Simple Dinners and Girls Day

I can hardly believe I am on day 15 of the Crazy Sexy Diet!! Only 6 more days!!! I am actually doing really great! I haven’t been as strict as last time (a few tastes here and there and a few dinners out that I wasn’t 100% what was in the food!)  but for the most part I have been good! I just miss coffee, wine, and eggs! I think I am gonna stick to the no meat for a while and no dairy (except Chobani’s).

Sunday night I made my favorite dish! Baked Tofu, Roasted Brussel Sprouts, and Sweet Potatoes with a little Coconut Butter! This is all so simple to make, roast the brussel sprouts at 350 with a drizzle of EVOO and black pepper for 15 minutes (turn half way through), press tofu for about an hour then marinate with a little tamari, black pepper, evoo, and sea salt, put in the oven at 350 for 10 minutes flip over and bake for 30 more minutes. For the sweet potato, in the oven for 45 minutes at 400 degrees until soft.

Have you guys tried this?!!!! I love coconut oil, but I have never had coconut butter! I got some samples of the Artisana Coconut Butter at Whole Foods this weekend!

This weekend my good friend/gym buddy and I had a day of fun together! We started with a workout from the NROL and breakfast at Coffee Bean and Tea leaf, did you know they have an oatmeal bar???? Loving NROL so far, it’s a lot more lifting then cardio then I am used to.

Then we headed out to the OC to hit up the Irvine Spectrum to do a little shopping!!

For lunch, we finally visited the Veggie Grill, an all VEGAN café! I was in heaven. I ordered the chili and Fiesta Salad (both gluten free) as well as splitting some sweet potato fries!!!

The real reason we drove a bit to this mall was because the have a Lululemon!!! I had some Christmas money and I have been holding off for a while now (2 years) to buy a pair of Wunder Unders!! I also tried on my favorite top that I REALLY want as well, but I guess I will have to wait another 2 years Winking smile

In the winter, I practically live in my leggings, so these Wunder Unders are perfect to wear to work and then straight to the gym!

I also got a few clearance items from Old Navy as well, this shirt was only $10 and it’s so comfy!

  4. If you like the Wunder Unders you should try the Zella brand. They are at Nordstrom. These leggins are reversible. One side keeps you warm and the other keeps you cool. They area only $52 as apposed to $80 from LL. If you don’t have a Nordstrom near you they are online.

    Also, they probably have coconut butter at Clark’s. I know they have coconut manna and coconut flour and coconut flakes. They have been lifesavers for me!

    Oh. And I’m totally jealous of your bread. Every. Day. haha
