The Perfect Summer Day

I am pretty sure I just enjoyed the PERFECT Summer Day. It started with a yummy breakfast and instead of going to Hot Yoga I went out for a 20 mile bike ride. Might not have been the best weather for it, as it was already 96 degrees at 9:00am! Either way it was invigorating to say the least. I absolutely LOVE cycling!

Edited to add: OH YA…I forgot to tell you all. I faced my biggest cycling FEAR! Riding down Highway 38. It’s this narrow, but doable highway that takes me downtown. I felt so empowered!

Once I was done I drove straight to Suzie’s to JUMP in the pool!!!

After pool time I decided to grab some groceries for the week at Trader Joe’s. I remembered very quickly why I switched to Fresh and Easy, my bill came out to almost $30 more then normal!!! You live, you learn.

But, I did manage to finally pick up some Quinoa. I decided to finally make a fresh Red Quinoa salad. It’s about time!

So what is Quinoa???

“Quinoa (pronounced /ˈkiːnoʊ.ə/ or /kwɨˈnoʊ.ə/, Spanish quinua, from Quechua kinwa), a species of goosefoot (Chenopodium), is a grain-like crop grown primarily for its edible seeds. It is a pseudocereal rather than a true cereal, or grain, as it is not a member of the grass family. As a chenopod, quinoa is closely related to species such as beets, spinach, and tumbleweeds. Its leaves are also eaten as a leaf vegetable, much like amaranth, but the commercial availability of quinoa greens is currently limited.”

 

All the ingredients:

  • 1 can corn
  • 1 can black beans
  • 2 avocados chopped
  • 1/2 cup Light Cilantro Dressing
  • 1/2 cup Fresh Cut Cilantro
  • 1 lime
  • 1 pint cherry tomatoes cut in half 
  • 2 cups vegetable broth
  • 1 cup red quinoa

Just simply make the Quinoa as instructed on the box, but with Vegetable broth instead of water. It is a lot like making Cousecouse.

All the other ingredients I put in a bowl and mixed together. Only 1/2 Cup of the Cilantro Dressing and not the whole lime just the lime zest.

The quinoa came out perfectly.

After the quinoa cooled I added it in to the mix.

This was soooooo delish! I can not tell you how much the flavors were exploding in my mouth 🙂 This is going to be something I start taking to parties!

We also grilled some Salmon Burgers and….

I added some Corkey’s Apple BBQ Sauce. Hub’s picked this up the last time he was there 🙂

Hubby and I are finishing “UP” (such a cute movie) and then I will be calling it a night. I have a 13 mile run at 5:30am 🙂

P.S. I got my ring BACK! I am a married woman again 😉
