I feel like I have been running around with my head cut off lately!

Yes, I know I am always so so busy but with my new job, planning my 10 year reunion, and getting ready for my 8th marathon in Chicago, my mind just won’t slow down!!

Tonight I set aside some time to really get my prioritize straight (good thing Hubby’s doing construction on the living room). It’s crazy how much planning goes on for a class reunion. Who knew when I graduated as senior class president I would actually have to plan this thing!! Because this reunion is sorta consuming my life right now, I thought I would share with you all some of the fun stuff we will be doing.

I am kind of treating this whole event like a wedding..kind of.

We have some fun ideas for decorations and a lot of FUN prizes thanks to some local businesses!! I can’t believe it is less then a month away!!!

I am trying to eat as CLEAN as possible before the marathon. I want to be well hydrated and light as a feather 😉

I went back to an old classic, BBQ Tofu and sweet potato fries 🙂

This is super easy to make.

BBQ TOFU & SP FRIES

Ingredients:

  • 1 package of firm tofu
  • Annie’s BBQ Sauce
  • Hot Pepper Flakes
  • 1 Sweet Potato
  • 1 tbsp cinnamon
  • 1 tbsp Paprika
  • EVOO

Directions:

Preheat oven to 400 degrees. Chop up tofu into nice even squares. Put tofu under a paper towel and then place a heavy dish on top to get rid of any extra water for about 15 minutes. Put BBQ sauce, honey, and red peppers in a mixing bowl and mix in tofu.

Chop up sp into french fry slices and throw in a mixing bowl with evoo, paprika, and cinnamon. Spray baking pan with non-stick cooking spray and throw on both tofu and potato slices. Bake for 20 minutes and ENJOY!

I added in some steamed spinach too!
