Sundays are quickly becoming one of my favorite days of the week. My 16 mile run with friends rocked!!! It was the perfect weather and the best 16 miles I have run yet!
My legs felt really good. I am actually really loving this three day training plan, it has been great for my IT band! After our run we swung by SBUX and chatted while I enjoyed coffee and a breakfast sandwich.
LUNCH
When we got home from Church I laid down to take a little nap and then quickly realized I needed to EAT LUNCH! How does one forget to eat lunch??? I made a grilled Salmon Burger.
With avocado, tomato, and laughing cow cheese. All on an Arnold’s Thin.
On the side I had lemon garlic hummus + red pepper hummus.
Plus pita chips.
I always forget I have these Salmon Burgers in the freezer, one of my best Costco finds!
The rest of the day was spent cleaning and prepping for the week. It felt so good to have all my stuff done and ready for the week.
DINNER
For dinner we were invited to our friend Jess and Joe’s for dinner. They had a huge HAM from Easter that they wanted to share with friends. We were all more then willing to help them eat it )
I brought a veggie mix from F&E
Plus rolls.
We also had some pears 🙂
Joe served me some of his favorite wine using this cool aerator contraption. He actually had me do a taste tester with the wine before he aerated it. I could totally tell the difference!

Later in the evening we opened a bottle of South Coast Winery’s Ruby Cuvee, a favorite!
As well as a white and chocolate bunny for everyone to pick at.
Then it was Wii time!
