Happy Saturday Friends!
I am just in love with this weather. Yes, it may be snowing about 15 minutes 2,000 elevation higher then us, but where we are it is beautiful! I thought today I would catch you all up on the amazing recipes I created this week as well as how my Livefit Trainer program is going. It’s great to be back to routine after our amazing week off!
This week I made a cast iron chicken that is to die for!
Cast iron Chicken and Veggies
chopped up veggies, I used zucchini, squash and sweet potatoes
rosemary and thyme
extra virgin olive oil
Preheat the oven to 450 degrees. Cover bottom of the cast iron skillet with EVOO. Place the veggies at the bottom of the skillet and sprinkle with a little sea salt and pepper. Take a little rosemary, thyme, sea salt, pepper and dijon mustard and mix together (I don’t measure I just guestamate) and add in a splash of water. Put chicken in the mixture until fully covered. Then place the chicken on top of the veggies and stick cast iron straight into the oven and cook for 40 minutes. ENJOY!
I also made this amazing crock pot sweet potato chili. One of our favorites!
Plus these simple yet amazing enchiladas I found from Pintrest! The only ingredients are, cheese, corn tortillas, enchilada sauce, chicken and cilantro. Our friends loved them as well as we did, it was a *cheat night meal for me.
*If you haven’t noticed, I like to have one cheat night a week. I know that not everyone likes the idea of a cheat meal, but for me it works. I try and eat healthy 80% of the time, but once a week isn’t going to kill me to eat a little chocolate, have a little wine, and some cheese. For me it’s a balance and that I like.
Last night I also made these Beer Margaritas (found on Pintrest) with light lime-aid and they were a huge hit at our dinner party!
And we might have dug into this bad boy!
This week I also got a fun treat from Cascade Ice! I can’t wait to try all the flavors, but this strawberry chocolate is lagite! It really tastes like chocolate strawberries, for only 2 calories and real ingredients I’ll take it!! If you are in California you can get them at Whole Foods or Albertson’s.
I also enjoyed overnight oats a lot this week as I had to be as prepared as possible, because I now have over 15 clients I am doing Personal Training with! Fun times 🙂
Oh and Hubby brought these home!!! I was trying to avoid all the little girls and Hubby thought that I forgot, lol…he is too sweet.
Lastly I leave you with my update on the Livefit trainer. So far it’s going ok. I am on week 6 and it hasn’t really gotten any tougher then the weeks before. I love that we have added the cardio now to the workouts, I was so missing it. I really wish I was doing a little bit more cardio, but I will follow the plan and keep pressing on. Feeling stronger everyday!
