I have always wanted to make Chicken Tortilla Soup from scratch and tonight I finally had time to do it!!!
Easy Chicken Tortilla Soup
- 1 pound cooked shredded chicken
- 1 (15oz) can of whole peeled tomatoes
- 1 chopped medium onion
- 3 garlic cloves chopped
- 2 (15 oz) can chicken broth
- palm full of cumin
- palm full of chili powder
- pinch of salt
- palm full of pepper
- palm full of bay leaves (on one fresh bay leave)
- 1 can of corn
- 1 can black beans
- 1 can garbanzo beans
- 2 tbsp of tomato paste
- handful of chopped cilantro
- 1 whole wheat tortilla
- EVOO
- Avocado
- Greek Yogurt
Directions:
Place all ingredients in your slow cooker and stir. Cover and cook for 6 hours on low or 3-4 hours on high.

Taste test, AMAZING!!!
For the chips I just took a whole wheat tortilla cut it into pieces and sprayed with EVOO. I then baked it in the oven for 5 minutes at 350 degrees.
Instead of sour cream I added Greek Yogurt.
I also added a little Avocado to the top and sliced up 1/2 of the WW crisp tortilla.
Seriously friend this tasted wonderful, I wish I could have you all over to try it!!!!
KB was killer tonight and I just sucked this soup down, I am sure there will be seconds soon 🙂
The rest of the evening is FREE, I don’t even know what to do with myself!!!
