Running is fun!!!!
This mornings 5 mile run with Suzie was wonderful. The clouds held the sun off and we couldn’t have had better running weather 🙂 I want her running shorts!!!!
As promised my home-made granola bars!!!! They came out beautifully 🙂
Thick, Chewy Granola Bars (from Smitten Kitchen)
Adapted from King Arthur Flour
1 2/3 cups quick rolled oats (if gluten-free, be sure to use gluten-free oats)
1/2 to 3/4 cup granulated sugar (use more for a sweetness akin to most purchased bars; use less for a mildly sweet bar) (I only used 1/4 cup)
1/3 cup oat flour (or 1/3 cup oats, processed till finely ground in a food processor or blender)
1/2 teaspoon salt (used none)
1/4 teaspoon ground cinnamon
2 to 3 cups dried fruits and nuts (total of 10 to 15 ounces)*( I used 2 cups of Costco’s Dried Fruit Mix and added in some chopped almonds)
1/3 cup peanut butter or another nut butter (optional)( I used TJ’s Golden Flax Almond Butter)
6 tablespoons melted butter ( I used I Can’t Believe it’s Not Butter)
1/4 cup honey, maple syrup or corn syrup ( I used Pure Maple Syrup)
2 tablespoons light corn syrup
1 tablespoon water
AMAZING!!!! I wish I would have made a double batch. I believe Suzie LOVED them 🙂
Breakfast
I was craving EGGS this morning so I made a EBT sandwich. 1/4 c Egg Beaters, 2 Pieces of Turkey Bacon and Two Grilled tomatoe slices smashed between an Arnold’s Thin.
Off for the day!!
