Bring on the Heat

Got off late tonight and on the way home I got to pick up this little guy after his afternoon at the groomers. I can’t believe his hair cut and shampoo cost more then mine!! We must love this kid 😉

Another thing I got to pick up on the way home was the basket I won at Starbucks!!! This past weekend I tried out their Via Coffee and in returned I was entered into their Via Basket drawing and I won!!!

I received a pound of their Summer Blend, a Starbucks water bottle, water, and a 5 pack of their Via Iced Packs 🙂 The night had already started well and now it was only going to get better because I got to PLAY in the kitchen!!!

Thanks to Fitness online I found this super easy and tasty Chicken recipe.

Chipotle-Glazed Roast Chicken with Sweet Potatoes

I have never used Chipotle Pepper’s in my life! I was a little nervous, but sometimes you got to live a little 🙂

The sweet potatoes were super easy to make. Just peal, chop, toss in EVOO.

Lay out in baking dish and bake.

The glaze made a nice paste to smother the chicken in.

The chicken was baked right on top of the sweet potatoes.

I added some greens to it as well. I bought this bag of collard greens at F&E for practically nothing.

This was my first time ever cooking collard greens, it was a lot like cooking spinach. Just added 1 1/2 cups of water and let simmer.

When I pulled the chicken out of the oven my mouth dropped. OOOO la la!

The chicken was spicy!!! I am glad we gave it a shot, but I think next time I will use a more mild chili.

I took the day off from working out, sometimes life gets in the way! I will be hitting the trails early for a run with the gang and then enjoying my day off. I have so many fun things to get done tomorrow I can’t wait!!
