So far my adventure cleanse (AKA Crazy Sexy Vegan Diet) is off to an awesome start! It’s awesome that I have four other ladies that are doing it with me this time!! It’s fun to share recipe ideas and what we are learning along the way! Last night, I made a killer POWER BOWL filled with sexy veggies and more goodies!

Ingredients:
- 1 1/2 cups cooked Quinoa
- 2 cups Black Eye Peas
- 2 small sweet potatoes diced
- 1 cup peas
- 1 handful of kale
- olive oil
- fresh salsa (optional)
Directions:
Add 2 tbsp olive oil to skillet along with diced potatoes and cook for about 7-8 minutes until tender. Add in frozen or fresh peas and let cook for about 2 minutes. Then add cooked black eye peas (fresh or canned), cooked quinoa, handful of kale and let simmer for about 2-3 minutes until kale has wilted a little. Remove from heat and top with fresh salsa for a bit of a kick 🙂

This made about 3-4 servings and would be great as a side or a main dish!
Off to get in some quite time and enjoy the very last moments with our Christmas tree! I know it’s time to take it down already!!! (someone please send me a cleaning fairy).
