Turkey Meatballs + Soft Serve

Then it was on to dinner. Tonight I was inspired by a recipe out of my Clean Eating Cookbook, with a little twist!

Oh and look what came in the mail today ๐Ÿ™‚ I have been dying to get a Misto for quite some time now and for only $9.99 I finally took the plunge. No more buying cooking spray!!

Turkey Meatballs

Ingredients

    1 lb Ground Turkey -Lean
      1 cup whole wheat bread crumbs
      1 egg lightly beaten
          1 Tbsp Ground Parsley
          1/4 cup chopped fresh basil
          1 Tbsp Ground Oregano
                    2 cloves Garlic
                    1 tsp Pepper
                    1 tsp Salt
                    3/4 cup low fat ricotta cheese

                  3 cups baby spinach
                  1 can of fresh roasted tomatoes
                  1 lemon
                  1 tbsp tomato paste
                  1/2 cup of onion chopped
                  1 tbsp of Olive Oil

                  Directions

                  Preheat oven to 400 degrees
                  Grill up oil,  onion and garlic for about 4 minutes.

                  I made my own whole wheat bread crumbs ๐Ÿ™‚

                  In a large bowl throw in the egg, bread crumbs, turkey meat, basil,salt, pepper, oregano, tomato paste, and onion and garlic mixture.

                  Spray your cooking sheet with cooking spray or use parchment paper. Use and ice-cream scoop to measure out your meatballs and place out on the tray. Throw meatballs in the oven for 20 minutes.

                  While meatballs are cooking make whole wheat pasta just as the box directs use. Save 1/2 cup of pasta water and add together  with spinach, cheese, roasted tomatoes, and the zest and juice of one lemon.

                  Mix in pasta in one large bowl until cheese is nice and creamy ๐Ÿ™‚

                  Serve up your pasta in a bowl and top with 5 meatballs ๐Ÿ™‚ Perfection!

                  Or if you want it to keep it simple you can just toss your meatballs in some marinara sauce (Hubby’s choice of course).

                  After dinner we finally tried out soft serve in the Vita-Mix! I have heard that it doesn’t really work in the Vita-Mix, well this is NOT TRUE it does work!!!!

                  Chocolate Banana Soft Serve

                  Ingredients:

                  • 1.5 frozen banana (I chopped up the banana before I froze it)
                  • 1 tbsp of almond milk
                  • 2 tbsp of cocoa powder
                  • 1 tbsp honey

                  Directions:

                  Throw it all in the Vita-Mix and slowly turn the speed up…watch as the ingredients start to turn into a creamy soft serve texture. Then enjoy ๐Ÿ™‚

                  I can’t believe how much this tasted like soft serve!!!!!!

                  I topped mine with a little shredded coconut and almonds. I think I am going to make a little how to video on soft serve, would you all like that?
