Before I came home today I spent a little time relaxing at a local coffee shop. I did some much needed journaling and caught up on all my reading for my Women’s Study.
When I pulled into the drive way I found Hubby playing in the MUD!
Installing our sprinkler system!!! He is so HANDY!
So I decided to play in the kitchen (it’s my playground). The weather is perfect for baking!
I have several different recipes from this month’s Cooking Light Magazine I am trying to get through this month 🙂
Plus I needed to get rid of these not so attractive bananas.
I decided to make Cooking Light’s Basic Banana Bread, but I added a little of my own touch.
Mashed Banana
1/3 cup Chobani
2 Eggs
5tbs of Earth Balance Butter.
1/2 cup brown sugar
1/2 cup granulated sugar
Dry Ingredients: 1 1/2 cups flour+1tsp baking soda+1 tsp nutmeg+1tsp all spice+1tsp cinnamon 2 tbsp flax seed and my twist 2 tbsp of Wheat Germ
Mix dry ingredients into wet ingredients
No I didn’t taste the batter 😉
In the oven for 55 minutes at 350 degrees
Dinner was all about classic comfort 🙂
With a grilled cheese. I used a lighter butter of course.

With a little tomato soup and ramano cheese.

I took out the banana bread and let it cool. The Icing: I added a 1/4 cup powdered sugar and 2 tbsp of skim milk in a bowl and mixed together and drizzled all over.
All of these ingredients I had on hand!
My Coworkers are going to love me! I might have had a piece of it too 🙂
Time to watch Spirit of the Marathon to get motivated for Sunday!!!
