Slow Cooker Salsa Surprise


I loved reading about all your wonderful Fall festivities! Well guess what? FALL is officially here. I mean at least the season has started, but the weather hasn’t changed too much here in So Cal. Either I welcome it with OPEN arms 🙂

Side Note—> Landon Donovan is coming to my High School reunion!! Yep, he bought his ticket 🙂

Last night I took a little bloggy break. Hubby and I just needed time to relax and unwind from such an eventful four days.


As promised Mr.CP joined us this week. I am trying to stick to our budget for groceries so instead of buying a ton of ingredients for dinner I just stuck with what we had on hand.

Slow Cooker Salsa Chicken Surprise


Into the pot:

  • 4-5 Boneless Skinless Chicken Strips thawed and put in.
  • 1 Can of 12 oz Salsa (I used Picante, it’s what I had on hand Rotel would work to).
  • 8 oz of chicken broth
  • Sprinkle Chicken with Sea Salt, Onion Powder, Chili Powder, and Cumin
  • In the pot on low for 10 hours

When I got home I shredded the chicken in the pot with 2 forks, now it’s perfect for taco’s!


We had some of these in our Taco’s too.


All in a ww tortilla with tomatoes, shredded cabbage, and Fage. Thanks Mr.C!


Later I had a bowl of leftover apple crisp! This is the best and easiest crisp I have ever made!


We watched A LOT of comedies last night and then called it a night at 9:30(early for us). I still managed to sleep in until 7pm!!!


It felt great to just lounge in bed and check my email before I HAD to get up for some FP.


mmmm! I need to get some Pumpkin Syrup to add in!


Sticking with the theme of the first day of Fall so I went with a bowl of Apple Crisp Oats.


On top of my regular banana whipped oats I added some of the amazing apple crisp and almonds. This mixture was a big hit in my mouth!!!


Today is a day off for me 🙂 So I have a lot to get done!

On the to-do list:

  • Clean house ..oh fun
  • Reunion Stuff ( it’s so close)
  • Costco Run
  • Hot Yoga at Noon (love that I can go at noon)
  • Car Check Up
  • Read for tonight’s group
  • Teach KB 
  • Thursday Night Study

—-Question: What do you like better, apples or pumpkin??

I love all things pumpkin,  but I just LOVE love APPLES!!! I think I like the fact that I can have apples all year long 🙂
