DATE NIGHT
Wednesday nights are the best times to have date nights. It’s right in the middle of the week, so it gives me something to be excited about! Last night I had a lot of studying to do so I asked Hubby if he would make dinner for the two of us. This is probably the second time in our entire 3 year relationship that he has cooked dinner. (I like to cook so I don’t mind).
Boy was I surprised he made the best and healthiest dinner EVER!!! I was so proud, check it out.
Cold Chicken Satay Noodles
Salt
1 pound whole wheat spaghetti
1/4-1/3 cup smooth or chunky peanut butter, softened (eyeball it)
2 tablespoons honey
1/4 cup warm water (eyeball it)
1/4 cup tamari (aged soy sauce)
1 clove garlic, grated with microplane or box grater
Juice of 2 limes, zest of 1
1 teaspoon hot sauce (eyeball it)
3 tablespoons vegetable, peanut or sunflower oil (eyeball it)
2 cups store-bought rotisserie chicken meat, skin removed and thinly sliced
A handful of shredded carrots
4 scallions, thinly sliced on an angle
1 cup spinach greens, thinly sliced
1/4 cup chopped peanuts, available in small pouches in the baking aisle
2 tablespoons chopped cilantro or flat-leaf parsley, whichever you prefer
Bring a large pot of water to a boil. Once boiling, salt water liberally, then drop pasta in and cook to al dente. Run cooked pasta under cold water to cool. Drain well and reserve.
While the water is coming to a boil and the pasta is cooking, whisk together softened peanut butter, honey and warm water in a large bowl.
Once they’re combined, whisk in the tamari, garlic, lime juice and zest, and hot sauce.
While whisking continuously, pour the oil in a steady stream to complete the dressing. Add noodles, veggies and peanuts to the bowl and toss until everything is mixed well. Place noodles in shallow bowls and top with chicken and cilantro or parsley.
Yields 4 servings

He is the best Chef, I will be asking him to cook more often for sure!!!! I Feel a bit spoiled two nights in a row I have had people cook dinner for me, a girl could get used to this;)
MORNING EATS
This morning I woke up and did some When I got home I did Polly’s newest 10-minute Yoga for Runners session. My hips are feeling a lot more open, I am going to buy a foam roller. Everyone says there the best, I ll have to be the judge of that soon!
I also decided to make some protein pancakes, haven’t had them in FOREVER!!!
Ingredients:
1/2 cup oats
1/4cup Fat Free Cottage Cheese
2-3 egg whites
1 scoop protein powder (vanilla)
pinch of cinnamon
2 tbs of pumpkin
Cooking!
Topped with Naturally Nutty Vanilla Almond Butter, blueberries, and Greek yogurt! Who needs SYRUP and WHIP CREAM, not this girl! I loved the vanilla almond butter, this was my first try of this nut butter and it left me wanting more!
With a cup of coffee, and this morning I added some Silk Creamer!!!! This creamer might be my new love!

RUNNERS ROAD RAGE!

I wanted to talk to you all about road safety and how important it is to be aware of all your surroundings when running! Here are some wonderful tips I found to stay SAFE on the ROAD!
To avoid accidents or close calls when running on the roads, follow these safety guidelines:
- Make sure you’re visible. Even when you’re running during the day, you should wear white or bright-colored clothes. If you’re running in the early morning, night, or dusk, make sure you have reflective gear on. Although some running clothes and shoes already have reflective pieces on them, it doesn’t hurt to add more.
- Make eye contact. Remember that many drivers aren’t paying attention because they’re listening to the radio, talking on their cell phone, or reading a map. Don’t assume that drivers can see you or that they’ll let you go because you have the right of way. Be sure you make eye contact with drivers at street crossings before you cross.
- Run against traffic. You want to be able to see cars coming at you.
