Normally oatmeal cookies are made with butter and sugar, but mine are lightened up with honey and a little canola oil. Canola oil is low in saturated fat and a good source of healthy omega-3 fats. Raw honey is natures original sweetener and contains 21 calories per serving 🙂 Research has found that raw honey specifically, contains pro-biotic bacteria that helps with a healthy digestive system!
HONEY OATMEAL RAISIN COOKIES
Ingredients:
- Non stick cooking spray
- 1/2 cup canola oil
- 1/3 cup honey (eyeball it)
- 1 egg white
- 1 tsp vanilla extract
- 3 tbsp of water
- 1-2 tbsp of nut butter (optional)
- 2 cups of old fashion oats
- 2/3 cup whole wheat flour
- 1/4 tsp sea salt
- 1/2 tsp baking soda
- 2/3 cup raisins
- 1 tsp cinnamon
Directions:
Preheat oven to 350 degrees. Grease baking sheet with nonstick-spray. In a bowl mix together oil, nut better, and honey. Add egg white,vanilla, and water: mix well.
Add oats, flour, salt, baking soda, raisins, and cinnamon. Drop the batter by tablespoonfuls or teaspoonfuls onto baking sheet. Bake for 10-15 minutes until bottoms are lightly browned.
