Hello friends and HAPPY MONDAY!
Did you miss me? I missed you all, but it was so great being completely disconnected for FIVE whole days!!! Don’t worry I have plenty of fun recaps to share with you all about our marvelous vacation! So much fun and now back to reality 🙂
Although I absolutely love being on vacation there is just no place like home.
and I missed these two!!
First things first when we got home we headed to Fresh and Easy to stalk up on our EMPTY fridge!
Thank goodness, because these Sunday Pumpkin Protein Pancakes would have not been possible.

Sunday Morning Pumpkin Protein Pancakes
Ingredients:
1/2 cup oat flour 1/3 cup oats
1/3 cup egg whites
a pinch of cinnamon and nutmeg
2 tbsp pumpkin puree
Topping:
1/2 banana
handful of bueberries
and 4 straberries sliced
1 tbsp flax seed
1 stevia packet or 1 tsp of honey
Directions:
Mix all ingredients together. Heat up griddle to medium high heat and spray with canola oil. Pour mixture onto griddle and watch for bubbles on the ends and then flip. Mix all toppings ingredients together and pour on pancake and enjoy!

Sunday I prepped and cleaned like crazy! I have a busy week ahead and I wanted a plan of attack!! I am excited to get back to the livefit trainer, I need it after that CRUISE!
Here is the meal plan for the week:
Breakfasts:
Banana Protein Shakes-Almond milk, banana, ice, flax seed, and protein powder.
Oatmeal + Egg Whites
Kashi Go LEan + Egg Whites
Snacks:
Chobani Yogurt
Cottage Cheese with blueberries
Carrots + Almond Butter
Apple and String Cheese
Homemade Protein Bars (recipe to come Friday)
Lunches:
Fresh and Easy (they were on Sale) Chicken Salad=Mixed Greens, veggies, avocado and chicken
Fresh and Easy Shrimp Salad (they were on Sale) = Mixed Greens, veggies, avocado and shrimp
Dinners:
Monday: Rosemary Turkey Cutlets
Tuesday: Crock Pot Chicken Caccitori…going to experiment with this one.
Wednesday: Tofu with Green Peas and Peanut Sauce
Thursday: 3 Bean Turkey Chili
Friday: CrockPot Thai Chicken Taco’s – from January/February 2012 issue of Clean Eating Magazine
Saturday: Date Night
Sunday: TBD

When this occurs your computer will slow and be unresponsive and will eventually
crash. Pay attention to that window, it’s there for a reason. I have used Vista on a PC and I can tell you from experience that at 1GB of RAM Vista, crawls at a snails pace.
