I couldn’t wait to get home tonight. It has been a pretty busy week at work and I just needed a night to unwind. Hubby had a thing to go to so it’s just me and Bosco tonight.
First things first I poured a little Cupcake while I started cooking away 🙂
First things first I threw in some brown rice pasta in a pot of boiling water.
Tonight I made a simple yet delicious dinner for one. I started with a little O EVOO and chopped garlic in the pan for about a minute.
Then I threw in some shrimp…
Chopped some fresh broccoli and tomato.
Snacked on a little box of raisins
Then threw in my veggies + snow peas and cooked them up for about 4-5 minutes.
Instead of adding a creamy sauce I went with a lemon 🙂
Squeezed right on top.
MMMM!
The rest of the evening will include this + a nice long bubble bath!
Oh and this of course!
Mud run in the morning!!!
