As you all know this week has been out of the ordinary to say the least. So when Friday hit I was ready for a night out.

Friday

My friend Susie and I had been planning to make dinner and to go out and see EAT PRAY LOVE this past Friday night for weeks now 🙂 It was just what I needed!!!! 

We have been eying these Veggie Enchiladas that Gina had made on her blog.

Both Susie and I love Enchiladas, but the regular ones are not very healthy.

MMMMM! We topped ours with Goat Cheese and made it more like a lasagna.

We enjoyed our meal with a glass of Bogle Chardonnay. I normally am not a Chard fan, but this was was really good.

Ok so if you can handle hot, then these are for YOU! Susie and I were dying from the chipotle chilies. I should have learned my lesson from the last time I used Chipotle Chilies!!! Next time we are going to make them without the chilies, they would taste a lot better!

Then we were off to say Eat Pray Love. I don’t want to give you all too much information, but I enjoyed the book a lot more. I almost wish I would have read the book after because the movie was nothing compared to how good the book was. But it did make me want to have a love affair with a bowl of spaghetti and visit Bali one day 😉

After the movie we met up with our friend Jackie at the cutest little wine bar in town called, Time in a Bottle.

It was a really fun and relaxing evening.

Saturday

Then on Saturday I got my butt kicked by Michael at an hour and half boot camp class!!! I am not sure I have ever sweated that much. When I was done getting beat up I had a high school reunion meeting with some friends and look who was there?? Baby Evelyn 🙂

As if the day hadn’t been busy enough, Hubby and I went to a work Banquet to celebrate the 9 weeks of Summer Camp!

Sunday

This morning Susie and I met up at 6am for a 16 mile RUN!!!! It was AMAZING!

We were so happy to be done 🙂 We really pushed hard and we were lucky it only got up to 72 degrees!

After we had breakfast at Starbucks. I had an iced coffee with soy, banana, and a reduced fat turkey bacon sandwich.

Now it’s on to work my last Sunday of the summer and to head off for camp. Hubby and I are bringing my niece to camp for the week.

I am glad I work at a place where we can get away for a week!!! It will be fun to have a 5 year old with us, it’s kind of like practice 😉

We will be gone until Saturday so I am not sure how much blogging I will get in.

We are sure going to miss our baby :(
