Kool Kactus Cafe

Today has been quite an adventure. I started out at 7am for a lovely 20 mile bike ride with Candice and the hit up the gym for some KB.

I love that I can ride my bike later in the morning, less pressure about having to make sure I get to bed early on Friday night. By the time I was done with all the sweaty activities, I was in need of a little Soy Latte 🙂 Haven’t had one in FOR-EVER (ok maybe a month ago).

After I ran a couple errands downtown I thought I would swing by the Honda dealership to see what options I might have for a new/used car. There weren’t many 🙁 I have decided to just wait and take my time finding a new car. We got everything fixed with my car and it with the new engine in there it still has several more years of life. Even though I want a new car I know it’s best for us to save and get the one we really WANT!

BRUNCH

After all the busyness of the morning, I was STARVED. I decided to try a local joint in Loma Linda that I have heard great things about, the Kool Kactus Cafe.

There were a ton of vegetarian options! I talk to the cashier for awhile about everything they have to offer. He explained to me that everything they serve is made fresh, no preservatives, and no lard.

I went with one of their Veggie Burritos filled with Spinach, Tofu, and Mushrooms. I got Hubby a Shredded Beef burrito.

OH HOLY YUM! This was so delicious. I loved the warm spinach mixed in with the mushrooms and tofu mixture. The tortillas were also so fresh 🙂

They gave me one of their Grapefruitade’s as long as I promised to post the review on their face book page 🙂

I need to clean the house and go to the market for our party tonight, but I am stuck in front of the TV nervous as HECK watching the Word Cup. Come on USA you can do it!
