
  • a dash of chili powder

Place all the ingredients in a large crockpot and cook low for 8 hours.

Top with a little cornbread 🙂

MTC Challenge Update: I only have two more days of the MTC challenge left!!! I can’t believe it’s already been 30 days 🙂 I have loved every minute of this book and I can’t wait to do a full recap for you all! I have noticed such a big difference in my abs and arms!

Time to finish packing!!!

Tomorrow I leave for San Francisco!!!

Oh and Bosco says HI!

Question: What are some of the staples you have in your pantry?
