Meatless Monday:Grilled Veggie Sammies

This Memorial Day we went Meatless, but we still fired up the grill ๐Ÿ™‚

Who says that you can’t do fancy fast?

Ingredients:

  • 4 Large Portobello Mushrooms Sliced
  • 1 Red Bell Pepper cut into strips
  • 1 Yellow Bell Pepper cut into strips
  • 1/4 cup fresh chopped basil
  • 1/4 cup balsamic vinegar
  • 4 Fresh Kaiser Rolls (or whatever you would like)
  • Goat Cheese
  • Salt and Pepper to taste

Directions:

Mix together peppers, mushrooms,balsamic vinegar, salt and pepper. Throw all veggies on the grill and cook for about 7-10 minutes until tender and crisped up! Take the veggies off the grill and mix with the fresh basil. Spread some goat cheese on your rolls and top the other half with all the wonderful grilled veggie mixutre.
