Happy Monday Tuesday!!!

Look who has fresh veggies in their garden! Have you ever had a kohlrabie? It’s a German turnip. Bright and purple. It’s HUGE!!! It tastes a lot like a crisp apple mixed with broccoli. I know funny right? But it does taste good.

We also picked two very lovely cucumbers.

So of course I made a fresh cucumber salad for our 4th of July BBQ.

Easy Cucumber and Kohlrabie Salad

Ingredients:

  • 1 large kohlrabie (or turnips)
  • 2 cucumbers
  • 4 carrots
  • 1/4 cup white wine vinegar
  • 2 tbsp olive oil
  • 1 tsp sea salt
  • 1 tbs black pepper
  • Juice from one lemon

Directions:

In a small bowl mix together wet ingredients plus salt and pepper. In a food processor slice up veggies and mix together. Pour dressing over veggies and toss. Enjoy!

We didn’t end up staying late, because we had a long weekend. We drove home and decided to just relax in the backyard before we ended our stay-cation together 🙂

Sometimes chilling in the backyard doing nothing at all is the best way to celebrate!
