Fit Friday Baking: Yummy Muffins

HAPPY FRIDAY!!!

We all know what today is…Fit Friday Baking DAY! A day to encourage all of you to give a little something to your co-workers, family, neighbors or friends. Not only will you be blessing them with a treat, but it will be a HEALTHY treat 🙂

When reader Amy sent me her recipe for some really yummy blueberry muffins, I couldn’t wait to put them in the oven. The best thing about baking with blueberries is the aroma that goes all throughout your house 🙂

They were super easy to make and VERY YUMMY!

Amy’s Fruit and Yogurt Muffins

 1 ½ cups all-purpose flour

½ cup whole wheat flour

¾ cup sugar

1 tsp baking soda

1 tsp baking powder

1 (8 oz) container of low-fat yogurt (your choice of flavor) (I used FAGE)

1 egg

1 tsp vanilla

3 Tbs canola oil

2-3 Tbs milk of choice

2 cups fresh or frozen blueberries. (fresh are better)

Preheat oven to 350 degrees.  Grease 12 muffin cups or line with paper muffin liners.

Stir together the flour, sugar, baking soda and baking powder.  In a separate bowl, combine yogurt, egg, vanilla, oil and blueberries.  Stir mixtures together just untl combined.  Batter will be very thick.  If you need more liquid to help incorporate, use more milk.  Scoop into prepared muffin cups. (I had to add about 1/4 cup of almond milk).

 Bake in oven for 20-25 minutes (until toothpick comes out clean and golden brown on top).

Get out there and make some muffins!!
