Co-hosting is so much fun!! Especially when it’s with fun people like Mrs. Cyndi!
Last night’s dinner was amazing, as always! Our first course was a green salad with raspberry vinaigrette dressing. Little too much dressing, but still good.
We have around 100 women here this weekend for our Women’s Conference.
For our main course we had grilled chicken on top of a bed of pasta and asparagus. Well actually there was bacon and cheese on top of the chicken and it was on a bed of alfredo sauced pasta, but I ditched the cheese.
It was light and wonderful!
For dessert instead of having the molten lava cake I opted for the mango sorbet 🙂
All of us girls stayed up chatting until almost 1:30am!! I love having girl time again, reminds me of college 🙂
I had an early rise this morning, because I was in charge of the morning walk. I took 12 ladies for a lovely 45 minute stroll around camp, it felt great to just enjoy the weather and delightful conversation. I forget how nice it is just to walk sometimes!

After the long walk we came in for breakfast. I brought a packet of TJ’s instant oats, because I knew I would be tempted to eat heavier then I really wanted to. I added some granola and sunflower butter, just like home 🙂
I also had a little extra protein on the side, we have the best EGGS!
Plus some honeydew.
After breakfast we had a refreshing morning session with our speaker Suzanne and worship leader Mandy. By the time we were done I was hungry for my snack. I was smart this time and brought up a Nature’s Path Pumpkin-N-Spice Granola bar instead of snacking on CHOCOLATE! I really liked this bar, it was the perfect amount of pumpkin.
Of course it wasn’t much longer until we had ANOTHER MEAL!!!
Lunch at camp is my favorite, because I can create my own salad!!!
I had a little of everything and topped it off with the Mango Ginger Salad Dressing.
I tried to only have a half of a cookie, BIG failure, I ate the whole thing and loved every bite!
After lunch the girls and I decided to play!!!!

Time to go read and enjoy God’s beauty!!
