Have I told you lately that I just love to cook?!
Sadly I missed Kettle Bells + KB tonight, cause I am still fighting a bit of a cold. I have learned from experience that going too hard will only make it worse.
I hate not feeling like myself, but the best medicine for me is PLAYING in the kitchen.
I decided to try and make Enchiladas a little "fitter". The best part is it only required 7 simple ingredients.
Ingredients
- 3 cups chopped cooked chicken (about one large chicken breast, I boiled it)
- 2 cups (8 ounces) light shredded Mexican cheese
- 2 cups Greek Yogurt
- 1 (4.5-ounce) can chopped green chilies, drained (I used mild)
- 1/3 cup chopped fresh cilantro
- 6 (8-inch) La Tortilla Factory 100 calorie Tortillas
- Vegetable cooking spray
- 1 (8-ounce) bottle green taco sauce
Preparation
Stir together first 5 ingredients. Spoon chicken mixture evenly over each tortilla, and roll up. Arrange in a lightly greased 13- x 9-inch baking dish. Coat tortillas with vegetable cooking spray.
Bake at 350° for 35 to 40 minutes or until golden brown.
Stir together remaining Greek Yogurt and taco sauce. Spoon over hot enchiladas, and sprinkle with toppings.
I think I should have used smaller tortillas 🙂
Ready to go in the oven.
And out they came 🙂 They were more like chalupas, but still really good.
With one large green salad.
They came out really good, I would just have topped them at the end with salsa and a little cheese.
