We love to cook for other people. One day we will do it for a living…one day! This past weekend we had our dear friends Jess and Joe over for dinner, we could have stayed up chatting all night.
I was inspired by Cooking Light and made the most delicious steak dinners!! Can you tell I am in love with this cheese! Best part is a little goes a long way!!
Steak + Gorgonzola Cheese
-Adapted from Cooking Light
Ingredients
- 1 teaspoon pepper
- 1 teaspoon paprika
- 1/4 teaspoon sea salt
- 1 (1-pound) flank steak, trimmed
- 1 teaspoon olive oil
- 2 tablespoons finely chopped shallots
- 1 garlic clove, finely chopped
- 1 teaspoon all-purpose flour
- 2/3 cup 1% low-fat milk
- 1/4 cup crumbled Gorgonzola cheese
- 1 teaspoon butter
- 2 teaspoons chopped fresh flat-leaf parsley
Preparation
- 1. Preheat grill.
- 2. Combine first 3 ingredients. Sprinkle steak with mixture. Place on a grill; broil 5 minutes on each side. Let stand 5 minutes. Cut thinly across grain.
- 3. Heat oil in a saucepan over medium heat. Add shallots and garlic; cook 1 minute. Add flour; cook 30 seconds, stirring. Add milk; boil. Cook until reduced by half. Remove from heat; stir in cheese and remaining ingredients.

Jess brought the yummy strawberry salad. We also enjoyed grilled corn on the cob rubbed with sea salt, pepper, and olive oil.
Along with some sourdough bread, olive oil, and garlic.
We also enjoyed a bottle of Ravens Wood Cab Sav. It was perfect with the steaks!

I also made a quick real food berry cobbler.
REAL FOOD Berry Cobbler
Ingredients:
16oz /3c fresh or thawed frozen mixed berries
zest and juice of 1 lemon
2 Tbsp honey, divided
10 pitted unsweetened dates
1/2 c whole oats
1/2 c whole wheat flour
1/2 tsp ground cinnamon
3 Tbsp virgin coconut oil melted or canola oil
pinch sea salt
Directions:
1. Preheat oven to 350. In a medium bowl, combine berries, lemon zest, and lemon juice. Drizzle one tablespoon honey over top and toss to combine. Pour berry mixture into a baking dish.
2. In a food processor, chop dates into small pieces. Add oats, flour, cinnamon, nutmeg, oil, remaining one tablespoon honey and salt. Blend to combine. Distribute crumble mixture evenly over berries in a baking dish.
3. Place baking dish on a baking sheet to catch any spills. Bake for 45 minutes until browned and bubbling. Serve warm and garnish with vanilla yogurt.
