My Spring Into Summer Throw Down is going oh so well!!
It’s been a wonderful two days off. There has been a lot of walking, running, yoga, KB, and kettle bells going on. As well as some much needed girl chat sessions 🙂 The best part about these past two days is that the weather has been perfect! High 70’s and going up!
Last night I made one of the best Beef meals I have ever created.
I was inspired by my "The Best of Clean Eating" cookbook.
Beef &Veggie Orange Stir Fry
Ingredients:
- 12 of whole wheat noodles (I went with the egg noodles)
- olive oil cooking spray
- 1 lb lean flap steak, sliced into strips
- 1/2 cup diced white onion
- 2-3 cups frozen veggie mix (mine contained carrots, peas,broccoli)
- 1 red bell pepper julienne cut
- 3 tbsp low sodium tamari soy sauce
- juice of one orange
- 1 tbsp of orange zest
- 2 garlic cloves minced
- 2 tsp raw organic honey
- 2 tsp whole-wheat flour
Directions:
One: Cook noodles according to package directions. Drain and set aside.
Two: Heat skillet over high heat for one minute and then spray with EVOO. Reduce to medium heat, throw in sliced meat and cook for about 5 minutes until cooked through.
Three: Remove steak from pan and spray again with EVOO. Add onion, veggies, and red pepper and sauté for about 5 minutes.
Four: In a medium bowl whisk together soy sauce, orange zest, honey, and garlic.
Five: Add steak to veggies and pour sauce into the mixture. Sautee steak and veggies over medium heat for about 2 minutes and then add in flour. Mix together for about 2-3 minutes to let sauce thicken.
Six: Put noodles in a bowl and then top with veggie and meat mixture, garnish with a little orange zest.

What great veggie bags- love the vgtanie nod to Victory Gardens of the past!We’re on the same page with flour sacks- am in the process of making sacks for my car camping chuck box, so plates, silverware, French press don’t collide. Thought it’d be a wonderful way to also learn to embroider, which is something that’s been on my to learn list for a few years now I know, embroidered car camping kitchenware is a little over the top, but why not have a good looking set up?
