Tonight’s dish was inspired by my dinner at Olitas in Santa Cruz. I had bought these Mahi Mahi filets awhile back and have been waiting for the right time to make them.

The Rub:
  • 1 tablespoon paprika
  • 1 tablespoon ground cumin
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon kosher salt
  • 1/4 tablespoon ground cinnamon
  • 1/2 tablespoon dill seed
  • 1/2 tablespoon ground black pepper
  • A little soy sauce

To-do:

Throw everything in a bowl and mix.

Throw in the the Mahi Mahi

Toss on the grill..

Grill for about 7-10 minutes

While the fish cooked I made the filling. This is the easiest and freshest salsa you will ever make!

Ingredients

  • 1 Avocado
  • Cilantro
  • Chopped Fresh Pineapple
  • Pinch of Sea Salt
  • Lime Juice  
  • 1 diced tomato

To-do:

Throw together in a bowl and mix it up!

I was going to go to hot yoga tonight, but decided staying home and catching up on emails and chillaxing was a way better choice.

SO EXCITED…

I get to sleep in tomorrow!!! Well in until 6am 😉
